蛋包饭

Juz knocked off, was feeling so hungry as i haven eaten anything for the whole day.
Searching through the fridge, i found some cooked rice left over from last nite's dinner & half a can of baked beans.I decided to whip up a quick and simple fried rice with watever ingredients i like.

I serve my baked beans over my 蛋包饭. Hmm...something unique & yummy!

Ingredients;
1 egg, beaten
2 large prawns, cubed
1 cup cooked rice
1 crabmeat stick
1 clove garlic, chopped
1 stalk spring onion, chopped
1 slice ham, cubed
Dash of salt
Oil for frying
1 tsp sambal chili

Method;
-Pour beaten egg into a non-stick frying pan, swirl pan around to make it as thin as possible. Let egg set, flip over and pan fry the other side. Set aside for later use.
-Heat 1 tbsp oil in a wok, add in chopped garlic, fry till fragrant.
-All in rice, crabmeat stick, ham fry till all are well mixed.
-Add in prawns, sambal chili, seasoning & spring onions.
-Fry till prawns are cooked.
-Wrap rice in egg & serve.
-Enjoy!

Rice Cooker Style Peanut with Yam Congee

Cooked some spare-ribs peanut soup using the slow cooker overnite. Decided to use some of it to cook congee for breakfast this morning.
I used rice cooker to do so, as its easy & fast to cook. Haha...that's the lazy way for lazy pple.
Ingredients;
½ pot spare-ribs soup
½ cup cooked peanuts
Some meat from the spare-ribs
150g lean meat, sliced
1 tsp corn flour
½ yam, cubed
1 cup cooked rice
Salt to taste
Boiling water
Fried shallots
Pepper
Chopped coriander & spring onions

Method;
-Deep fried yam till golden brown.
-Marinade sliced lean meat with salt, sesame oil for at least 30 mins.
-Add 1 tsp corn flour to the meat b4 adding into the congee.
-Add cooked rice to the spare-rib soup, add in more boiling water.
-Press button on rice cooker, let it cook thoroughly.
-When light shows it is ready, add in yam, meat, and peanuts.
-Press button on rice cooker to let it cook the 2nd time.
-When it is ready, season with salt to taste.
-Keep warm in the cooker till ready to eat.
-Garnishes with fried shallots, pepper & chopped spring onions.
-Enjoy!

Pumpkin Chicken Brown Rice

I been craving for pumpkin ever since the other day i saw a mixed vegetable rice vedor selling pumpkins as 1 of the dish.
I loved pumpkins.Be it pumpkin kueh,pumpkin soup or juz stir fry with a dash of salt.I can juz eat them without having main course!

I bought a wedge of pumpkin at $4.5 per kg.Wah...its not cheap ya. However, there was another pale coloured kind which cost onli $1.3 per kg.
Definately the wan which is more ex is better ba as its bright orange red in colour.

I decided to cook pumpkin chicken rice with my favourite brown rice.Its fantastic & Adam had 2 serving! ^-^


Ingredients;
1 wedge of pumpkin, cubed
1 chicken drumstick with thigh
¼ tsp baking soda
¼ tsp salt
1 tbsp sesame oil
3 dried mushroom, sliced
1 inch ginger, sliced
1 clove garlic, chopped
¾ cup brown rice
¼ cup white rice
1 cup mushroom water
Some boiling water
Oil for frying
Salt to taste

Method;
-Debone chicken, cut into several pieces. Marinade with baking soda, salt & sesame oil for at least 1hr.
-Soak mushroom in hot water for ½ hr, squeeze out excess water, sliced mushroom thinly. Reserve mushroom water for later use.
-Soak brown rice for 15mis, wash clean with white rice.
-Deep fried pumpkin cubed, drained.
-Heat oil in a wok, fry garlic & ginger till fragrant.
-Add chicken, mushroom & seasoning.
-Add in rice & mushroom water.
-Bring to boil, add in deep fried pumpkin.
-Scoop mixture onto a plate, add some boiling water if its too dry.
-Steam for 30-40 mins or till cooked.
-Serve with stir fry chye sim & fried shallots.
-Enjoy!

Honey Lemon with Aloe Bits

Aunty Sarah loves growing plants & she reali takes gd care of them.She gave mi some big lovely aloe vera today.Wat i usually do with aloe vera is either use them for facial for cook them.
I decided to prepare a refreshing drink & add aloe vera bits as toppings.


Preparing aloe vera bits is a tedious job. Spent quite a long time removing the outer layer & cutting them into small bits.
As they were reali slimy, gotto run them under tap water, followed by hot water, den cold water again b4 they are ready to be cook.

-Simply bring aloe vera bits to boil, add 2 tbsp sugar.
-Drained, run under cold water, add some ice cubes to the aloe vera.
-Prepare sugar syrup by adding sugar to boiling water, stir in honey
-Mix syrup, lemon juice, aloe vera bits & some cold water.
-Serve with ice cubes.
-Enjoy!

Cooking Breakfast

Its been a long time since a last cook. Been bz with work & gatherings with my exclassmates. Well, that oso gave me an excuss to eat outside food. haha...
But these few days i gotto be reali very careful with wat i eat, as i went for moles removal on my face last evening. :-( no beans, dark sauce,seafood,dried shrimps etc...juz in case i may get scars in future. keke....
As i wasn't working today,i've got plenty of time to prepare breakfast for my family.It isn;t an easy task as i couldn't prepare the same for everyone.

Mum is not so much of an "ang mo eat" she doesn't like scrambled eggs & sausages, to her, she muz have bread, so it will be filling enough to last her till lunch. I made a tomato with carrot ham & egg sandwish.

Lucky Adam eats a bit of everything, i dun have to have a headache of planning his menu.But, he mentioned that he dun take sunny side ups,oso abit hard to please ya! haha....

Well, for me, i'm simple. I had a tomatoes with ham & cheese omelette. Serve with some greens & a cheese sausage.I would love to go with some baked beans, but i sort of rem there's are certain food i need to avoid! :-(
Jesper is a real fussy eater. He made clear to me if i'm cooking american style breakfast, he muz have scrambled eggs, sunny side ups ,ham & toast.
Funny thing is he actually request for baked beans! haha...well, he's the kind that dun take tomato based stuff.

Juz like the previous time i prepared breakfast, everyone had an enjoyable breakfast! ^_^

Dinner@NewYork NewYork

I had a great time catching up with 3 of my secondary school classmates last evening.
We had dinner at NY NY heartland mall branch.Well, they always frequent there, however this is my 2nd time having meals at NY NY.

We ordered lots of food to share,& we left the place with our bloated tummies. keke.....

I side dish~Potato Wedges..........

I ordered the Mushroom Cappuccino, its actually mushroom soup top with foam & dust with coco powder.

This vegetable soup is diet friendly, its light & had chuncks & chuncks of vege inside.

A nicely presented Ham & Tomato Salad.

Oh, this is lovely. Creamy Alfredo with Crispy Fish.Although its sinful, but worth the risk as the cream sauce is rich & thick.Yummy....


Roast Half Chicken~I onli noe how to order this main course.haha...
1st time to NY NY, ordered this dish.2nd time to NY NY, i oso ordered this. haiz....so loyal ya,keke...

My fren loved this Meatball Bolognese, she saw the next table customers enjoying the huge meatballs.Tempted to try this out & indeed, it was onli slightly smaller than a fist.

Lucky we onli ordered 1 dessert.We were so full, this big Apple Pie serve with a scoop of vanilla ice-cream is so filling.

纸包鸡

After the enjoyable trip yesterday, i prepared some chicken pcs, marinade them overnite.I baked the chicken early this morning & so,we had 纸包鸡with congee for breakfast this morning.Yum yum....

Ingredients;
2 large chicken drumsticks with thigh
1 pc 2cm ginger, grated
¼ tsp baking soda
1 tbsp light soy sauce
1 tbsp dark soy sauce
1 tbsp oyster sauce
1 tbsp honey
1 tbsp sesame oil
Pinch of salt
Dash of brown sugar
Some coriander leaves
Some tracing paper (18cm X 18cm)
½ tbsp oil for brushing

Method;
-Debone chicken, chopped into bite pieces.
-Marinade chicken with ginger & all the seasonings, set aside in fridge overnite.
-Brush paper with oil, place 1-2 tbsp chicken meat in the center.
-Top with coriander leaves, wrap chicken in a envelope way.
-Brush chicken parcels with oil.
-Bake in preheated oven at 250˚C for 15mins or until chicken cooked.
-Enjoy!

Pengarang Trip

I'm so excited! Dad told mi last nite that our family will be going on a makan trip to pengarang today.
Still remembered the last time i went to pengarang was last november.I been thinking about the good food there recently.Finally here's our chance.

Woke up as early as 6am this morning, we set off from singapore changi village & by time we reach pengarang was about 9.30am.

We went to the fish market by the pier upon reaching.

This is the fish market where all the fishermen will sell their fruit of labour for the day.Dad's fren is the owner of a seafood restaurant & this is the place where he gets his freshest seafood.

These huge fishes were fresh from the sea.

Dad bought some fresh fishes from dem......as usual lo, even if dad didnt go over to pengarang, his fren will oso help him buy & bring over to singapore. haha...this time round, dad will bring back on his own!

After Fish market trip, we went to a nearby kopitiam for breakfast.I was being introduced to kampong chicken's egg.Hmm... its delicious!

These eggs of the kampong chicken were slightly smaller than those normal eggs & the shell is white is colour.

Outside the kopitiam, we saw this lady selling ham chi peng by the roadside.
Other than in bangkok, this is the 2nd time i saw pple cooking by the streets.
Well, coz life in singapore doesn't allow that to happen, tt's y city kids like us dun see this often.

Time for a walk after the light breakfast. Streets were quite as this place was not always packed with visitors or tourists.

Wow....see the huge mangoes on this tree!I always like to admire fruit trees, especially those with lots of fruits on them.

This is the seafood restaurant which uncle david own. This place is always packed with residents living in pengarang & during holidays, its packed with tourists & visitors.
We will always have a thai coconut each b4 start of every meal! It makes a thirst quenching refreshing drink, especially on a hot day.

Our starter dish~一品锅.This dish is not always available, gotto place an order in advance.

My favourite~lobster salad

My 2nd favourite~buttered lobster

Ohh....this is fantastic, i never had such delicious lobster yee mee b4! Love it!

The most simple & easy way of cooking lobster. Steaming enables u to taste the freshness & sweetness of the lobster.
Not onli the lobster feast, we had other seafood dishes as well.

Hotplate oyster egg~fluffy eggs with fresh oysters, drizzle with special sauce. Its reali yummy, totally different from the oyster egg we find in singapore.

Steamed promfet in saltish garlic sauce~another of my favourite dish. This is not the normal promfet where we see in the market. Its of a higer & more expensive grade.
The meat is finer, sweeter & not soggy after steaming.

My dad's favourite~Pig's trotter with yam.

Its goes perfectly great with this special bend of spicy sour chili sauce.
After all these yummy~licios food, its time to say goodbye.On our way from the seafood restaurant to the pier, nothing to do on the taxi, bo liao adam & ekina did the followings.....

Wow...another rare scence, sailing boat near the seashore.
Hello Singapore, we are back. Wat a tired but enjoying trip we had! :-P

Steamed Threadfin in Spicy Garlic Soy Sauce

Been having mouth ulcers recenty. Guess i'm too heaty ba. So, no more fried food for mi. :-(
Prepared my favourite threadfin in light & simple way for dinner tonite.

Ingredients;
1 thick slice threadfin
2 slice ginger, grated
5 clove garlic, chopped
2 chili padi, chopped
1½ tbsp oyster sauce
2 tbsp dark soy sauce
2 tbsp water
½ tbsp oil

-Prepare sauce by frying garlic, chili & ginger in oil.
-Add water, oyster sauce & dark soy sauce.
-Bring to full boil.
-Steam fish on high heat for about 12 mins.
-Serve fish with spicy garlic soy sauce.
-Enjoy!

*Amt of oyster & soy sauce depends on individual preference
*Duration of steaming depends on size & thickness of fish.

糯米鸡(Lo Mai Gai)

I been wanting to cook Lo Mai Gai since last week. But becoz by time i reached the market,the chicken were already sold out.
Lucky me, managed to purchase the last batch of chicken drumstick with thigh. Therefore,i made some Lo Mai Gai after dinner tonite.I juz need to warm them up tomolo morning, serve as breakfast for Adam.

Ingredients;
2 cups glutinous rice
Water
1 big chicken drumstick with thigh
4 dried mushrooms
2 tsp oyster sauce
1 tbsp sesame oil
1 tsp light soy sauce
¼ tsp salt
1 tsp dark soy sauce
1 shallot, sliced
2 tbsp mushroom water
½ tbsp oil

Method;
-Remove skin & debone chicken.
-Cut into strips & marinade for at least 30mins.
-Soak dried mushrooms in hot water, slice thinly.
-Soak glutinous rice in water for 15-20mins, drained.
-Mix rice with ¼ tsp salt & 1 tsp dark soy sauce.
-Heat wok, add oil. Fry shallots till brown, add in chicken strips & mushroom.
-Fry till chicken is 60% cooked, add in mushroom water, continue to fry until it is 80% cooked.

-Remove & lay on aluminum foil plates.
-Top chicken mixture with glutinous rice, add water till rice resembles congee.
-Steam on high heat for 30mins or till cooked.
-Enjoy!

泰式辣豆腐

I prepared a spicy tofu salad as an appertiser for our dinner tonite. Adam can't wait to start! Its rather spicy to me, think next time round, better dun add too much chili padi. haha....

Ingredients;
1 pc firm tofu
1 mini cucumber
1 baby carrot
½ rojak flower
1 chili padi
4 cherry tomatoes
5 tbsp thai chili sauce
2 tbsp chopped roasted peanut
Some roasted sesame seeds
Oil for deep frying

Method;
-Cut firm tofu into pieces, deep fried till golden brown.
-Shred cucumber & carrot, chill with ice cubes.
-Sliced rojak flower thinly, chopped chili padi.
-Mixed rojak flower, chili padi, chopped roasted peanut into thai chili sauce.
-Dip tofu into sauce, lay them on a serving plate.
-Squeeze out excess water from cucumber & carrots, add slices of cherry tomatoes. Mix well into the remaining chili sauce.
-Top onto tofu, sprinkle with roasted sesame seeds.
-Enjoy!

Sushi

I was at tabby house today. We prepared some sushi together for dinner & its reali fun preparing sushi together.
Other than getting them ready & topping with ingredients, most of dem went direct into our mouth instantly as we couldn't resist the yummy temptation.

These were the few sushi which manage to "survive" . Lucky for them, have a chance for us to take photos.

Ingredients;
3½ cup short grains japanese rice
Water
1/3 cup vinegar
3 tbsp sugar
¼ tsp salt
10 sheets of seaweed, cut into long strips.
Tuna mayo toppings
Egg mayo toppings
Crabmeat mayo toppings

Method;
-Cook rice with water in the cooker.
-Bring vinegar to boil, add sugar & salt.
-Boil until sugar dissolve, pour over cooked rice.
-Mix well, set aside to cool.
-Coat palm with water, press & roll 1½ tbsp rice firmly.
-Wrap pressed rice with seaweed( exposing the top & bottom part), seal with water.
-Top with your favourite toppings like tuna mayo, crabmeat mayo, egg mayo or potato salad.
-Enjoy!

Simple Breakfast

I whip up a simple breakfast for Adam & Jesper in less than 15mins time. Jesper always love american style breakfast.
Indeed, it is an enjoyable breakfast for him. With every mouthful he took, he gave out a hmm..... yummy yummy...its tasty & delicious.
Oh....its not a good news for me.Too much to his likeing & he request for something like this every morning. Oops....will onli do that when i have the ingredients, time & most importanly, mood! haha....

Sunny side up, scrambled egg, cheese & onion sausage & ham served with with some greens.
Too bad there's no more baked beans at home :(



Now, this ham, egg with cheese sandwich is specially for mum. She doesn't like scrambled egg, prefer to go for something which is more filling...."bread"
