I Day Pengarang Makan Trip

Uncle Orr organised a 1 day makan trip to pengarang yesterday. He treated us to lobster lunch as he strike 4D on sat. So nice of him, his winnings is about $200 dollars but the lunch costs about $390+++.

As usual, our standard procedure is to meet at changi terminal at 8am, ride to pengarang, have coffee & breakfast at the coffeeshop b4 uncle david's restaurant opens for business at 11am.

Upon arriving at uncle david's restaurant, we saw that he changed a new signboard. Someything new, wish him the best of luck & may more $$$ roll into his shop (biz prosper).

Fresh fm the sea tis morning, 3 red flower fish steamed in soy garlic sauce.
3 are not enough to satiasy the crave for 11 of us. We ordered another 2 big red flower fishes. Texture of bigger fish differs as compared to the smaller ones.
Handmade fried fishcake~a new dish which we never ate b4 despite having been to pengarang so many times. Texture is smotth, full of flavours.
螳螂虾~a very rare kind of seafood which belongs to the prawns' family.
Heard fm uncle david tt its gotto be cook alive.If its dead, it cant be eaten. The meat is very sweet & fresh. Best eaten steamed.
Since there's onli 1 of it, uncle orr says onli kids like moi, adam, uncle gopal's daughters get to eat. Whereas uncle orr gets to eat head & tail. haha....

Steamed prawns with a bit of oyster sauce & sesame oil.

Our all time favourite~braised trotter with yam.
The gravy is shiok ar.....its so nice that i ordered a bowl of plain rice to go with the gravy. Actually i'm not a rice lover, but dunno how come got the urge to eat rice when i tasted the gravy.

Stir fry dua tao in spicy sauce. Oh, it was my 1st time coming across tis funny looking calms.

Meat is inside, but there's a tail lagging outside. Overall taste is still ok. I dun reali noe how to differentiate lala,dua tao, gong gong, calms etc...

OOPS....tis 17 yr old boy caught red handed by mi, for drinking red wine below 18. or hor hor.....i can use tis pic to blackmail Adam. keke.....

Finding it hard to swallow izzit small boy?!?! haha...tis shall teach u a lesson for drinking such a big sip.

Oh, adam realise that i was taking photo of him, trying to cover my view. Well, its TOO LATE, i already got evidence. keke.....

In total we drank 6 bottles of red wine. Ah pui uncle had a drop too much, feeling tipsy & sleepy. He sat on the chair & fell asleep.

I think i ate too much, its time to go for a walk with adam. We went to a nearby shop & yes, its the onli shop that is air-conditioned.
No wonder we will go there, even if no intention to buy things, juz pretend to shop around will do. haha....

Tis place is cool & convenient. Juz like our neighbourhood, has all kinds of shops.

Wat's in the trend? Erm...its bubble tea. Here it is, a small bubble tea stall.
Let mi try & see how it taste, says Adam.

Replaced pearls with mixed fruit jelly, clever adam demostrating on how to suck the jellies.
I ordered a passion fruit green tea, but it looks & taste more like passion yoghurt drink. haha.....

Wat's for dessert? Ice kacang is best for a super hot weather.

I had a chendol.

Back to the restaurant after a walk. Along the way i picked up a pomegranate which i intend to bring back hm to plant. I'm into gardening now. :-)

Time for a jasmine to sober up after drinking so much red wine. I love the taste of the tea, its uncle davids' 私人珍藏 wor!

Asparagus With Spicy Shrimp Paste

I'm again in the asparagus craze. Well, same goes for mum. We had a hard time deciding how to cook our favourite asparagus. I wanted something with strong taste, abit spciy. Whereas mum wanna have it stir fry with prawns.
Well, frankly speaking, asparagus if wanna stir fry with prawns should at least add some fresh scallops isn't it? Since our house doesn't haf fresh scallops plus i juz ate stir fry asparagus with fresh scallop last nite, we come to a conclusion to cook it in spicy shrimp paste. haha....

Ingredients;
1 shallots, slice thinly
1 garlic, minced
1 packet thai asparagus
Pinch of salt
2 tbsp water
Oil for frying

Spicy shrimp paste;
15g dried shrimp, soak & pound
1/2 tsp chili paste
Pinch of salt
Some sugar
1 garlic, minced
1 chili padi, minced
1 tbsp oil

Method;
-Cut asparagus into 3 section, peel off some shavings from the most bottom piece.
-Soak in cold water for about 10mins.
-Fry shallots in hot till browed, drained.
-Add minced garlic to the oil, fry till fragrant
-Add asparagus, fry till 70% cooked, add in spicy shrimp paste, water & salt.
-Mix well, continue to fry for a min.
-Sprinkle some fried shallots over & serve.
-Enjoy!

To prepare spicy shrimp paste;
-Fry garlic & chili padi in oil till fragrant
-Add chili paste & pounded dried shrimp;
-Fry over low heat for about 15mins.
-Add seasonings & mix well.

Iced Coconut Latte

I came across a kind of instant coffee mix in cold storage the other day. It was stated Iced coconut latte. Something new to me. Intended to buy, but purchased mochacinno instead.

Since that very day onwards, mixing coconut to coffee is a drink i wanted very much to try. Since i had some coconut milk left over from steaming the palm sugar cake the other day, i decided to experiment a new product tis time round.

The finished product is great. So refreshing. I love thick coffee, adding coconut milk enhance the taste & adds a special fragrance to it. Oh, wat a great drink for a tea-break.

Ingredients;
1 Kopi O teabag
Boiling water
50ml coconut cream
20ml water
Sugar to taste
Ice cubes

Method;
-Prepare coconut mixture by adding 20ml water to coconut cream.
-Bring to boil, let cool.
-Prepare 1/2 glass of thick kopi o by adding water, sugar to kopi o teabag.
-Cover, let it stand for 5mins.
-Add ice cubes to chill.
-Assembling iced coconut latte by pouring coconut mixture over kopi o & serve with ice-cubes.
-Enjoy!

Dinner @ Pinsi Kitchen

As always, its a normal procedure to reward us to a feast after the 7th month celebration during the hungry ghost festival. Normally, tis kinda dinner gotto be held during the lunar 7th month. However, we had a change tis year as we all can't compromise on a date during 7th month.

Other big shot like Mr Ang, Wong & George is always bz with other events. Therefore, its been decided to hold the dinner on the 1st wk of lunar august month.

We had dinner at Pinsi Kitchen Pte Ltd, located at Yishun central 1.

While waiting hungrily for the dinner to start......

Seven Varieties Cold Dish Combination~Hmm...i love cold dish.
The 7 varieties are seasoned baby octopus,seasoned jelly fish, fried veggie rolls, fried ebi, fried ngo hiang, scrambled fu-yong egg & stir fry pork sliced.

I had a small bowl of it, serve with green chili pickles is great!

Roasted Suckling Pig~Yuck....the sight of it reminds mi of the smelly pig smell where the meat had :-(

Steamed Promfet In Teochew Style~nothing much i can say bout dish, i dun reali eat steamed fish outside as i'm scare of the fishy smell. I ate a piece of tofu, can smell i stench of fishyness. I bet the fish isn't fresh.

Braised Duck With Chestnut~Tis dish is wonderful. Initially, i tot the chestnut is being braised with duck, not special. However, when the duck was being cut opened, there were hidden treasures in it.
When i took the 1st bite, the duck meat were so tender that it melts in the mouth. The fragrances of the hidden treasure bring out a sweetness of the duck. Oh ya, the treasures were lotus seeds, carrots, chestnuts, button mushrooms, straw mushrooms. So yummy...
Stir Fry Fresh Scallop With Asparagus~I've always love asparagus, but the scallops are so so onli. Not very fresh, but the overall taste is still not bad.

Fried Prawns In Wasabi Cream~Oh tis is fantastic. Crispy fried prawns being coated with a layer of mayonnaise, with a kick of wasabi. I dun take wasabi, but the taste is very mild. Good for mi ya.
Stir Fry Thread Noodles With Assortment~thread noodles??Well, its actually stir fry dry mee sua. Hmm...taste like bee hoon ya. Mr Lee took his 1st bite & said tt tis looks like bee hoon but taste like mee sua. Lucky he hasn't scold mi for bluffing him its mee sua. keke...

Chilled Mango Cream With Sago & Pomelo~I Specially request the restaurant to change our dessert from yam paste with gingko to tis. Something new, otherwise, every dinner we went for the dessert is always yam paste. haha...

Tis is great & refreshing. Lucky i didn't choose the wrong dessert.

Mr Chua concentrating on his singing. He's a great singer, wherever there's ktv, there's mr chua. haha....

Dinner had come to the ending, the few of us r still unwilling to leave the place due to the ktv. Most of the songs which we selected earlier on hasn't been sung, but too bad the restaurant is calling a day. Thiong, in order to satisfy his craze...suggested going to a ktv lounge. I told him another day perhaps as its getting late & many of us gotto work the following day.
We had an enjoyable & the dinner was great. The onli part is that we started singing too late as earlier on, we were so engross in watching HK tv drama. ^_^

Steamed Palm Sugar Cake

Mum was juz mentioning about a kinda of palm sugar steamed cakes where granny used to buy for her during her childhood days. Well, was told that it costs on 20cents for a huge piece.
Hai yo, during those days everything is cheap, but now???
Wat can we buy with a mere 20cents? Erm...maybe a packet of pocket tissue ba. haha...

Since tis kinda steamed cakes brings back fond memories of mum's childhood, i decided to steam a palm sugar cake to surprise mum.

Mum was so touched & delighted when she ate it.YES!!!

Ingredients;
85g palm sugar
30g castor sugar
2 eggs, beaten
1/2 tbsp ovalette
1/2 tsp coffee granules
1/2 tsp unsweetened coco powder
1 tbsp hot water
120g plain flour
1/2 tsp double action baking powder
100ml coconut milk

Method;
-Sift flour & baking powder, set aside for later use.
-Mix palm sugar, castor sugar, eggs, ovalette at high speed for 5 mins.
-Dissolve coffee & coco powder in hot water, add to mixture.
-Fold in flour mixture, alternate with coconut milk.
-Pour batter into a 8" square tin & steam on high heat for 45-50mins.
-When cool, cut & sevre.
-Enjoy!
