Silken Steamed Egg With Tofu Gravy

Yesterday was suppose to be mum's off day where I does all the cooking for our family. As i need to work yesterday, mum had no choice but to settle dinner menu on her own. She's fretting and when i came to know bout it, at a snap of fingers, I came up with a few menu and told her the cooking method and procedure. Mum didn't say anything and laugh. I ask her what's wrong? She told me that she's not so hardworking and prefer to cook something simple.

Among the few dishes where I mentioned, here's 1 of the tofu dishes which mum didn;t cook for the family yesterday and since its my off day today, I decided to cook for tonite's dinner!

Ingredients;
2 medium egg
Stock
1-2 drops oil
Spring onions, chopped

Gravy;
1/2 block silken tofu, diced
Carrot slices
Dried mushroom, soaked and shred
Lean meat strips
Chopped celery
Pinch of salt
Oyster sauce
Stock / water
Cornstarch water
1 glove garlic, minced

Method;
-Fry garlic till fragrant, stir in carrots and mushrooms.
-Fry for a min b4 adding in lean meat.
-Pour in stock and seasoning.
-Add tofu and bring to boil, thicken with cornstarch water.
-Set gravy aside and prepare egg by beating the 2 eggs with stock and oil.
-Steam over low heat till cooked.
-Pour tofu gravy over, sprinkle with chopped spring onions and serve.
-Enjoy!

Vegetarian Claypot Tofu

I been wanting to cook this dish since last week and I still remembers the very time i ate this dish was when I was in primary school. That was the very 1st time dad took me out for zhu chao and he specially ordered claypot tofu and assure me that I would love it. True enough, i fell in love with it. This time round, i cooked a vegetarian version.

Ingredients;
2 tube of egg tofu, cut into thick slices
1 small forest cauliflower
Some holland peas
Carrot slices
Black fungus, soaked and drained
Celery, wedged
Chili, strips
Onion, wedged
Mushrooms, sliced
Oyster sauce
Chicken stock
Thickening agent
Salt
Oil for deep frying

Method;
-Deep fry tofu till brown and crispy, drained.
-Fry mushrooms with little oil till fragrant, add onions and carrots.
-Toss in the remaining ingredients.
-Add stock and seasoning, bring to boil.
-Thicken with thickening agent and serve.
-Enjoy!

肉末菜心辣豆腐

A last min decision to cook this dish for dinner tonite. 1stly Adam won't be home for dinner and 2ndly the tofu was freshly bought, so there might be difficulties deep frying them.
Seeing that there's some sweet & sour sauce lying in the fridge, decided to cook this dish instead.

Ingredients;
2 egg tofu, cut into rings and deep fried
Minced pork
Pickles lettuce, chopped
Spring onions, chopped
Sweet & sour sauce
Garlic, chopped
Chili, chopped
Chili paste
Pinch of salt
Oil for frying

Method;
-Fry garlic & chili with oil till fragrant, add chili paste.
-Add minced pork and fry till change colour.
-Add lettuce, sauce and salt.
-Drizzle mixture over fried tofu and serve.
-Sprinkle chopped spring onions and Enjoy!

家常豆腐

As usual, mum is grumbling that she ran out of ideas as in what to cook for dinner! I assure her no need to worry coz i'm at home. I will do the cooking tonight! I told mum that Adam is someone who wanna try new dishes and hence, i decided to cook a simple tau kwa dish.

Ingredients;
2 pieces of tau kua
1 stalk leek
1 red chili, slice into strips
2 pieces black fungus, soak & shred
1 small onion
1 clove garlic

Sauce;
2 tsp home-made chili paste
1 tbsp oyster sauce
1/2 tsp sugar
1/2 dark soy sauce
Stock
Thickening agent

Method;
-Cut tau kwa into 8 pieces, deep fried light golden brown. Drained.
-Fry garlic till fragrant, add leek fry for a min.
-Toss in black fungus and onion, fry for another min.
-Add tau kua & sauce, simmer for a min.
-Add chili strips and continue to simmer, stir in thickening agent.
-Serve & enjoy!

鱼香豆腐

Something different for a tofu dish. Was telling mum that rather than the normal minced meat tofu where she always cook, I wanna cook tofu the 鱼香茄子 method but add stock to simmer the tofu.
Ta ran.... here's my dish for dinner tonite.

Ingredients;
1 box springy tofu, cut into 8 squares
Some minced pork
2 tsp hei bee hiam
1 garlic, chopped
1 chili padi, chopped
Oyster sauce
Sugar
Chili paste
Stock
Oil for frying
Chopped scallions

Method;
-Fry tofu in oil for 5 mins, drained.
-Fry chili and garlic till till fragrant, add hei bee hiam and meat.
-Fry till meat change colour, add seasonings.
-Stir in tofu, bring to full boil.
-Sprinkle with chopped scallions and serve.
-Enjoy!

脆菜心肉碎豆腐

Dad prepare this dish once and the tofu was deep fried version which i find too oily and high in calories. Since dad wasn't at home in the evening, i decided to cook my healthier way of tofu.

Ingredients;
1 box tofu
1 handful minced pork
1 shrimp, diced
1 water chestnut, chopped
Light soy sauce
Pinch of salt
30g chye sim pickles, cut into strips
1 stalk spring onions, chopped
1 tsp hei bee hiam
1 garlic, minced
1 shallot, chopped
Pinch of salt
Oil for frying

Method;
-Remove tofu from box, place a small chopping board over tofu to squeeze out excess water.
-Pan fry without oil on a non-stick frying pan.
-Place tofu on a serving dish.
-Marinate minced meat with salt and soy sauce, mix in water chestnut and prawns.
-Fry garlic with oil till fragrant, add shallot and fry till lightly brown.
-Add meat mixture and fry till meat change colour.
-Add hei bee hiam and chye sim pickles.
-Mix well, toss in spring onions.
-Top mixture over tofu and serve.
-Enjoy!

Pan Fried Cheese Tofu

Something golden brown for tea-break snack? Oh well, prepared Adam's favourite cheese tofu. I find that these kind of instant food is a great SOS, especially when 1 is hungry.
I stock up some cheese tofu the other day just before the Chinese New Year Holiday and thus decided to prepare for the family.

Method;
-Pan fry cheese tofu without oil in a non-stick frying pan till golden brown.
-Mix thai chili sauce with sweet chili sauce and drizzle over tofu.
-Sprinkle some roasted sesame seeds and coriander leave over.
-Enjoy!

葱粒肉碎卤水

超下饭的一道菜! That's all i can say and i don't even mind to have this 1 and only dish to serve with plain rice for dinner. It somehow or rather reminds me of 卤肉饭. Cool ya!

Ingredients;
2 pieces firm beancurd (tau kua)
1 stalk scallions & cilantro, chopped

Ingredients for stew;
Water
1/2 a star anise
1 clove
1 tbsp dark soy sauce
1 tbsp light soy sauce
1/2 tbsp oyster sauce
3/4 tsp sugar
1 tsp cooking oil

Ingredients for minced meat gravy;
50g minced pork
1 shallot, chopped
1 garlic, chopped
Water
Gravy from beancurd stewed
Sugar
Cornflour mixture
Oil for frying

Method;
-Bring ingredients for stew to boil, add beancurd and simmer over medium low heat for 10 mins.
-Flip beancurd over the other side and continue to simmer until gravy thickens.
-Remove and place on serving dish.
-Reserve gravy from beancurd stews for later use.
-To prepare meat gravy, fry shallots in oil till lightly browned.
-Add in garlic, continue to fry till fragrant.
-Add minced pork, fry till meat no longer pink.
-Add water and bring to boil.
-Stir in seasonings and gravy.
-Thicken with cornflour mixture.
-Drizzle over beancurd, sprinkle with chopped scallions and cilantro and serve.
-Enjoy!

If you readers prefer a thicker sauce over the beancurd, please feel free to adjust the the sauce ingredients portion according to own preference.

Hidden Treasure Golden Beancurd Puff Bars

What are the treasure which are hidden in the golden beancurd puffs? Oh well, i have creature from the ocean, on land and even plants! Hmm... i better cut the crap and reveal. The treasures are shrimps, minced pork and water chestnuts.

This dish has been on my mind for a long while and i can seems to find time to sit there patiently to stuff the treasures into the beancured puff. Oh gosh... wat's coming over me? haha...

Ingredients;
5 long beancurd puffs (Hock chew tau pok)
Steamed broccoli for garnish

Fillings:
Minced pork
Light soy sauce
Salt
Pepper
Sesame oil
Cornflour
Diced prawns
Chopped water chestnuts

Sauce:
Onions
Carrots
Beaten egg
Oyster sauce
Stock
Sugar
Salt

Method;
-Mix the ingredients for fillings except cornflour and set aside for 30 mins.
-Add cornflour and mix well when about to do the stuffings.
-Wash and clean beancurd puff, cut a slit on the top of beancurd puff and slowly stuff the mixture into the puffs.
-Steam on high heat for 5 mins.
-To prepare the sauce, fry onions & carrots.
-Stir in stocks & seasonings.
-Add beancurd puff to wok and simmer for a while.
-Place beancurd puffs on a serving dish except the stock.
-Add beaten egg and swirl lightly.
-Drizzle sauce over beancurd puffs, garnish & serve.
-Enjoy!

咸菜豆腐紫菜汤

Soup does not have to be those where u spend 1 day to slow cook or double boil. A quick & easy simple soup can oso add colours to dinner, being an additional dish.

Low calories & low in fat!

Simple Ingredients;
1 block tofu
2 leaves of preserved mustard
Some lean meat, cut into strips
Some cherry tomatoes, halved
Some seaweed
Cornflour
Salt
Oil
Chopped scallions

Method;
-Mix lean meat with cornflour.
-Bring stock & preserved mustard to boil for a min. Add salt to taste.
-Add tofu, tomatoes & lean meat.
-Bring to full boil & add seaweed.
-Speinkle chopped scallions & serve.
-Enjoy!

Steamed Tofu Omelette

Quick, easy, healthy, suitable for a diet person. Low fat & low calories as well. Wow... sounds great to eat this dish! Wat's even better, cooking method is simple & quick.

Ingredients:
1/2 block tofu, diced
2 beaten egg
50ml chicken stock
Shallots oil
Blanched xiao bai chye
Fried shallots

Sauce;
Oyster sauce
Sugar
Pinch of salt
Stock
Wolfberries
Thickening

Method;
-Grease a metal plate with shallots oil, lay tofu cubes in it.
-Beat egg with stock, pour over tofu.
-Steam for 7-8 mins on medium heat.
-Scoop omelette with a big ladle or overturn the plate onto a serving dish.
-Bring sauce to boil, drizzle over omelette, serve with garnish & serve.
-Enjoy!

A light healthy dish for someone who's on a diet, juz like me! :-P

麻辣豆瓣豆干

Another tofu dish for me again but tis time round its tau kua. Afterall they belong to the same soya bean family. Tis is an improvised version of my 双宝肉酱 but it's without any meat.

Ingredients;
1 piece tau kua, diced
2 dried mushroom, soaked and sliced
2 1/2 tsp minced bean paste
1 tsp homemade chili paste
1/2 tsp dark soy sauce
1 glove garlic, minced
2 shallots, minced
Some stock
Pinch of salt
Scallion, chopped

Method;
-Pan fry diced tau kua in hot till lightly browned, set aside for later use.
-Fry garlic and shallots till fragrant, add mushroom and fry well.
-Stir in bean paste, chili paste and stock.
-Add tau kua and give it a quick stir until mixture slightly dries up.
-Serve and sprinkle over chopped scallions over.
-Enjoy!

鱼香豆腐

Think i'm gonna die of protein. Been taking too much tofu tis week. Add on today, tis is gonna be the 3rd time i'm eating tofu. Wonder wat's wrong with me or was it due to the new product in the supermarket?! haha...
Well, i used to buy silken tofu which was sofe and smooth, idle for cooking coup. But there's a new product which i came across the ohter nite when i was shopping for groceries. It state "Spring tofu" on the package. I was thinking since tofu is rather "fragile", isn't it great to haf springy tofu?! Thus, i decided to give it a try.


The tofu is indeed springy, with the fragrant 鱼香fillings on top, its simply fantastic!

Ingredients;
1 box springy tofu
50g minced pork
2 tsp sambal shrimps (hei bee hiam)
1/2 tsp tau cheou, chopped
1 clove garlic, minced
1 shallots, minced
Scallions, chopped
Pinch of salt
1/2 tsp homemade chili paste
Oil for frying

Ingredients;
-Remove tofu from box, steam for 5 mins and drained.
-Fry garlic and shallots with oil till fragrant.
-Stir in tau cheou, chili paste and hei bee hiam.
-Add minced prok and fry till meat is cooked.
-Serve mixture obver tofu, sprinkle with scallions.
-Enjoy!

Wow.... doesn't it looks healthy and delicious? U can choose to deep fried the tofu for better taste. However, since i'm on a diet and prefers lower calories and lower fats, steaming will be a better choice. haha......

Golden Sandwiched Beancurd Square

My main intention was to cook tis dish for dinner, however as i managed to finish cooking at around 4plus pm, tis became our tea-break instead. haha... and i realised that tis dish gotto be eaten while hot, otherwise the chicken will be hard like patties. Oh well, seems like all food taste best when they r hot. :-P

Ingredients;
2 pc firm beancurd (tau kua)
1 fillet chicken breast, minced
1 stalk celery, finely chopped
1 tbsp sesame oil
1/2 tbsp light soy sauce
Pinch of salt
Dashes of ground corriander
Oil for pan frying

Cornflour
Egg, beaten

Method;
-Season minced chicken with seasoning, add in celery and mix well.
-Dry beancurd on kitchen towel, sliced into 1/2, cut into quarters.
-Dust cornflour on beancurd, spread chicken mixture on it, sandwich with another layer of beancurd.
-Dip into beaten egg, pan fry with oil till golden brown on all sides.
-Serve with chili dips with grounded nuts.
-Enjoy!

菜莆豆腐

Wat's my latest craze over food? Nothing healthy but preserved radish. haha..... Chai poh is commonly used in chwee kueh & fried carrot cake. I had crave for chai poh & bought 1 kg on implusive sometimes last week.

With the 1 kg of chai poh tempting mi, i can't help but to keep thinking of food & coming up with dishes to go with it.

Ingredients;
1 firm tofu
1 clove garlic, minced
2 tbsp chopped preserved radish (chai poh)
50g minced pork
1 stalk spring onion, chopped
Some corriander leaves
Oil for frying

Sauce;
1/2 tbsp oyster sauce

1/2 tbsp sugar
20ml water
1 tsp chili paste

Method;
-Place a chopping board on top of tofu to press out excess water.
-Dry tofu & slice into half.
-Deep fried in hot oil till crispy, drained & place on serving dish.
-Fry garlic in 1 tsp oil till browned, add preserved radish.
-Continue to fry for 2 mins b4 adding minced pork.
-Fry mixture till pork turn colour, pour in sauce & bring to boil.
-Simmer untill slightly thicken, stir in spring onions.
-Drizzle sauce over tofu, sprinkle with corriander leaves.
-Enjoy!

Stuffed Beancurd Puffs

Jesper commented that he wanna eat some fried snacks which so far up till now he haven eat b4. Since he's seldom at home, didn't reali get a chance to eat my "creations", i decided to make fried beancurd puffs with fillings inside.

The previous time i stuffed some fishpaste into beancurd puffs & steamed them, serve with gravy. Well, Jesper commented that he would prefer fried version. Hmm...too bad fish paste dun reali goes well with deep fried. Its better to make something which Jesper prefers since its upon his request. Hhaa....he's quite surprise that the beancurd puffs r being inverted the inside out. Well, by doing so, makes them more crispy when being fried in oil.

Ingredients;
12 small beancurd puffs (tau pok)
Oil for shallow frying

Stuffings;
2 portion minced pork
1 portion minced prawn
2 baby carrot, chopped
1 large diced mushroom
4 water chestnuts, chopped
1 stalk green onion, chopped
1 tsp light soy sauce
Pinch of salt
Dash of pepper
1/2 tbsp cornflour

Method;
-Mix all the ingredients for stuffing together(except cornflour)
-Set aside in fridge for an hour.
-Make a slit on the beancurd puff, turn the inside out gently.
-Do not tear the opening.
-Mix cornflour with the stuffings, mix well.
-Stuff beancurd puff till full, press the opening together to seal.
-Shallow fry in hot oil till golden brown.
-Serve with chili mix.
-Enjoy!

Swan Shrimp Tofu

This is supposed to be a light & healthy dish whereby i intend to steam & drizzle with a light soy gravy.However, dad requested for something 重口味, tt's y i change the sauce last min.
And the finished product comes out great.The sauce goes well with the bland tofu.

Ingredients;
1 roll silken tofu
1 fillet chicken breast, minced
2 water chestnuts, chopped
1 baby carrot, chopped
½ tsp light soy sauce
½ tsp sesame oil
Dash of msg
Pinch of salt
½ tsp cornflour, additional for sprinkling on tofu
8 medium prawns
1 stalk spring onions, chopped
Thickening agent

Sauce;
1 clove garlic, chopped
1 chili padi, chopped
1 tsp hoisin sauce
1 tsp oyster sauce
½ tsp chili paste
½ tsp sugar
50ml water

Method,
-Remove shells & veins from prawns, leaving the tail intact.
-Cut slits along the back of prawns, make a hole in the center, push the tail inwards & pull out from the bottom, making it into a swan shape.
-Marinate chicken with light soy sauce, sesame oil, salt & msg.
-Stir in chopped water chestnuts, carrots & cornflour.
-Cut tofu into 8 round patties, sprinkle some cornflour on tofu rings.
-Spread meat mixture onto tofu, top with a swan shrimp.
-Lay tofu onto a well greased plate & steam for 5 mins.
-Preparing sauce by mixing all the ingredients together, bring to boil & stir in thickening agent.
-Drizzle over cooked tofu, garnish with spring onions.
-Serve while hot.
-Enjoy!

Pan-fried Tofu In Special Sauce

Yellow bell pepper is my favourite & its the 1 & onli bell pepper which i dare to eat. :-P
As u noe, among the three types of bell pepper (Red, Green & Yello), red is spicy & green has the most awful taste among all, hmm... wonder how come mum would buy them at times to fry with meat.
As for mi, i always go for delicious stuff. haha.....

Ingredients;
1 tube tofu roll
1 garlic, minced
1 wedge yellow bell pepper, diced
80g minced pork
½ tbsp light soy sauce
Dash of salt
½ tbsp cornflour
1 tbsp oil

Sauce;
1½ tbsp tomato ketchup
½ tsp chili paste
3 tbsp water
Dash of salt
½ tsp sugar

Method;
-Marinate pork with soy sauce, salt & cornflour.
-Remove tofu from wrapper, cut into thick slices.
-Place them on kitchen towel to remove excess water.
-Pan fry with little oil till brown on both sides.
-Fry garlic till brown, add minced pork & fry till cooked.
-Add in bell pepper, fry for about 3 mins, do not cook too long as it will lose its crunchiness.
-Stir in sauce, bring to boil & simmer for a min.
-Serve over pan-fried tofu, garnish with some corriander leaves.
-Enjoy!

麻婆豆腐

Been so bz over the week & thank god its finally weekend where i can get to rest after my halfday work. I wanna cooked something simple & easy. Went to the supermarket to get the ingredients so last minute.

Ingredients;
1 block silken tofu, cubed
200g minced pork
3 dried mushroom, soaked & dice
1 tbsp spicy bean paste
1 clove garlic, minced
Spring onions, chopped
Chili oil
Oil for frying

Sauce;
1½ tsp rojak flower sambal chili paste
½ tsp dark soy sauce
½ tbsp sugar
½ tsp sesame oil
100ml stock
Dash of Sichuan pepper
Thickening agent

Method;
-Heat oil, fry garlic till fragrant.
-Add minced pork, fry till 80% cooked.
-Stir in spicy bean paste & mushroom.
-Add tofu & ingredients for sauce, except thickening agent.
-Cover & let simmer till sauce slightly dry.
-Stir in thickening agent & serve.
-Sprinkle chili oil & spring onions over.
-Enjoy!

Spicy Tau Kwa Salad

As i woke up very early this morning, i'm feeling lazy to cook dinner. So was mum,initially she suggested eating out,but changes mind as i mentioned; "huh? eat outside food again,didn't we had outside food for breakfast this morning!"

How about a simple salad & tomyam noodles for dinner, at least its home-cooked. I'll do the cooking & mum to do the washing! haha....I've always like cooking, hate washing. That's y when i had home economic lessons during my secondary school days, i will pair up with those students whom dunno how to cook, den they can stand there throughout the whole lessons to do washing! haha.....

Ingredients;
Some deep fried tau kwa pieces
1 cup shredded radish
3 baby carrots, shredded
½ cup shredded japanese cucumber
1 shallot, sliced thinly
Juice from 1 lime
1 chili, finely chopped
Some coriander leaves
Some peanut powder & roasted sesame seeds
Some thai chili sauce

Method;
-Mix all the ingredients together & serve immediately.
-Enjoy!
