Tis is my 1st attempt on gongbao chicken, not too bad afterall. I juz felt that its not spicy, so maybe the next time when i wanna cook tis dish, i will add some chili paste to make it more unique~a spicy version of chicken in gongbao sauce.
Ingredients;
2 chicken thighs, boneless
2 clove garlic, sliced
10 dried chili
1/2 onion, wedged
1 tsp sichuan peppercorn
2 scallion, cut into 3cm length
Some roasted unsalted cashew nuts
Oil for frying
Marinade;
1 tbsp oyster sauce
1 tbsp light soy sauce
1 tbsp sesame oil
Some ginger slices
1 tsp cornflour (to be added b4 frying chicken)
Sauce;
2 tsp sugar
1/2 tbsp dark soy sauce
1 tbsp oyster sauce
3 tbsp water
Thickening agent
Method;
-Cut chicken into bite sizes, marinade for at least an hour.
-Fry chili, peppercorn & garlic till fragrant, stir in chicken & fry till cooked.
-Stir in sauce & simmer.
-Add onions & scallion, fry for a min.
-Thicken with thickening agent.
-Toss in cashew nuts & serve.
-Enjoy!
