Supper Time

7th May is finally here and it is time for Singaporeans to make a wise decision in our election. It's a once every 5 year affair and my area, the opposition-Worker's Party in Hougang has been strong for the past 20 yrs.

We are confident enough that we will will again this time round and besides conquering Hougang, we hope to win Aljunied as well. After a BBQ dinner in JB, we headed back to Singapore for the election results.
Feeling hungry, we decided to prepare the following food for supper.

1. Honey green tea
2. Kaya toastie
3. Cheese & egg toastie

Ham & Cheese, Egg Sandwiches

Adam told me that he's not a fan of any bread nor sandwiches and i'm abit disappointed. B'coz all the while i tot he enjoyed whatever i prepare for him. Since he's not at home, i decided to prepare this sandwich for Jesper's lunch.
So happy that he enjoyed it and was even full of praises cuz he finds that home-made sandwiches are always better than restaurant serve cuz it's cheaper to do so and can put lots of his preferred ingredients. Oh ya, cuz he's a carnivorous! keke....

Chicken ham & cheese with egg sandwich serve with harsh brown~ a fantastic lovely lunch.

Method;
-Fry egg till done, set aside for later use.
-Grill ham on the pan for 10 sec on each side, set aside for later use.
-Spread butter on 1 side of bread, place bread onto a heated frying pan with butter side down.
-Flip over to the other side for 2 mins.
-To assemble, spread salad sauce onto both slices of bread, top with ham, cheese and egg.
-Top with another slice of bread and cut into triangles.
-Serve with baked harsh brown.
-Enjoy!

Chicken Mayo Sandwich

Wanting to have variety, i made some egg mayo sandwiches to go with for Jesper's lunch. Luckily i serve him cream of mushroom soup b4 the sandwiches. keke...

Ingredients;
Chicken breast, boiled & shred
Pinch of salt
Pinch of ground white pepper
Dash of coriander powder
Low fat salad cream
Dash of black pepper
Lettuce
Bread slices

Method;
-Mix the 1st 5 ingredients together, chill in fridge.
-Spread some light mayo on bread, top with lettuce.
-Lay chicken mayo on top, sprinkle with black pepper.
-Top with another slice of bread & cut into 4 triangles.
-Enjoy!

Roasted Chicken Sandwich Roll

I made a roasted chicken sandwich roll with spicy sauce for Adam's lunch. He being someone who wanna have a complete meal for his lunch, definitely i will serve the bread with mushroom soup and a side salad for him.

Ingredients;
Hotdog roll bun
BBQ Chicken fillet
Spicy sauce
Roasted sesame seeds
Butter
Lettuce

Spicy sauce ingredients & method;
-Use the same pan for cooking the chicken fillet.
-Add water, chili paste, little bit of tomato ketchup, sugar and cornflour.
-Cook till gravy thicken, drizzle over chicken & serve.

Assemble;
-Cut bun into half, spread butter and place the butter side down on a hot non-stick pan.
-Light brown the butter side of bread, sandwich with chicken fillet and lettuce.
-Drizzle sauce over, sprinkle with roasted sesame seeds and serve.
-Enjoy!

Club Sandwich

This after lunch was a all bread feast. I decided to make club sandwiches & spicy BBQ chicken roll and since Jesper can't stand hunger, decided to proceed with his lunch 1st. Making sandwich is quick and easy but the time for marinating the chicken takes a while.

Ingredients,
3 slices of white bread
Butter
Salad dressing
Cheese
Ham
Roasted Chicken fillet
Lettuce
Egg

Method;
-Spread butter on bread and toast till lightly brown on both sides.
-Spread salad dressing on 1 slice of bread, top with ham, cheese & lettuce.
-Top with another layer of bread which was spread with salad dressing.
-Top with roasted chicken and egg, followed by the last layer of bread.
-Cut sandwich into 4 triangles, serve with crackers.
-Enjoy!

Onion Tuna "Open" Sandwiches

Some "open" sandwiches serve with a cup of hot chocolate, wat a perfect supper for Adam. Open sandwiches are best serve during standing reception or by butlered hors d'oeuvres style.
The spread for the sandwiches depends on individual preferences, you can top with tomato salsa or egg mayo as well.

Simply;
-Spread some butter on cross cut french loaf slices
-Toast for 5 mins
-Spread with onion tune mixture
-Top with shredded lettuce and cherry tomatoes
-Enjoy!

Within few seconds, he's bout to finish off the 3rd piece.

Soooooo......... tempting. I 'm feeling hungry! :-P

Ramily Buger For Breakfast

Had a hearty breakfast tis morning since I had the ingredients for ramily burger. Ramily burger is a very popular pasar malam snack prepare by the muslims. Adam 's been mentioning bout his crave for ramily burger for the past few days/

I went to JB with Tabby for dinner and I bought some ramily chicken patties from the supermarket. Woke up very early in order to prepare breakfast for all as Adam needs to go for class early tis morning.

Ingredients;
Ramily chicken patties
Sesame burger buns
Eggs
Low fat cheese
Salad cream or mayonnaise
Chili sauce
Butter

Method;
-Cut burger into half, spread some butter and grill burger till brown with butter side face down.
-Remove and let cool.
-Pan fry chicken patties without oil 4 mins on each side till browned.
-Prepare omelette, place chicken patty in the centre, drizzle with sauces & wrap up.
-To assemble, place wrap chicken over cheese and buns.
-Enjoy!

Breaded Sandwich Pockets

Tis dish reminds mi of my 3rd uncle whom passed away 10 yrs ago. Y tis dish? Well, cuz in my memory, i remembers that he love cooking, but he's the type whom will make preparations & either my mum or granny gotto help him cook.
There was once during my birthday celebration dinner, i prepared something like tis dish, but without breadcrumbs coating & being deep fried in oil. Ended up the oil was soooo oily, we gotto place all the bread on plenty of kitchen to remove excess oil. haha....well, learn through failure is the best. From there i can continue to improvise. keke....

Ingredients;
6 slices plain bread
1 egg, beaten
Some breadcrumbs
Some butter

Fillings;
1 medium potato, cubed
1 small onion, thinly sliced
Pinch of salt
Dash of ground corriander
1 tsp chili paste
1 tsp curry powder
water

Method;
-Pan fry potato cubes till golden brown, drained & set aside.
-Fry onion till fragrant, add potatoes, seasonings & water.
-Bring to boil & simmer over low heat till potato soften & mixture dry.
-Let potato mixture cool.
-Remove crust from bread, place 2 tsp fillings in the middle, foldover to form a triangle.Seal with beaten egg. Continue untill mixture finishes.
-Brush sandwich pockets with beaten egg, coat with breadcrumbs.
-Brush a baking tray with butter, place breaded pockets on the tray.
-Bake in preheated oven till golden brown.
-Enjoy!

Toastie Sandwiches

The sandwich maker which was lying in a corner of my storeroom had been with us for more than 10 yrs & its still functioning well. On & off we will take it out, clean it thoroughly make toasted sandwiches.

I was thinking of ideas for breakfast when the it stuck mi "Sandwich Maker" yup...shall go ahead with the idea.
Not necessary gotto wake up early to prepare as its simple, quick & easy.
1) Lay a slice of bread on the maker, top with ingredients followed by another slice of bread on top
2) Cover & lock handle of sandwich maker, on the switch.
3) When its ready, cut squares into 1/2 to form 2 triangles & its ready!
4) Enjoy!
U can stuff with any kinda ingredients u like. Yes, anything u would like for a sandwich.

My Very 1st Bento

I'm running out of lunch ideas. Having to think of what to eat for lunch? Going to which canteen around my office to buy food? Haiz...sometimes i even skip lunch, save the trouble of walking out under the hot sun juz to buy food.

Mum gave mi a a cute lunch box where she got it FOC when buying toothpaste. Seeing that there were some bread on the table, i decided to make a simple bento for my lunch.

I'm so excited, looking forward to eating my egg mayo sandwich with tomatoes, fruit juice, choco wafer roll, dark chocolate oat cookies & an apple. Wow.. even though its nothing fanciful, but its my 1st time anyway. haha...
I reali enjoyed my lunch so much. Hope there are more to come. :-)

Black Pepper Tuna Crossoinwich

Something different for a change. Other than having rice, rice & rice for lunch as always, i brought ingredients & prepare a crossoinwich in office today.
The meal was completed with grapefruit juice, sparkling water with a slice of lemon. Feels like dining in a cafe when when i'm in the office.

Ingredients;
1 crossiant
1 can tuna chunks in water
Black pepper
Mayonnaise
Salt
Lettuce
Tomato slices
Lightly salted chips

Method;
-Drain off water fm tuna can.
-Mash tuna & mix well with black pepper, salt, mayo.
-Sandwich in between crossiant, lettuce & tomatoes.
-Serve with chips & drinks.
-Enjoy!

Baked Roti John

I made a healthier version of roti john for breakfast this morning.
Normally those roti john where malay hawkers sell,uses baguette & are being pan fried till cooked. But by doing so, its calories & fats level are much higher.
To reduce calories & make them healthier choice,I used bread roll instead of baguette,have them baked insted of pan fried.The end product comes out great!

Ingredients;
4 bread roll
1 egg, beaten
1 small onion, chopped
½ green chili, slice thinly
1 fillet chicken breast, minced
Oil or melted butter
Shredded lettuce & cucumber slices
Tomato ketchup & mayonnaise

Meat marinade;
½ tsp light soy sauce
Pinch of salt & baking soda
¼ tsp coriander powder
½ tsp curry powder

Method,
-Marinate minced chicken with marinade, set aside in fridge for at least 30mins.
-Add in beaten egg, onions & green chili. Mixed well.
-Preheat oven to 220˚, greased a tray with melted butter.
-Cut open bread rolls, spread generously with egg fillings.
-Lay bread rolls onto tray with fillings side facing down.
-Brush top of bread with butter & place on lower rack of the oven.
-Bake for 10-15mins or until chicken is cooked.
-Sandwich roti john with cucumber, lettuce & sauce.
-Enjoy!

Shrooms & Onions Cheesy Scrambled Eggs On Toast

I'm on leave today, but i still woke up early to prepare breakfast as Jesper needs to go off to work early.
Jesper was delighted as he gets to eat his favourite scrambled eggs for breakfast early this morning. He prefers those that i made as compared to outside cuz i add in other ingredients mah! haha....

Ingredients;
2 eggs, beaten
½ onion, slice thinly
3 button mushroom
2 tbsp skimmed milk
1 slice low fat cheese
½ tbsp soft butter
Toasted bread
Salt & pepper

Method;
-Melt butter in a pan, fry onions till fragrant, add in mushroom fry till cooked.
-Beat eggs with milk, add ½ slice cheese, mushrooms & onions.
-Pour egg mixture into non-stick pan, cook over low heat.
-Keep stirring mixture until set.
-Lay remaining ½ slice cheese on toasted bread, serve scrambled eggs over toast.
-Sprinkle salt & pepper.
-Enjoy!

Garlicy Sweet & Spicy Sausage Roll

I can hardly open my eyes...so sleepy, watched football match till dawn.No matter wat, i still gotto wake up early to prepare breakfast as i already bought all the ingredients.Oh...how i wish i could stay in bed longer.
I can only rely on coffee to perks mi up. I love to have sausages for breakfast! Put in some effort to prepare a different kinda sausage bread.

Whenever there was excursion during my primary school days, mum would prepare hotdog bread for mi. & its reali onli hotdog with bread. No sauces, no greens etc....so pathetic rite? haiz.....

Ingredients;
2 chicken sausages
2 sausage bread roll
2 clove garlic, minced
Dash of black pepper
1 tsp olive oil
2 cherry tomatoes
Shredded lettuce
2 tsp sweet & spicy thai chili sauce

Method;
-Add minced garlic & olive oil together, mix well.
-Cut slits on chicken sausages, stuff garlic into slits, brush remaining oil & garlic over sausages.
-Bake sausages in preheated toaster oven till cooked, bout 8-10mins.
-Brush sweet & spicy thai chili sauce onto sausages.
-Serve with bread roll, lettuce, cherry tomatoes & the remaining chili sauce.
-Enjoy!

Sandwich Tower

Its neither lunch time nor tea-break. Its juz an hour b4 dinner & Adam's making so much noise as he's feeling hungry.
I decided to make a quick sandwich for him, but he request something special.

Ta ran.... here's the sandwich tower for Adam. Erm... seems more like a collapsed 1 instead. haha... B4 i can make it stand, Adam can't wait to tear the sandwich tower apart! I bet he's reali hungry! Lolz...

Steps are super easy;
-Simply prepare some slices of high calcium bread, few of your favourite fillings & some greens.
-Stack them layer by layer, add some mayonnaise in between if u prefer.
-Secure with a satay stick.
-Enjoy!

Chicken Nuggets Sandwich Roll

Its been ages since i last had chicken nuggets with bread roll for breakfast. Wanted some new for a change & so i made these for breakfast today.
Ingredients,
3 bread roll
Some lettuce
Chili sauce
Mayonnaise
1 chicken breast
1 egg, beaten
2 tbsp plain flour
Some breadcrumbs
2 tbsp cheese powder
¼ tsp salt
Oil for greasing

Method;
-Mix breadcrumbs with cheese powder & set aside.
-Cut chicken breast into 6 pieces, rub with salt.
-Coat chicken pieces with flour, followed by beaten eggs den into the breadcrumbs mixture.
-Grease a baking tray oil, lay chicken nuggets onto tray.
-Bake in 200˚C preheated oven for 10mins, turn & bake on the other side for another 10mins.
-Remove & cool the nuggets slightly.
-Dip nuggets with chili sauce, serve in bread rolls with lettuce & mayonnaise.
-Enjoy!

Sweet & Spicy Egg Burger

We had sweet & sour pork for dinner last nite.Normally mum would cook extra sauce & place it in another bowl juz in case Jesper finds it too dry.
Since there's extra sauce, i use them to make a sweet & spicy egg burger for breakfast this morning.

This is easy....simply prepare some burger buns, egg omelette with onions, slices of ham, cheese, some lettuce, sweet & sour sauce & some sambal chili paste.

Bring the sauce to boil, add some sambal chili paste to it. U may add more if u prefer it to be spicier.

Assemble the burger, top with lettuce, egg omelette, spread sweet & spicy sauce over, add some ham & chesse.

Its sooo..... Yummy! Omelette goes well with sweet & spicy sauce.U can choose to omit ham & chesse, but i find that it adds a different touch to the burger & the overall result is delicious! :-)

Cheesy Omelette Hotdog Roll

Rise & shine! I rolled out of bed early this morning to prepare breakfast for my family.Hasn't been preparing breakfast lately,becoming lazier & lazier & the punishment is no breakfast for mi.haha.....think its time i cut down on my beauty sleep.keke.....

Ingredients;
2 chicken franks
1 egg
2 tbsp skimmed milk
1 slice cheese, cubed
1 tsp butter
Some shredded lettuce
Some mayonnaise
Some chili sauce
2 hotdog bun

Method;
-Cut some slits on the chicken franks.
-Pan fry till cooked, set aside for later use.
-Beat egg with skimmed milk.
-Prepare an omelette by melting butter in pan, pour in egg mixture, sprinkle cheese over.
-When omelette is done, cut into half.
-To assemble;
-Lay chicken frank onto omelette, add sauces & roll up.
-Stuff fillings into hotdog bun, serve with shredded lettuce.
-Enjoy!

Bak Kwa Cheese Toast

Bak Kwa, pineapple tarts, taiwan mua chee, pudding......these are a few of my favourite food! yup....especially during cny. haha....

Simply;
-Spread butter over slice of bread, toast in the oven toaster for about 8 mins.
-Top with bak kwa & cheese, toast for another 4-5 mins untill cheese melts.
-Enjoy!

I love pineapple tarts. Yes & its onli the type where pineapple jam are being wrapped inside.know y? Normally for those tarts whereby the jam are on top, they tends to be dry & hard.

Another of my favourite! These foodstuff from taiwan onli starts their trend here in these recent years.

Jesper purposely went to chinatown b4 cny period to purchase them.
I loved the green tea & yam mua chee most.Mum loved mango & lychee pudding! yummy!

Egg Sandwich With Colourful Bread

All tis while i tot sweet dough bread can onli go with sweet fillings like kaya, but didn't i expect that it goes well with salty fillings like egg,cheese & ham.
I did a very daring try, initially i bought this colourful bread to make toasted kaya bread but somehow or rather i had a crave for salty sandwich.
This is wat i prepared for breakfast tis morning;

All i need is to prepare tomato omelette, carrot ham, low fat cheese, lettuce. Sandwiched all the ingredients with bread & serve with my favourite baked beans. Yummy!
