海鲜盒子

Mum got hooked with the deep fried tau kee which i prepared for our steamboat dinner during Chinese New Year. The best thing is that she's been craving until now. I replenished my tau kee and decided to cook something similar but with a twist.

Ingredients;
Tau kee sheets
Oil for shallow frying
Roasted sesame seeds
Scallions, chopped

Fillings;
Medium prawns, minced
Crabstick, chopped
Salt
Light soy sauce
Cornflour
Pepper
Sesame oil

Sauce;
1 clove garlic, minced
Minced meat
Spicy shrimp sambal (hei bee hiam)
Hoisin sauce
Dark soy sauce
Oyster sauce
Sugar
Water

Method;
-Prepare fillings by mixing the ingredients together.
-Spread onto tau kee sheets, sandwiched and cut into 2 squares.
-Shallow fry until golden brown, drained.
-To prepare sauce, fry garlic till fragrant and add minced meat.
-Fry till meat change colour, add spicy shrimp sambal, mix well.
-Add sauce and bring to boil.
-Drizzle over fried tau kee, sprinkle sesame seeds and scallions and serve.
-Enjoy!

Vegetarian Nuggets

I'm gonna get recipe for this fantastic vegetarian nuggets from Aunty Sarah. I made her some black glutinous rice dessert and she cook this treats specially for us.
So sweet of her, but this is the 1st time I've come across vegetarian nuggets and i fell in love with it.
Simply fantastic....
Loads of chilies, capsicums, mushrooms being coated with cornmeal and deep fried till crispy and brown. Goes well with dips!

Pulut Hitam Dessert

Pulut Hitam is also known as black glutinous rice porridge. It is a common and delicious dessert found in Singapore. Pulut Hitam is its' malay name.
I dun usually fancy this dessert and the last time i had it was more than 5 years ago. Since i had the crave and was tempted by Tabby last evening, I decided to cook this dessert for my family today as i've bought some black glutinous from the market near my office last Thursday.

Ingredients;
Black glutinous rice
Water
Pandan leaves, knotted
Rock sugar
Brown sugar
Boilng water
Dried longans
Coconut milk

Method;
-Wash & soak glutinous rice for at least 3 hours, drained.
-Add pandan leaves to glutinous rice, pour boiling water over.
-Bring to full boiling & simmer till rice grains breaks.
-Add sugar and dried longans.
-Continue to boil for another 1/2 hr till dessert thickens.
-Serve with coconut milk.
-Enjoy!

*I double boiled my dessert in a rice cooker. By doing so ensures that the rice grains breaks easily and the dessert would not dry up so quickly.

Adding longans to the glutinous rice dessert enhanced the overall taste. Delicious!

Dinner @ Bento Box, JB

Nothing to do on a weekend?! As usual, we 'whack' areas in JB. Go in search for delicious yummy food. Hungry after novena in the nearby church? We decided to either try the new menu from station 1 or any japanese food around the area. I suggested going to Bento Box, a homely restaurant which serve fusion food.

Stuffed Mushroom

Grandma gave our family a huge packet of small mushrooms, unlike those medium to big ones which usually bought and i was thinking the size is just nice for stuffed mushroom. 1stly, easier to bloom when soaked in hot water, 2ndly they tends to cook faster.

Ingredients;
8 dried mushrooms
Cornflour
Bunch of xiao bai chye, blanched and drained

Fillings;
100g minced pork
1 large prawn,minced
1 water chestnut, chopped
1/2 seafood stick, chopped
Light soy sauce
Sesame oil
Pinch of salt

Sauce;
Oyster sauce
Water
Mushroom stock
Sugar
Thickening agent

Method;
-Wash and rinse mushrooms, soak in hot water till bloomed. Drained and cut away stalk.
-Mix all the ingredients for fillings together, set aside in fridge for at least an hour.
-Sprinkle some cornflour onto inner part of mushroom, stuffed with fillings.
-Steam on high heat for 5-6mins.
-Place over blanched veggie.
-Bring sauce ingredients to boil, drizzle over mushroom & serve.
-Enjoy!

酸菜鱼

The roasted pork with mustard toppings can be serve over any style of fish. However i would find steamed, baked or fried fish the best.

Ingredients;
Any fish, steamed or fried
Some roasted pork strips
1 bunch of sour mustard veggie, shred
1 clove garlic, chopped
2 chili padi, chopped
Water
Oyster sauce
Sugar

Method;
-Fry roasted pork till crispy, set aside for later use.
-Fry garlic & chili till fragrant, add mustard and fry for another 2 mins.
-Add stock and seasonings, bring to full boil.
-Simmer & toss in roasted meat.
-Serve over fish.
-Enjoy!

烧肉白菜焖发菜丝

Mum set aside a bunch of 发菜after offering to Tian Gong on the 9th day of the lunar new year and it had been sitting at a corner of the shelf since. Hence, i decided to whip up a dish with it.
Ingredients;
Wong bok, shred
Roasted pork, cut into strips
1 bunch 发菜, wash & drained
A handful of dried shrimp, wash & drained
1 clove garlic, minced
Oil for frying
Stock
Pinch of salt
Oyster sauce

Method;
-Fry roasted pork strips till fragrant, set aside for later use.
-Fry garlic in hot till fragrant, stir in dried shrimp, continue to fry for a min.
-Add wong bok and fry till soften, add stock, seasoning & 发菜.
-When gravy thickens, toss in roasted pork & serve.
-Enjoy!

Chilled Out @ Eat Zone ~JB

We are back! To Eat Zone again. Yes, and it is again. Y? Cuz we simply love the ambience and we can spend the whole afternoon here.
What we normally does is that we would go in during tea-break, enjoy our coffee and cake while reading magazines. Settle our dinner at the place as well.

Arnold's Fried Chicken

Has anyone heard od Arnold's Chicken? Well, i did & it was like 10 years ago where i ate my very lst piece of arnold's fried chicken.
When i was working part time during my sch days, Aunty Irene been telling us how delicious and yummy were the chicken from Arnold's. And 1 day, in order to celebrate my b-day, my lovely colleagues gave mi a treat to Arnold's Chicken at City Plaza.

Seems like that was the only outlet at that time & 10 years after, i tried the chicken again at the same outlet and original taste is still there.

Verdict: no wonder it is so popular! Full of flavours yet not too salty on the outside, tender & moist, the juice are being locked underneath the crispy skin. Yummy...although it is not like the crispy version of kfc chicken, Arnold's also has their own crowd of supporters.

干炒油面便当

Cooked a simple fried noodle bento for lunch today. Seems like my recent craze is bring bento to work. Hmm... better think of a few other variety to cater for the next few bentos.

Ingredients;
2 pc dried 油面, soaked and drained
1 handful sweet pea, cut into strips
2 baby carrot, cut into sticks
1 crabstick, diced
Some lean meat, cut into strips
Stock
Pinch of salt
1 tsp light soy sauce
1 tsp oyster sauce
1 tsp dark soy sauce
1 glove garlic, minced
Oil for frying

Method;
-Fry garlic in oil till fragrant, add in carrot and fry for a min.
-Toss in veggie, meat & crabstick.
-Add noodles and fry for a min.
Add stock & seasoning, bring to full boil.
-When gravy thickens, drizzle in dark soy sauce, mix well.
-Sprinkle roasted sesame seeds over & serve.
-Enjoy!

Cheezy Mayo Prawn Bites ~For 元宵节Celebration

元宵节快乐! It is the last day of Chinese New Year and after today, there wont be anymore new year mood. haha... In a way good as 15 days of celebration is way too long for me. Many people feast on this day, especially the teochews. While the hokkiens will eat 汤圆 to symbolize 团圆. Since it is a weekday and i have to be at work, mum fried some prawn fritters and i used portion of it to make a cheezy mayo prawn bites.

Method;
3 large prawn fritters, cut into bite sizes
2 tsp fat free mayo
1 tsp condensed milk
Juice of 1 lime
1/2 tsp salad dressing
1/2 slice of reduced fat cheese
Roasted sesame seeds

Method;
-Melt cheese in a metal bowl over pot of hot water
-Mix in mayo, milk, salad dressing and lime juice
-Mix well, toss in prawn bites
-Sprinkle roasted sesame seeds over and serve
-Enjoy!

Part 2 of our party~ have a drink with snacks! Enjoying my favourite bacardi with some peanut crackers. Shiok ar....

Late Nite Dinner In JB

Despite attending seminars, running errands and being kept bz the whole day, we still have to visit JB to help Aunty Margaret run some errands. After doing what we are supposed to, We decided to settle down for dinner b4 returning to Singapore. I reali need a place with cosy chairs, nice ambience. With a tired mind and body, i need food & rest! haha...

Something new for me to try!
Maryland's chicken ~breaded chicken serve with frieds, mini salad, corn on cob, sausage and fried banana. What makes me select this dish from the menu is due to the banana fritters. In my mind I was thinking: huh, savoury western meal to go with sweet 'goreng pisang'??? verdict: Yummy~licious!

Cheesy Baked Fish~ I would advise that only cheese lover can take the risk to order this. Y? cuz the cheese flavoer is too strong that it cover the smell and flavour of the fish.
Even the cheese lover, Tabby surrender! haha...

We ordered an additional pipping hot fries to go with our gossips. haha... enjoyable but by time we reaches Singapore is already pass 12 midnight. Gosh, still have to work tomorrow. Guess i have to doubled up my dosage of caffeine for the next day!

糯米饭便当

Knowing that Tabby will be here for Dinner, mum cooked her favourite 糯米饭 and since mum cooked so much, i set aside a portion as my bento lunch for the next day.

Since it is glutinous rice, a chinese tea is needed to serve with the meal in order to cleanse the fats from my body, not forgetting i need to digest as well.

When comes to serving glutinous rice, it is my style to serve with lots of garnishes like roasted sesame seeds, fried shallots, scallions, chili paste etc...
