Finally i had the time to sit down & post the dishes which i cooked over the weekends. Been so bz recently. Hey public holiday may seem a gd thing, but oso means more programs for mi ya.
Ever since learning indian style chicken curry fm Aunt Sarah during our floor party last month, i been wanting to give it a try.Juz nice tt aunt sarah gave mi some curry paste which she grind herself for herself on sunday morning. Thus, decided to cook surry for sunday's dinner.
Dad simply love it, he's full of praises. As for mi, basically wat i like bout indian curry is that its thick, not too oily & its full of fragrances.
Ingredients;
1 chicken, chopped
1 star anis
1 cinnamon stick
Some mixed spices(cardamons, cloves etc...)
1 tsp fennel seeds
2 tbsp onion paste
1/2 tbsp ginger paste
1/2 tbsp garlic paste
1 bowl curry paste (tumeric, chili, meat curry)
1 onion, cut into small pieces
4 medium potatoes, wedged
2 tomatoes, wedged
Curry leaves
Water
1 1/2 tsp salt
3/4 tsp sugar
4 tsp coconut milk(optional)
2 tbsp oil
Method;
-Fry spices in oil till it spaks, add fennel seeds.
-Add onion paste, ginger paste & garlic paste.
-Fry till dry, add onions. Continue to fry till fragrant.
-Stir in curry paste & 1/2 portion of curry leaves, mix well.
-Add chicken, fry for about 5 mins.
-Add enough water to cover chicken.
-Add potatoes, bring to boil, cover & simmer for 10 mins.
-Add tomatoes & seasonings, continue to boil for another 5 mins.
-Stir in coconut milk & remaining curry leaves, serve.
-Enjoy!
Serve with plain rice. Hmm...yummy, so delicious!
