BBQ Mamee Potato Skewers

Mamee noodle snack, 1 of my favourite childhood snacks. Still remembered when i was in primary school, 1 of my classmates told mi that tidbits' seasonings were great and taste wonderful. And tis funny classmate of mine would always mix seasoning with water and drink. I was like "OMG r u out of ur mind?"
Think i'm slightly cleverer, i will always sprinkle them over hot crispy french fries or potato wedges. Tis time round, i use it on roasted potato skewers instead.

Ingredients;
1 medium potato
Mamee seasoning
Oil
Satay sticks


Method;
-Soak satay sticks in water for 1/2 an hour
-Slice potato thinly
-Drizzle oil and mamee seasoning over potato slices
-Thread onto satay stick
-Bake at 200 degree celcius till crispy
-Sprinkle more mamee seasoning over potato skewers
-Enjoy!

Enhanced Version Of Baked Authum Puffs

I been having authum puff crave for almost 2 weeks and finally i have some free time to do baking today. I decided to satisfy my crave and oso do an "enhanced version" by adding more ingredients and spices to the fillings.

Ingredients;
Frozen prata
Chicken curry fillings
Hard-boiled eggs, but into 8 portion
Roasted white sesame seeds

Method;

-Cut prata into ha;f, to form 2 semi-circle.
-Scoop 1 tbsp ful of fillings onto 1 side of prata, add i portion of egg.
-Foldover, press sides with a fork to seal.
-Prick holes on top of prata.
-Brush with egg wash, sprinkle sesame seeds over.
-Bake at 220 degree celcius for 25 mins or till golden brown.
-Enjoy!

Ingredients for the fillings;
2 potatoes, diced and steamed

1 chicken drumstick, diced
3 tsp curry powder
1 large onion, diced
1/2 tsp salt
1/2 tsp fennel seeds
Some curry leaves, shredded
1 tbsp (soup spoon) thick coconut milk
1 tbsp oil

Method;
-Fry fennel seeds in oil till fragrant, toss in onion fry for a min.
-Add chicken and fry till change colour.
-Add curry leaves, potatoes, curry powder and seasoning.
-Fry thoroughly till chicken cooked.
-Stir in coconut milk and fry till mixture slightly dries up.
-Remove and let cool.

Cooked fillings are being set aside to cool slightly b4 wrapping them in to frozen prata.

Wow... looks so delicious! Indeed thet are :-P

Blue Ginger Chicken Stewed

I've adopted a trend of using blue ginger as an ingredient in cooking with meat recently. I simply love the taste and smell of blue ginger cooked with meat. Juz by smelling the blue ginger makes u feel addictive.

Ingredients;
3 chicken drumsticks with thighs, chopped
2 1/2 inch blue ginger
1/2 tbsp sugar
Oil for frying

Sauce;
2 tbsp light soy sauce
1 tbsp thick dark soy sauce
3/4 tsp sugar
1 1/2 tbsp oyster sauce
Water

Method;
-Peel off skin from blue ginger, slice and hit with side of chopper.
-Heat oil in wok, fry ginger for 2 mins, add sugar and continue to fry over low heat for 5 mins.
-Add chicken, fry until chicken turn colur.
-Add some water and cover with lid to simmer for 5 mins.
-Pour in sauce, add more water until bout to cover chicken.
-Fry well and cover with lid, simmer until gravy dries up and chicken cooked.
-Enjoy!

Judging by the look of tis dish, guess i'll helping myself with more rice for tonite's dinner.

Bandung Jelly Pudding

There's a bandung craze in my family and since its still on going, i decided to come up with a chilled dessert for Daddy and Adam as they both are the super hot craze.

Ingredients;
5g agar agar strips, soaked and drained
450ml hot waterr
2 tbsp sugar
Some rose syrup
150ml evapourated milk

Method;
-Bring hot water to boil, dissolve agar agar strip in it.
-Add sugar and bring to full boil.
-Off heat and add rose syrup.
-Scoop some rose syrup into jelly mould and let it set slightly.
-Add evapourated milk to mixture and stir well.
-Pour bandung mixture onto rose syrup jelly.
-Set in fridge to chill.
-Remove from mould and serve.
-Enjoy!

Mum's Chicken Curry & Ekina's Baked Rice

Who on earth would ever eat chicken curry baked rice for supper? He or she's gonna be a special breed. Oh well, i happened to come across 1 in my family. Adam simply can't go to sleep due to the small bowl of left over chicken curry from dinner.
Mum cooked some chicken curry for dinner and since there were some leftovers, Adam been pacing up and down, to & fro kitchen to peep at the small bowl.

And when it's near to midnite he suddenly popped a question: Jie, do u think u can whipped up a special supper for mi?
I was like: Dun tell mi u wanna eat baked rice hor?
Adam says: So clever, reali great minds think alike!
Ekina says: Alrite den, but u'r gonna be the 1st weirdo who eat chicken curry baked rice for supper. haha...
After baking the rice, i topped with some crackers and corriander leaves, doesn't the presentation resembles those that are being served in restaurants? :-P

I'm tempted to eat a mouthful! Dear Adam, can jie jie try? keke....

Late Nite Supper @ Pohpoi

Aunty Margaret is full of praises for the restaurant pohpai in jb. Initially when i heard of the name i tot it is "popeye the sailor" cuz we had a popeye chicken in Singapore. She said, yes, its the sailor. However, when we reached the restaurant, juz by looking at the singboard i feel like laughing.
The picture seems more like an oem popeye ba. Oh yes, tis pohpoi and the original popeye has 1 thing in common~the cigar. keke...

Tis is the place, i managed to haf a quick snap while tabby is parking the car.

Our starter~ House salad

Potato salad. Oh well, seems like the potato salad was being served with the house salad which we had earlier on. haha.... think its too much salad for us.

Here comes the main course. I had a Sizzling tender chicken. Wow... looks yummy!

Tab had a Sirlon steak.

Mel had a Grilled salmon.

We had a fantastic dinner and the place has a nice ambience, food is delicious, value for money as well. Yeah... we would definately come back for more the next time round.

Bandung Drink

What is bandung drink? It's actually milky rose syrup drink and it's very popular here in Singapore especially with the Malays or Indian races. Whenever dining at malay or indian hawkers, you wouldn't missed a chance to see the shocking pink beverage at the drink counter.
I bought a big bottle of rose syrup when i was in JB the other day, come to think of it, the last time where a rose syrup was seen in my house was like when Adam was still in primary school. haha....
Ingredients;
Rose syrup
Cold water
Evapourated milk
Ice cubes

Method,
-Mix rose syrup with cold water, add ice cubes.
-Thicken the drink with evapourated milk.
-Enjoy!
Ladies and gentlemen, introducing the home-made simple and easy to prepare~chilled bandung drink. :-)

Teh C Pudding

Transforming my favourite drink into a dessert?! Sounds fresh and interesting rite? Yeah... I was in the craze of making all sorts of pudding recently and Adam was amazed with how great the teh c pudding taste like. Initially when I mentioned the thought of preparing tis dessert, his immediate response was "R u serious?"

Ingredients;
7g agar agar strips, soaked and drained
550ml hot waterr
4 tbsp sugar
2 red tea teabags
Some grass jelly
150ml evapourated milk

Method;
-Bring hot water to boil, dissolve agar agar strip in it.
-Add sugar and teabag into mixture and bring to full boil.
-Off heat and add evapourated milk.
-Place grass jelly strips into jelly mould or pudding cups.
-Pour mixture into cups and let it cool.
-Set in fridge to chill.
-Remove from mould and serve.
-Enjoy!
Serve with some evapourated milk and mint leaf. Wow... goodness gracious, its so yummy~licious.
