Scrambled Omelette With Bittergourd

Bittergourd with egg or egg with bittergourd, there are many ways of cooking & presenting the dish when u play around with different proportion of ingredients.
Whenever mum cook bittergourd with egg, the main ingredients will always be bittergourd. However, tis time round i would prefer egg as the main ingredient.

Ingredients;
1 section bittergourd, bout 4cm height
1 glove garlic, minced
1 small onion
2 medium eggs
Salt
Oil for frying

Method,
-Slice bittergourd thinly, marinate with salt & set aside for 15 mins.
-Rinse off salt from bittergourd. This is done in order to remove some bitterness from the gourd.
-Fry garlic with oil till fragrant, stir in bittergourd and fry for a min.
-Beat eggs with bittergourd & onion, add a pinch of salt.
-Heat oil in wok, pour in egg mixture and let mixture set.
-Flip over and brown the other side.
-Scrambled the omelette & serve.
-Enjoy!

Hmm... though it is bittergourd omelette, it goes great with any rice dish. Delicious!

Hungry Ghost Festival Praying Ceremony

Hungry Ghost Festival falls on the lunar month 7th month each year. Chinese believes that during tis month, the gate of hades is open and the spirits were release to roam on earth for a month. Since they were being capivated for a year, they were hungry and thus, pple will prepare some offerings to them.
Dad bought some prayer stuff home the other day and i knew our prayer day is approaching. Chinese can choose any day during the month to pray and make offerings.

These are the basic prayer stuff required for burning to the spirits.

Some goodies are oso required for offerings.

And these items are all food items which can be found in all household. Depending on the range which each individual household prefers. But there's a saying from the older generation that the goodies and incense paper for prayers gotto be maintain at the same amount or has to be more than wat was offered the previous year. Seems like our family is typically "kiasu"

Jesper & mum den proceed to the ground floor to burn incense paper for the "hao xiong di".

The town council is very thoughtful to arrange metal cage for residents to burn incense papers. After making the offerings, Jesper came back to toss the coins again to seek permission asking has the "hao xiong di" finish the feast. It is a muz to ask b4 we are allowed to clear the goodies.


After clearing and washing up the place, i prepare a quick lunch with the roasted meat which was used for offerings earlier on. Hmm... yum yum. Eating the food which was used for prayers will keep our family safe and sound. "hao xiong di" will watch over us.

枸杞白玉芥兰

Kailan veggie turns yellowish easily, especially when being cooked for too long. Some pple says that adding ginger juice to the dish will prevent it from turning yellowish. However, if u find ginger funny in veggie, juz like me, probably my method will be more effective & healthy.

Ingredients;
1 bunch kailan
! clove garlic, minced
Some wolfberries
1 egg white
1 tsp oyster sauce
Stock
Cornstarch water
Pinch of salt
Oil for frying

Method;
-Fry garlic in oil till fragrant, add kailan & fry till soften.
-Add salt & oyster sauce, mix well.
-Drained and serve on serving dish.
-Boil wolfberries with stock.
-Add egg white & cornstarch, drizzle over kailan.
-Enjoy!

酥炸鸡腿

I been avoiding fried chicken for ages. I find it super sinful to eat fried stuff which are high in calories & fats when i'm on a diet.
Though determine & firm, i still cannot resist the tempetation of a fat juicy fried chicken drumstick. And so, i decided to break rules for once! haha...

Ingredients;
Fresh chicken drumsticks
MSG
Salt
Flour
Pepper
Onion flour
Oil for deep frying

Method;
-Mix the dry ingredients
-Wash & clean chicken drumsticks
-Combine dry ingredients with chicken & mix well.
-Drop chicken drumstick 1 by 1 into oil oil.
-Deep fried till golden brown & drain on kitchen towel.
-Enjoy!

The secret to cooking succulent juicy tender chicken is not to cover the wok when deep frying the chicken, otherwise it will end up tough & dry.

卤肉饭

卤肉饭 is a taiwan signature rice dish. Though it is a simple meal where meat are being serve over pipping hot steamed rice, the true flavour of the dish lies in the gravy and the fragrant of the meat.

Ingredients;
1 strip pork belly, cubed
1 clove garlic, chopped
1 shallot, chopped
1 star anis
Half a cinnamon stick
Oil for frying
Salt
Sugar
Dark soy sauce
Light soy sauce
Sugar
Stock/water
Oyster sauce
Chopped spring onions

Method;
-In a non-stick wok, fry pork belly cube till golden brown on the outside. This step will squeeze out excess oil from the meat.
-Remove meat from wok, use a clean kitchen towel to whip off meat oil.
-Fry shallots till fragrant, add garlic.
-When the chopped ingredients are slightly browned, stir in meat & fry for 2 mins.
-Add the seasonings & stock.
-Bring to full boil and turn lower heat to simmer till gravy thicken.
-Serve meat over steamed white rice, sprinkle green onions over.
-Enjoy!

煮抄来啦!

1 of our family's favourite eat out dinner is 煮抄. We love hanging out at the tze char stall to savour different kinda of dishes which fifferent stalls offers. Some stall chef would come up with signature dish in order to win hearts of customers.

We on the other hand, prefer the same old traditional stuff which tze char stall should haf. Since it's been ages since our family last had a gathering dinner together and Jesper strike lottery recently, he will be sponsoring us for our dinner. Yeah.... though it's onli a small sum he strike, we appreciate his effort of treating us to dinner.

My all time favourite tea. y of all beverage, it muz be oolong tea? Cuz it is.........

Ah Mah's Soon Kueh

Dad's client went all the way to Bukit Merah & bought him a box of the famous Ah Mah's Soon Kueh. It's not cheap though, $1.30 for a piece of soon kueh where the market rate for soon kueh onli cost $0.80. Hmm... better wait till i savour den give my comments.

Erm...tt's not the bulls' eye. Pls dun be mistaken. But from far it seems like rite? keke....

Goodies From Korea

Eileen juz came back from her holiday trip in Korea. Wow... didn't noe that i help her settle her travel insurance and she actually bought mi some gifts from Korea. So pai seh... haha...

She bought mi a rose & pine mask from The Face Shop and....

knowing that i love coffee, she got me a coffee chewing gum.

Cool... seems interesting to mi. I will tell u guys bout the taste when i eat it. haha!

Singapore 2010 YOG

2nite is the start of Singapore 2010 Youth Olympic Games. Wow... Singapore is reali honoured being able tohost the event here.

Oh ya, the torch relay will be passing in our neighbourhood as well. Cheers Singapore!

Adam had a mini horn from his school in order to welcome tis big event.

He's so excited over it, be it day or nite he blow the horn without fail, so noisy. I have a great idea, probably i can use it to wake the whole family up tomolo. Who needs an alarm clock? :-P
