Baby Aasparagus With Pork Slices

I'm not a fan of black pepper sauce and seems like most of the food outlet here in Singapore likes to sell asparagus and meat stir fry with black pepper sauce. Argh... why can I find 1 without black pepper sauce? In order to satisfy my crave, I decided to cook this dish myself, and use baby asparagus instead.

It's really easy and simple to cook, which is why i like to cook stir fry food. lolz...

Ingredients,
Lean meat , thinly sliced
Baby asparagus, cut into sections
Oil for frying
Roasted white sesames seeds

Marinate;
Baking soda
Pinch of salt
Dark soy sauce

Seasonings;
2 tbsp dark soy sauce
1/2 tbsp tomato ketchup
1 tsp brown sugar
Some water

Method;
Marinade meat slices and set aside for at least 1/2 hr
Blanched asparagus in water with salt and oil, drained and soak in ice
Heat wok, add oil and fry meat till change colour.
Pour in sauce and when it's about to dry, toss in asparagus
Sprinkle sesame seeds and serve.
Enjoy!

Cheezy Potato Chips Chicken Pops

What to do with so leftovers potato chips where nobody wanna eat? Which is y to me, choosing the flavours which majority likes to eat would be best. Now den i realized that no one in my family likes / eat cheese flavour chips. I bought a canister of lay's cheese flavour potato chips and it's been sitting on the table for almost 1 month since it's 'opening'. If dad and brothers like it, it wouldn't even last for a week. :-P

Creative ways of mixing tidbits with food or create new dishes sure works. Since we all love fried stuff, here's my cheezy potato chips chicken pops for dinner.

Ingredients;
Minced chicken  (boneless chicken thighs n chicken breast meat, ratio 3:1) 
Carrots, finely chopped
Onions, finely chopped
1 baby potato, diced n steamed
Crushed cheese flavour potato chipes
Shredded cheddar cheese
Oil for deep frying

Marinate;
Light soy sauce
Oyster sauce
Salt n pepper

Method;
- Marinade chicken well, mix in carrots, onions, potatoes n cheddar cheese.
-Wet hands with water, scoop 1 tbsp chicken mixture and shape into oval shape.
-Toss from 1 hand to another hand ~ to firm the texture of the mixture, pops won't split too easily when deep frying.
- Coat pops evenly with crushed chips and set aside. continue until mixture completes.
- Chill in fridge for at least 30 mins to harden.
- Deep fried on low to medium heat till golden brown.
- Drained on kitchen towel to remove excess oil.
- Serve hot. Enjoy!

肉片沙茶酱小炒

I'm back into blogging again... haven had much time writing post snaping on my blog. Oo I've been neglecting my personal blog for soooo long until the other day a kind soul dropped me a message via ekina's paradise to compliment and encourage me in keeping up my good and uique way of writing my blog. 

A sudden thought flash across my mind ~ Hey what have I been doing? Neglecting my blog and become a frequent visitor on facebook? I can't go on like this, i should continue sharing recipes on my "creations" Lolz... 

 Now that i'm back, seems like I will have a long way to 'brush up' mmy blogging skills. Blogger.com seems to change so much, new posting templates, different settings...Gosh, I'm like a newbiz! 

Today, I tried a quick dish but preparations took me quigte awhile as there are so many types of garnishes and condiments. 


Ingredients;
Lean meat slices ( I used pork)
Bell peppers, wedged
Capsicums, wedged
Onions, wedged
Celery, strips
Carrots, sliced
Garlic, minced
Ginger, sliced

Seasonings;
1 tbsp 沙茶酱
!-2 drops dark soy sauce
Brown sugar
Oyster sauce
Pinch of salt
Chili powder
Stock
Oil for frying

Method;
-Heat some oil, fry carrots, celery and onions for 2 mins.
-Add bell peppers and capsicums, fry for another few mins.
-Dish up colourful veggie and set aside.
-Browned some garlic in oil, add pork slices, fry till change colour.
-Add seasonings and 30ml stock.
-Fry for 1 mins / till pork is cook.
-Toss in colourful veggie and serve.
-Enjoy!

风味肉丁

When I've run out of ideas for any meat dish, I would always mix and match a special sauce, taste and add more seasonings, improvising till I get the unique taste of what I like. That's my style...and with the sauce, preferably to toss it with deep fried meat chunks and eat with some crispy garnishes.
Garnishes;
Deep fried shredded popiah skin
Spring onions

Sauce;
Oyster sauce
Tomato ketchup
Sambal
White vinegar
Brown sugar
Stock
-Mix well, bring to boil until thickens.
-Toss with favourite crispy meat and serve with garnishes.
-Enjoy! :-P

Crispy Pork

A dish suddenly flashed across my mind and I remembered I tried that dish in Malaysia many many years ago and it somehow reminds me on the taste.
I decided to recap the taste and venture out the dish on my own and share the dish with my family.
Ingredients A:
Pork Belly, thinly sliced
Cornflour + Rice flour
Oil for deep frying
-Dust flour lightly into pork belly
-Deep fried until crispy and golden brown
-Drained and set aside

Ingredients B:
1 onion, wedged
3 dried chili, cut into sections
Oyster sauce
Hoison sauce
Tomato keychup
Sugar
Dark soy sauce
-Fry onions for 2 mins, add dried chili
-Bring sauce to boil, thicken
-Toss in crispy pork
-Enjoy!

香蔥肉醬芋餃

Hey readers, I'm finally back! Being away for a year isn't that great and so many unpleasant things happened throughout and being away doesn't mean that I'm no longer cooking. My daily or weekend cooking is as usual, it's only that I dun have the time to bake, prepare dessert and spend times hogging onto PC to post photos, write recipes.


Here's what I have for today! I'm not in the mood to cook seafood dish or pure meat dish hence, I came up with the yam dumplings dish.

Ingredients A:
Baby yam, steamed and mashed
-Add pinch of salt, spice powder, pepper and coriander power to taste.
-Sprinkle in 1 tbsp rice flour, plain flour and cornflour.
-Mixed well and shaped into oval shape, deep fried till golden brown.
-Set aside for later use.

Ingredients B:
1 onion,  wedged
1 stalk spring onion, cut into 3 cm length
Minced pork
1 tbsp oil
1 tbsp dark soy sauce
Some stock stock
1/2 tbsp oyster sauce
1/2 tsp spicy chili paste
-Fry minced pork with oil till meat change color.
-Add onions and spring onion, fry for 2 mins.
-Add all the sauces and stock, bring to boil.
-Toss in fried yam balls and serve.
-Enjoy!

Day 2 of CNY and most of the eateries nearby are still close due to the festive period, i decided to prepare some quick and simple dishes for lunch.

大福大贵乌金 ~ pan fried century egg with thai chili sauce.

天赐良鸡~ steamed chicken drum with thigh, serve with salty sesame drizzle.

To most chinses, CNY reunion dinner which falls on the eve of Chinese New Year is meaningful and normally during this day, the dishes will symbolise good luck and wealth. Our familys' dinner menu are as follows;

Baked Char Siew

I'm BACK!!! It's been awhile since i last update my blog and in fact, it's since i last cook or bake so didn't reali have anything to post. But i do have loads and loads of food pics which i gathered during my eating out session with friends.

Using my all time favourite recipe, i tried baking the char siew instead of my normal way of cooking.

Intersection of the char siew with juice running down while i slice it. Lovely!

I love my char siew with medium fats and lean meat. :-)

馬蹄肉餅

I ate something similar yesterday and it was so...... disappointing! Had lunch at a coffeeshop with my colleagues and feels like i was being ripped off.

Nothing special about the dish and in fact, there was not much ingredients except steamed minced pork patties drizzle with a lousy salty gravy( a combination of salt water with dark soy sauce, thicken with cornflour). It's the worst gravy i ever come across in my life and the best thing is, for a pathetic piece of meat patties with another vegetable dish, it cost with $4.20!!! Daylight robbery! If the food is nice, i dun mind paying even it's at a coffeeshop, but it taste unacceptable!

Hence, I decided to cook this dish with my favourite water chestnut to comfort myself and mine taste a million times better than the "Disappointment" (not that i'm proud or over confident of myself, it's juz that anyone who can taste definitely cooks more better!)

Ingredients;
Minced pork (combination of 70% lean meat with 30% fats)
Baking soda
Light Soy sauce
Salt
Sesame oil
Pepper
Water chestnut, chopped

Cornflour

Garnish;
Steamed xiao bai chye

Sauce;
Mushroom broth
Oyster sauce
Sugar
Thickening agent

Method;
-Marinate minced pork with the seasonings, set aside in fridge for 1 hr, stir in cornflour.
-Shaped into patties and steam on medium heat till cook.
-Bring sauce to boil and drizzle over meat patties.
-Garnish and serve.
-Enjoy!

Honey Glazed Winglets

A dish nearly forgotten dish where I haven been cooking for the last 4 years.... A sudden crave for it.... and here it is! Fantastic!

Ingredients;
10 chicken middle wings
1.4 tsp baking soda
2 tbsp light soy sauce
1/2 tsp dark soy sauce
1/2 tbsp brown sugar
3/4 tbsp oyster sauce
1 tsp honey

Method;
-Poke holes onto winglets, marinate for at least 5 hrs.
-Using a non-stick frying pan, grill winglets until brown on both sides.
-Pour in some marinade sauce, cover and on grill over high flame and let winglets absorb all sauce.
-Serve & enjoy!

梅醬排骨王

排骨王 is 1 of my all time favourite dish and i would order it whenever i have my dinner at a zhu chao stall. The usual 排骨王 uses sweet and sour sauce and it's time for a change since i'm the chef of the night.

I chose to use fruity sauce, plum with a twist of lemon! :-0 Am so looking to the finished product.

Ingredients;
Pork chop
Cornflour
Thickening agent
Cherry tomatoes
Chopped coriander
Oil for frying

Marinate;
Bicarbonate soda
Light soy sauce
Salt
Pepper

Sauce;
2 tbsp plum sauce
1 tsp oyster sauce
1 tsp sugar
Lemon juice
Dark soy sauce
Light soy sauce
Water

Method;
-Marinade pork chop for 1 hr, coat with some cornflour.
-Deep fried in oil till 70% cook, drained.
-Bring sauce to boil, return pork chop to wok.
-Toss well, simmer until gravy thickens.
-Garnish and serve.
-Enjoy!

蜜汁排骨

Thinking of a new way to cook pork ribs rather than letting mum cook it the usual way - boil pork rib soup with sea cucumber. After a voting session, decided to cook 蜜汁排骨.

Ingredients;
500g pork ribs
2 tbsp light soy sauce
2 tbsp tomato sauce
1 tbsp brown sugar
1 tbsp hoisin sauce
Baking soda

Water
1 tbsp homemade chili paste
Roasted sesame seeds

Method;
-Combine the 1st 6 ingredients together, marinate for at least 3 hrs.
-Pour marinate into pot with some water, bring to boil.
-Add ribs and, bring to full boil and simmer till meat soften.
-Blast till gravy thickens.
-Sprinkle with sesame seeds and enjoy!

Grilled Taiwanese Sauages With Homemade Chili Glazed

Had a sudden crave for Taiwanese sausages and the last time I had it was super long ago even I can't remember when was that.

Method;
-Cut some slits on the taiwanese sausages.
-Grill on a non-stick frying pan till almost cook.
-Brush with chili oil and glaze with home made chili paste.
-Sprinkle with roasted sesame seeds and enjoy!

Wow... even dad enjoys it.

豆豉回锅肉

Cracking my brain cells to come up with a new way to cook some meat slices and I like it 重口味. Thus, decided to cook the dish the following way.

Oh ya, juz to share something which happened to my taste bud recently. I been having bland food for lunch for almost 2 weeks and by the 9th day, I felt my taste bud not functioning well as I was unable to taste the sweetness or saltiness in the clear broth. Oh, wat's wrong with me? Therefore, I've concluded that 1 shouldn't eat bland food the time, should excites the taste bud once in a while.

Ingredients;
Lean meat slices
2 stalks celery, cut into bite sizes blacked and soak in ice water
Carrot slices
1 stalk spring onion, cut into length of 3cm
Chili padi strips
1 garlic, minced
1 shallot, minced
1/2 tsp hiam see, chopped
Oil for frying

Sauce;
1/2 tsp chili paste
1 tsp light soy sauce
1/3 tsp dark soy sauce
1/4 tsp sugar
Pinch of salt
20ml water

Ingredients;
-Fry garlic & shallots in oil till lightly brown.
-Add hiam see, fry for another min.
-Stir in meat slices, fry till change colour.
-Add the remaining ingredients and sauce.
-Toss well and serve.
-Enjoy!

Stir Fry Chicken With Cashew Nuts

We had a similar chicken dish during our sibling gathering the other day and Jesper simply love the dish. Hence, I decided to cook something similar but a version which is not so wet and here's mine.

Ingredients;
2 chicken thigh, remove bone and cut into bite sizes
1 onion, wedged
1 chili, strips
1 stalk scallion, cut into length of 3cm
Roasted cashew nuts

Marinade;
Light soy sauce
Pepper
Salt
Cornflour

Sauce;
2 tsp chili paste
1 tsp oyster sauce
1-2 drops dark soy sauce
1 tbsp tomato ketchup
1/4 tsp sugar
Water

Method;
-Marinade chicken pieces for an hour, coat with cornflour and deep fried till golden brown. Drained.
-Fry onions, chili and scallion, pour in sauce.
-Bring to boil and toss in fried chicken.
-Coat well and serve.
-Garnish with cashew nuts and coriander.
-Enjoy!

Cigar Meat Sticks

I've some leftovers wanton skins in the fridge and not wanting to waste, decided to make a snack out of them. A) Cheease and bak kwa roll or B) Cigar meat roll. Since Jesper and Adam will be back for dinner, I decided to make make meat rolls for the 2 meat eaters as Jesper is not a fan of cheese. Ok den, shall keep (A) for next time round!

Ingredients;
Minced pork
Minced shrimps
Salt
Light Soy sauce
Sesame oil
Cornflour
Wanton skin
Oil for frying

Method;
-Marinade the 1st 5 ingredients together, set aside in the fridge for at least 3 hrs.
-Add cornflour and mix well.
-Spread a thin layer of mixture onto wanton skin, roll up into a thin roll.
-Continue until wanton skin complete.
-Deep fried in hot oil till crispy golden brown.
-Enjoy!

Crispy Slender Chicken

I once had something similar on cruise during our last incentive trip. What left the deep impression is the single bone chicken wings and it was lovely. I wanted to give the middle wing a 'after weight loss' effect. With its 'slender' figure, i decided to named it crispy slender chicken.

Erm.. i think they look more like chicken fingers. Lolz...

Ingredients;
10 chicken wings, middle portion
1 Sachet seasoning powder ( I used mamee noodles's)
Garnishes
Oil for deep frying

Marinate;
Light soy sauce
Salt
Bicarbonate soda

Coating;
Potato starch
Chicken powder
Rice flour
Seasoning powder

Method;
-Divide middle wing into 1/2 by cutting along the bones.
-Marinate the wings and set aside in fridge for at least 3 hours.
-Mix the flour for coating, toss in chicken sticks and shake off excess flour.
-Deep fried till golden brown, drained.
-Sprinkle some seasoning powder over, garnish and serve.
-Enjoy!

Potato Chicken Stew

Other than the usual stir fry chicken in dark sauce, I decided to add potatoes to the dish. Y? Cuz i feel like eating the potatoes which has fully absorbs the gravy. I bet it is salty and full of chicken flavours. Wow.. i'm craving for it now.

Ingredients;
1/2 chicken, chopped
Ginger slices
Salt
Light soy sauce
2 medium potato, wedged
1 clove garlic, chopped
Oil for frying
Spring onion

Sauce;
Oyster sauce
Light soy sauce
Dark soy sauce
Sugar
Stock

Method;
-Marinate chicken with ginger slices, light soy sauce and salt.
-Cover and keep in fridge for at least 3 hrs.
-Deep fried potato wedges till light browned, drained.
-On a heated wok, fry garlic till fragrant, stir in chicken.
-Fry till chicken change colour.
-Pour in sauce, mix well.
-Cover to simmer till chicken soften.
-Toss in potatoes, mix well & serve when gravy thickens.
-Sprinkle green onions over & Enjoy!
