Baked Authum Rolls

Hey readers,

I believe all of u know or ate spring rolls b4. But have y guys heard of authum rolls? Oh well, after spring will be authum and Tab and i come up with this title

Easy and simple steps for the authum rolls. All u need are;
Popiah Skin
Curry Chicken Fillings (refer to my previous posting for authum puffs)
Beaten egg

Method;
-Wrap authum roll, seal edge with beateb eggs
-Bake at 220 degree celcius for 20 mins or till golden brown.
-Enjoy this authum season!


Authum Puff

Hello Everyone,

Have the urge to do some baking last nite & i did. Came across this method of doing the puff on other website & i decided to modify it. And here comes my Baked Authum Puffs.



Its rather easy to do. All u needs is to prepare the fillings, be it for curry puffs or for chicken pies.

All u needs,

1 Packet of frozen roti prata (any brand will do)

Egg wash

Black or White toasted sesame seeds

1 onion (sliced)

2 medium potatoes (cubed)

2 chicken breasts (diced)

1 tbsp cooking oil for frying

Some seasonings

1/2 Packet of earthen pot curry chicken powder

Preparations;

Prepare fillings.

As for wrapping, divide each pc of roti prata into 3 portions.

Add fillings, seal edge with a fork.

Glaze with egg wash,sprinkle some sesame seeds on the top

Bake at 220 degreee celcius in preheated oven for 20mins for till golden brown.

Note:

1) As the roti prata turn soft easily, remove from fridge only when needed.

2) Keep the ready wrapped authum puffs in the fridge, prevent it from turning soft

3) Remove frozen puffs from fridge,glazed with egg wash & bake.

Tuna Mayo with Crackers

Hi Everyone,

Homemade tuna mayo is healthier & contain less fats & calories as compared to those ready prepared tuno mayo or those flavoured tuna.

Ingredients;
1 can tuna chuncks in water
2 tbsp low fat mayonnaise
3 water chestnuts, chopped
3 rings of canned pineapple, chopped
Dashes of pepper
Some japanese mayo

Method;
-Drained tuna & flake with a fork
-Season with pepper
-Add mayo and chopped ingredients.
-Mix well and serve with bread or crackers.
-Enjoy!

Honey Oat Cookies

Oats are the "in" food now. In order to keep up with the trend, i baked some Honey Oat Cookies.


Honey Oat Cookies

Ingredients;

250g plain flour

50g instant oats

120g salted butter

80g creamy peanut bueer

1 tsp honey

2 tbsp UHT milk

Egg wash

Some instant oats for toppings

Method;

-Beat butter,peanut butter,honey & sugar till light & fluffy

-Fold in flour,oats & milk

-Roll into tiny balls, flatten

-Glaze with egg wash,sprinkle with some instant oats as deco

-Bake at 180 degree celcius for 20mins or till golden brown

-Enjoy!

Cinnamon Sweet Cake

As usual, Its my baking day today. Mum requested for a sweet butter cake, therefore i decided to bake her a Cinnamon Sweet Cake.

This is my family all time favourite. Yum yum...
A whole cinnamon sweet cake that was hot from the oven.

Ingredients;

220g cake flour

200g caster sugar

150g soft butter

2 eggs

1tsp vanilla essence

240ml butter milk

1tsp baking powder

1tsp baking soda

Toppings;

50g coffee sugar

50g castor sugar

1tsp ground cinnamon

Some roasted almond flakes

*Mix the sugar with ground cinnamon except almond flakes

Method;

Cream fats & sugar till creamy

Add eggs & vanilla essence

Fold in the flour mixture, alternate with butter milk

Pour half the batter into a 8 inch cake tin, sprinkle with cinnamon sugar

Pour in the remaining batter,sprinkle with almond flakes & cinnamon sugar

Bake at 170 degree celcius for 40-45 mins for until cooked

Serve warm with a cup of freshly brewed coffee. Yummy!

Henghua Bee Hoon

Hello everyone,
Been pestering my dad to cook my favourite Fried Henghua Bee Hoon for a long long time. And yesterday, my wish was finally granted.

Oh ya, we are a henghua family, or we normally eat this dish on chinese new year. Other than this, another very popular henghua dish is the henghua mee sua.
Our verion of fried henghua bee hoon is slightly different from the original version. Ours is without clams & consist mostly veggie.

Special garnishes;

Deep fried sweet dau kee strips - A muz haf when eating the henghua bee hoon.

Fried Orr Lai - its sort of like dried chinese seaweed,shredded with sands removed.

Bedok Chwee Kueh

Hi All,
Had a crave & purposely went to bedok hawker center to purchase our family all time favourite~~~Chwee Kueh

Yeah...i fell in love with their chwee kueh the very 1st time i ate them.


Its unlike those chwee kueh where i normally buys fm the coffeeshop near my house. This bedok chwee kueh doen't have a very strong flour taste, the texture is very light & springy.

And it goes perfectly well with their signature chai poi & sambal chilli with hei bee hiam.

1 word to describe---Fantastic

Baked Char Siew Pau

Hello.... I saw Baked Char Siew Pau on a blog few days ago, decided to give it a try. But feeling lazy, i used frozen char siew pau purchased from supermart rather than the ones i made.

All the preparations that i do is; Preheat oven to 220 degree celcius Glaze frozen pau with egg wash Sprinkle top with sesame seeds Bake for 15 mins till golden brown

It muz be eaten while hot so that it can maintain the crispyness on the outside, soft & yummy inside. It taste like baked siew pau, but of the fresh & soft version. And sort of like deep fried mantou but not that oily as these are being baked.

Some kind soul purposely went to Dino Cafe & bought us some curry puffs for our snacks.Great!


Its puff pastry on the outer layer, wrapped with curry chicken & potatoes. Its not too spicy, juz nice for a non-chilli eater like me

Authum Royal Grapes

Chance upon my favourite authum royal grapes when i was at the supermarket yesterday.


This black grapes is different from the normal red globe grapes that fairprice sells. Its seedless,crunchy & sweet, even if u keep in the fridge for up to three days!

Assorted Cookies

Greetings to all!
My neighbour,Aunty Sarah is a great cook. She cookes fantastic indian crusine. Each year during deepavali, she would invite us to her place for a feast. Other than that, the snacks & cookies that she prepares are yummy!

She baked some delicious cookies for my family the other day.

My favourite is the chocolate covered cookies with chopped almonds.

Steamed Chicken

Public holidays are hard to come by especially for working adults like me. Well, it was vesak day yesterday, in fact a long weekend but i didnt plan any holiday trips to make full use of this day.

Being no prog for the few days, i can onli stay at home,create different kinda dishes. I prepared steamed chicken for our lunch.

After the normal procedure of steaming, soaking in icy cold water, it will be better that u rubbed the chicken with a pinch of fine salt & sesame oil.

By doing so, it adds on an additional savoury fragrant to the chicken. Upon serving, other than giving it a final touch of garnish, a die die muz have is the sauce.
Since young, my mum always prepare a spicy sweet & sour sauce for us to go with steam chicken. Try it guys, it reali goes well with steam chicken.

All u need is;
1 chilli padi
1 clove garlic
1 lime
1 tsp fine sugar
1/2 tsp dark soya sauce

Preparations;
-Chopped chilli padi & garlic
-Squeezed in lime, stir in sugar until dissolved
-Add in dark soya sauce
-Serve & e
njoy!

Mini Sambal Prawn Rolls

Hello....

Since its a long weekend, & there were some hei bi hiam lying on the table so i decided to wrap some Mini Sambal Prawn Rolls for my brothers.

Hi Everyone,
Its a long weekend. I had free time & i decided to cook wanton mee for my family.

This wasn't my 1st attempt, in fact i cooked this dish many times before. Nice presentation ya!

Simply;

-Prepare the garnishes individually,

-Mixed boiled noodles with seasonings & serve with garnishes ingredients.

-Enjoy!I oso wrap some fried wanton to go along with the wanton mee. somehow or rather i feel that wanton mee is best eaten when u can get to savour 2 different types of wanton.

Evergreen Shrimp Salad

Hi Everyone,
I made my favourite salad for my family last evening;

Very simple ingredients needed;
Iceberg lettuce

Mini carrots

Hard boil eggs (diced)

Boiled prawns

Cherry tomatoes

Low fat casar salad cream

Japanese mayo

Easy way of doing as well;

-Cut the cherry tomatoes & prawns into half, lay serveral leaves of bitezise iceberg lettuce on serving plate

-Lay the prawns,carrot sticks,cherry tomatoes,hard boil egg on top of the lettuce.

-Drizzle cesar salad cream over,finished with japanese mayo.

-Enjoy it chill

Various Tea Recipes using Chinese Tea Leaves

Hellooo...

The following is a list of teas & their health effects;

*SUGAR TEA -made by green tea & sugar, this can harmonize the stomach, replenish the Qi (vital energy) & aids in irregular menses.

*VINEGAR TEA -use tea powder to prepare tea, add in little bit of rice vinegar to taste.Drink it twice a day to relieve chest discomfort & depression.

*LOTUS LEAF TEA -prepare by adding green tea powder & dried lotus leaf into hot water, boils for 5 minutes. Drink it to prevent ance,aids in weight loss & improve skin condition.

*HAW TEA -Wash dried haw flakes in water, add into hot boiling water for 5 mins, add green tea or long jin tea leaves. This helps to lower cholesterol,blood pressure & risk of heart disease. Drink it daily to aids in weight loss. People with gastric problems should avoid.

*WOLFBERRY TEA -add a tbsp of wolfberry & 12 red dates into boiling water, add in red tea. This helps to improve complexion, have rosy cheeks.

*PERSIMMON TEA- mash dried persimmon, boil with tea & rock sugar. Its smoothes cough, dissolve phlegm.

*PLUM TEA –add 5 plum into 500ml boiling water,add green tea. Stir in honey b4 serve. This clear heatiness, relieve stress, smoothes the throat.

山楂乌梅茶

The trend of drinking 山楂乌梅茶 doesn't onli occur at home but in my office as well. Due to the weather recently, everyone wasn't feeling good, throats tend to dry easily.

Therefore, its best to drink 山楂乌梅茶 with ice! yummy, its soothing for the throat, other that that, it aids in digestion. Do you noe that 山楂 helps in sliming as well? But pple with gastric problems are advised not to drink on an empty stomach.


These are the feel ingredients needed to brew this tea. If u add a small pc of rock honey, u can choose to drizzle in some honey b4 serving.
Can either drink it warm or cold! Normally i will boil & leave it in the fridge :-)

Steamed Digestive Layer Cake

Was full of energy last evening after i knocked off from work. And so i decided to make a steam cake.

Ingredients:

200g digestive biscuits (crushed)

100g marie biscuits (crushed)

1 tsp double acting baking powder

240g caster sugar

240ml UHT milk

4 eggs

1/2 tsp vanilla essence

150g melted butter or corn oil

1 tbsp coco powder

Method:

-Lined a 10 inch cake tin

-Mix crushed biscuits together, add baking powder

-Beat 4 eggs with sugar, add in vanilla & milk

-Fold in crushed biscuits & melted butter

-Scoop out 1/3 portion of the batter, mix well with coco powder

-Pour half of the white batter into a 10 inch cake tin, steamed for 15 mins

-Pour in the 2nd layer with coco batter,continue to steam for another 15 mins

-Pour in the last layer of white batter,steamed for the last 15mins

-Cool on rack.

-Enjoy!

ABC Soup with Organic Maize

Hihi,
Its been a long wait for the market near my house to sell my favourite organic maize. They used to sell them every sunday,but went MIA for a long time. And here they come again.

These organic maize costs dearer that the normal corn cob those that u can get in supermart. They costs $1.80 each,about twice the price of normal corn.

These organic maize are slightly different, there are 2 different colour of grains in each cob. The taste is sweeter & crunchier than the normal wan. Well, somohow or rather i tends to compare the corns. keke....

Normally my family would steamed & eat it plain. However, after having the crave for ABC Soup for a long time, i requested my mum to prepare this soup with my favourite organic maize. Yummy...... It taste wonderful,especially on a cold or rainy day. :-)

Coffee Pau for breakfast

Hi all,
Never eaten a coffee pau b4?
Yup, that was wat ran through my mind when i 1st saw this.It was reali rare,as sweet pau like the red bean paste or lotus paste are wat we normally see.

My dad bought some coffee pau for our breakfast.

when the pau was being steamed in the steamer, u can smell a very fragrant coffee smell, and when it was out, u simply can't resist the temptation to give it a bite.
The texture of the pau skin is very light & springy, its not too sweet. The filling is made of red bean paste.

Its best eaten when served with a cup of unsweetened coffee during tea break. Yum Yum!

Teriyaki Chicken

I had crave for terriyaki chicken cuz i wanted to try out the new japan teriyaki sauce which my brother bought.
So i cooked the followings;

Teriyaki Chicken Chop with Onions (the kind of boneless chicken lazy pple would prefer)
Both were cooked using different method & both were yummy~licious! hah...
