Egg Mayo Yu Zhar Kway

Dipping yu zhar kway in hot coffee before eating, serve with congee, serve with dessert, eat it on its own are the few local way of eating yu zhar kway and among all these, my favourite is still to go with the coffee. Imagine hot crispy yu zhar kway soak with hot fragrant coffee, pop into the mouth with coffee oozing out yet there's still crunch of the yu zhar kway.... Wow...simply fantastic. :-P
I have another innovative way of eating yu zhar kway. That is with my favourite egg mayo. I've always love egg mayo toast and this time round, instead of on toasted bread, i stuffed them into yu  zhar kway and topped with some shredded lettuce and tomato slices. Delicious!

Lunch On 大年初二

Day 2 of CNY and most of the eateries nearby are still close due to the festive period, i decided to prepare some quick and simple dishes for lunch.

大福大贵乌金 ~ pan fried century egg with thai chili sauce.

天赐良鸡~ steamed chicken drum with thigh, serve with salty sesame drizzle.

Son-in-law Eggs

Mum was given a day off as it was Sunday, her self-declared off day. I love her assam cili paste which i will always request and serve with prawn crackers. Since she was off, i decided to prepare some son-in-law eggs with my style of assam sauce.

Ingredients;
Hard boil eggs
Cornflour
Oil for frying

Sauce;
Shallots
Assam paste
Chili paste
Sugar
Roasted sesame seeds
Scallions

Method;
-Soak assam paste with water and set aside.
-Coat hard boil eggs with cornflour, deep fried till golden brown. Drained.
-Halved the eggs and place onto serving dish.
-Fry shallots in oil till lightly brown.
-Add chili paste, assam juice and sugar.
-Drizzle over eggs, sprinkle with scallions and sesame seeds.
-Enjoy!

Spicy, sour & full of flavour are the main description i can think of at the moment coz i can wait to eat! haha...

Scotched Eggs

I learned this dish during my home economics class in secondary 1 and hasn't been cooking since den. Since I've some quails eggs in the fridge, i decided to cook this dish again. Oh well, the original recipe is rather simple. Juz need to wrap minced pork around the egg, coat with breadcrumbs and deep fried will do.

In order to have a twist, i decided to add shrimps to enhance the sweetness of mixture, water chestnuts to add a crunch to it and do without breadcrumbs, but used cream cracker flakes instead.

Ingredients;
Quails Eggs
Minced pork
Medium shrimps, minced
Water chestnuts, chopped
Salt
Light Soy sauce
Sesame oil
Cornflour
Cream crackers, pound finely

Method;
-Boil quails eggs for 5 mins, remove shell
-Marinade pork, shrimp and water chestnuts with seasoning, set aside in fridge for 3 hrs.
-Add cornflour to the meat mixture, mixed well.
-Lightly coat quails egg with corn flour, wrap meat mixture around it.
-Coat with cream cracker mixture, continue until scotched eggs finishes.
-Deep fried till golden brown.
-Enjoy!

Steamed Eggy Meat Patties

Decided to have steamed dishes to go with my healthy brown rice dinner. Remembered that Mum used to steam meat with egg for Adam was he was young. Thus, decided to copy the idea but used minced pork and serve with a sauce instead.

Ingredients;
Minced pork
Water chestnut, chopped
Chopped scallions
Sesame oil
Light soy sauce
Pinch of salt
Oil for greasing
Egg

Sauce;
1/2 tsp oyster sauce
Stock or water

Method;
-Marinate minced pork with seasoning, add water chestnuts & scallions.
-Place onto a greased plate and steam till 1/2 cooked.
-Break in egg & continue steaming till done.
-Pour stock from patties & add a bit more water.
-Add ouster sauce and bring to boil.
-Drizzle over steamed meat & serve.
-Enjoy!

Fluffy Prawn Omelet With Spicy Hoisin Sauce

Whipped up another quick and easy dish with a twist of mild spiciness. I cook this dish frequently as i find that hoisin sauce goes great with prawn omelet. Being someone who likes spicy food, i decided to add chili paste and hei bee hiam to enhance the taste.

Ingredients;
Eggs 2: 1 Water
1/2 tsp oil
Pinch of salt
1 medium shrimp, diced
1 stalk spring onions, chopped
Oil for frying

Sauce;
1 tsp oyster sauce
2 tsp homemade sambal chili paste
1 tsp spicy shrimp sambal (hei bee hiam)
20ml water
1 tsp hoisin sauce
1/2 tsp sugar
Thickening agent

Method;
-Prepare prawn omelet by mixing egg, water, salt, oil and prawns together.
-Beat till fluffy, fry in a wok and set aside for later use.
-Mix sauce ingredients together, except thickening agent.
-Bring to boil, thicken with thickening agent.
-Drizzle sauce over omelet, garnish with spring onion and serve.
-Enjoy!

花菇芙蓉蛋

Adam is so funny as he asked me did i add abalone to the 芙蓉蛋! Isn't it ridiculous to add abalone into egg and partly becoz he thought it is festive season and this dish seems like there are abalone hidden in the center. haha.. Obviously it is a no! keke...

Ingredients;
2 eggs
1 baby carrot, cut into strips
1dried mushroom, soak and shred
1/2 onion, diced
1 shrimp, diced
1/2 eggshell stock
Pinch of salt
1/4 tsp light soy sauce
Oil for frying

Method;
-Fry onion in oil till fragrant, toss in carrots.
-Fry for 30 seconds and toss in mushroom.
-Fry for another 30 seconds and place mixture in a bowl.
-Add eggs,prawns & seasoning and stock to mixture and mix well.
-Pour mixture into a heated greased wok, mix and scrambled till eggs are cooked.
-Serve and enjoy!
My favourite 花菇 is a perfect match with 芙蓉蛋.

Steamed Tofu Omelette

Quick, easy, healthy, suitable for a diet person. Low fat & low calories as well. Wow... sounds great to eat this dish! Wat's even better, cooking method is simple & quick.

Ingredients:
1/2 block tofu, diced
2 beaten egg
50ml chicken stock
Shallots oil
Blanched xiao bai chye
Fried shallots

Sauce;
Oyster sauce
Sugar
Pinch of salt
Stock
Wolfberries
Thickening

Method;
-Grease a metal plate with shallots oil, lay tofu cubes in it.
-Beat egg with stock, pour over tofu.
-Steam for 7-8 mins on medium heat.
-Scoop omelette with a big ladle or overturn the plate onto a serving dish.
-Bring sauce to boil, drizzle over omelette, serve with garnish & serve.
-Enjoy!

A light healthy dish for someone who's on a diet, juz like me! :-P

Scrambled Omelette With Bittergourd

Bittergourd with egg or egg with bittergourd, there are many ways of cooking & presenting the dish when u play around with different proportion of ingredients.
Whenever mum cook bittergourd with egg, the main ingredients will always be bittergourd. However, tis time round i would prefer egg as the main ingredient.

Ingredients;
1 section bittergourd, bout 4cm height
1 glove garlic, minced
1 small onion
2 medium eggs
Salt
Oil for frying

Method,
-Slice bittergourd thinly, marinate with salt & set aside for 15 mins.
-Rinse off salt from bittergourd. This is done in order to remove some bitterness from the gourd.
-Fry garlic with oil till fragrant, stir in bittergourd and fry for a min.
-Beat eggs with bittergourd & onion, add a pinch of salt.
-Heat oil in wok, pour in egg mixture and let mixture set.
-Flip over and brown the other side.
-Scrambled the omelette & serve.
-Enjoy!

Hmm... though it is bittergourd omelette, it goes great with any rice dish. Delicious!

番茄炒蛋

A nearly forgotton dish until the other day Adam was mentioning. It used to be a craze in our faily, thus i decided to start the craze again. haha.....

Ingredients;
1 large tomato, diced
2 egg, beaten
1 medium onion, diced
1 tbsp stock
Pinch of salt
Oil for frying

Method;

-Fry onion in oil till translucent and fragrant.
-Stir in tomatoes and fry for a min.
-Combine stock, beaten eggs and salt, mix well.
-Stir into onion and tomato mixture and scrambled till done.
-Serve immediately.
-Enjoy!

洋葱蛋

A simple yet delicious home-cooked dish~onion omelette. This quick & easy to prepare dish had been a "regular" dish on family's dinner menu. Today is no exception as I'm craving for onions................. :-)

Ingredients;
1 onion, thinly sliced
1 small red chili, chopped
3 small eggs, beaten
Few dashes of ground white pepper
1 tsp light soy sauce
Pinch of salt
Oil for frying
Method;
-Mix all ingredients together except oil.
-Beat well & fry omelette till done.
-Garnish & serve.
-Enjoy!

Scrambled FuYong Egg With Hoisin Sauce

Fu yong dan can be done in another way other than the normal pan fried omelette style. I love the ingredients of fu yong dan, but the greasy omelette turns mi off. Therefore, i decided to make it into a healthier of scrambled style. Hey, its so delicious & the sauce are easily absorbed.

Ingredients;
2 eggs
1 clove garlic, minced
Some lean meat, strips
2 medium prawns, diced
1/2 onion, sliced
1/2 tsp light soy sauce
50ml water/stock
Oil for frying

Sauce,
1 tsp hoisin sauce
3/4 tsp oyster sauce
1-2 drops dark soy sauce
1/2 tsp sugar
2 tbsp water
Thickening agent

Method;
-Beat eggs with onion, soy sauce & water.
-Fry garlic with 1 tsp oil till fragrant.
-Stir in meat & prawns, fry for a min.
-Pour in egg mixture & scrambled.
-Scoop onto a plate with some lettuce, bring sauce to boil & drizzle over eggs.
-Garnish & serve.
-Enjoy!

Onion Prawn Omelette With Sweet & Sour Sauce

I've always been complaining about the dryness of mum's omelette as she dun usually add stock or oil to make it fluffier.
Overbeating & overcooking of the egg tends to make the texture dry & tough. Therefore, i decided to prepare a sweet & sour sauce to drizzle over omelette for dinner tonite.

Ingredients;
3 medium prawns, cubed
1/2 onion, slice thinly
3 beaten egg
1 tbsp water
1 tsp oil
Pinch of salt
1/2 tsp light soy sauce
Oil for frying

Sauce;
1/2 onion, wedged
1 wedge yellow bell pepper, sliced
1/2 large tomato, wedged thinly
1 stalk green onion, cut into 3 cm section
1 red chili, cut into strips
1 tsp chili paste
2 tbsp tomato ketchup
1 tbsp water
1/2 tsp sugar

Method;
-Mix onion & prawns into beaten egg, stir in salt,light soy sauce, water & oil.
-On a heated wok, lightly grease with oil.
-Fry omelette until done.
-Mix tomato ketchup, sugar & water together, set aside.
-Fry onion in 1 tsp oil till fragrant, stir in bell pepper & chili paste, continue to fry for a min.
-Pour in sauce & the remaining ingredients.
-Let sauce boil & drizzle over omelette.
-Enjoy!

Easy Steamed Egg

The sat last week i'm still enjoying myself in genting. Back fm my holiday since monday & life had resume back to normal fm tues onwards. But i'm still having the holiday feel, being so relax.
Even when comes to cooking, wanna cook some fast & easy dishes. Tis easy steamed egg is sooo.... easy, simple yet delicious.
During my childhood days, mum would steamed eggs with minced pork as a dish for us to go with plain rice. However, i still prefer steamed eggs.

Simply;
-Beat 2 eggs with 50ml chicken stock & 1/2 tsp vegetable oil.
-Steam over medium heat for 10mins.
-Sprinkle chopped spring onions & fried shallots over.
-Enjoy!

Egg Tarts

Its been ages since i last caught up Tabby, i went over to her house for baking yesterday.
We love to discuss recipes,cook & bake together.I baked some egg tarts while she baked some breads during our baking yesterday.

Ingredients;
400g plain flour
250g butter
1 egg
50g custard powder
50g icing sugar
1 tsp vanilla essence

Fillings;
5 large eggs
200g fine sugar
250ml hot water
200ml skimmed milk
1 tbsp evaporated milk
1 tbsp lemon juice

Method;
-Sift custard powder together with flour.
-Add vanilla essence into beaten eggs.
-Using rubbing in method, rubbed butter & flour mixture till it resembles breadcrumbs.
-Add icing sugar & egg mixture till soft dough form.
-Cover up, let dough rest for 30mins.
-Prepare fillings by dissolving sugar in hot water, cooled.
-Whisk eggs, add in lemon juice & evaporated milk.
-Add skimmed milk to sugar water & egg mixture.
-Sieve to remove bubbles.
-Line patty tins, pour fillings till ¾ full.
-Baked at 200ºC for 20mins.
-Enjoy!

Shrimps & Long Beans Omelette

I've been eating this dish since i was a child. But...to prepare this dish, the long beans muz be fresh & firm. Wow...a heart-shaped omelette! yummy....

Ingredients;
A handful of long beans, diced
3 large eggs, beaten
2 large prawns, diced
Dash of salt
Oil for frying

Method;
-Add some oil, fry long beans till 70% cooked.
-Stir in prawns, fry till cooked.
-Add long beans & prawns mixture into beaten eggs.
-Season with salt.
-Heat a non-stick frying pan, pour in egg mixture.
-Prepare an omelette, serve with lettuce.
-Enjoy!

Prawn Omelette with Hoisin Sauce

Ever since the yummy oyster egg with hoisin sauce which i cooked sometimes back, i can't seem to find any fresh mini oysters from local markets.Oh...how i missed uncle david from pengarang.haha.....

Have no fear for i am here! Put on my thinking cap & I can always think of an alternative.
Ah ha.....Replace oysters with other ingredients! Prawns sounds good!?!? Isn't it??? Hmmm.......most importantly, it muz taste good & goes well with omelette & hoisin sauce!

Ingredients;
2 eggs, beaten
1 tbsp stock
3 large prawns, halved
Oil for frying
Spring onions, chopped

Sauce;
1½ tsp hoisin sauce
1 tsp oyster sauce
½ tbsp sugar
2 tbsp water or stock
Cornflour water

Method;
-Stir fry prawns in 1 tsp oil till 90% cooked. Set aside for later use.
-Fry omelette in 1 tbsp hot oil till about to set
-Lay prawns in center of omelette & cook until done.
-Mix all ingredients for sauce together, except cornflour water.
-Bring to boil, slowly stir in thickening agent.
-Drizzle sauce over omelette, sprinkle spring onions over.
-Enjoy while hot.

Tortilla Espanola (Spanish Potato Omelette)

I been wanting to cook spanish potato omelette since long time ago.I can onli prepare this when everyone is around, as i can finish a whole omelette myself.

Imagine the cholestrol in eggs & carbohydrates in the potatoes!!! hmm....eat 1 wedge serve with lots of greens should be fine ba.
Wow....drizzle lemon juice over the hot yummy omelette..... fantastic!


Ingredients;
6 eggs, beaten
1 onion, cut into rings
6 potatoes
2 tomatoes, sliced thickly
Salt & pepper
Dash of Italian Seasoning
Olive oil for frying
Lemon wedges & shredded lettuce

Method;
-Prepare half boiled potatoes, peeled & cut into thick slices bout 1 cm width.
-Fry onion rings with oil till fragrant.
-Season beaten eggs with salt & pepper.
-Pour egg mixture into pan with onion rings,
-Lay potatoes slices onto eggs, followed by tomato slices.
-Cover with a glass lid, cook over very low heat till egg is set.
-Sprinkle Italian seasoning over egg.
-Cut into wedges & serve.

-Enjoy!

Seaweed Egg Roll with Crabmeat Stick

I been wanting to make this egg roll since few wks back, but was too bz to do so. Yeah....lucky my events are over & i finally have the time to cook & blog. haha...

Ingredients;
2 eggs
½ tsp oil
1 tbsp water
2 nori sheets
4 crabmeat stick
1 pkt 西刀鱼 fish paste
1 baby carrot

Method;
-Beat 2 eggs with oil & water.
-Heat a non-stick frying pan & prepare 2 omelette
-Chop carrot finely, mixed well with fish paste.
-Spread fish paste onto omelette, lay nori sheet, followed by crabmeat stick.
-Roll up & steam for 15mins.
-Sliced & serve with thai chili sauce.
-Enjoy!

Fluffy Oyster Egg with Hoisin Sauce

Remember uncle David, the seafood restaurant owner in pengarang? He specially ask his fren who is coming over to singapore to bring back some fresh oysters for us.Wow...so sweet of him rite?
Well, i did something which is some sort like the hotplate oyster eggs which we ate in pengarang.

Yum yum...this is the 1st time i tried cooking this dish. Its so delicious & is reali a surprise to me that it actually turn out so well. The eggs are so light & fluffy & the oyster are not overcooked.Actually oysters can be eaten raw, but for safety reasons, better to cook it to kills some bacterias. keke.....
Ingredients;
2 large eggs, beaten
2 tbsp water
1 tsp oil
1 cup fresh oyster
Oil for frying

Sauce;
¾ tsp hoisin sauce
½ oyster sauce
80ml water
Cornstarch water
½ tbsp sugar
Coriander leaves & spring onions, chopped

Method;
-Beat eggs with 2 tbsp water & 1 tsp oil.
-Heat wok, add little bit of oil, fry oysters for 10 seconds & remove.
-Add about 1 tbsp oil to wok, add in beaten eggs.
-Toss & turn the eggs lightly b4 it starts to set.
-Return oysters to wok, scoop fluffy eggs onto serving plate.
-Prepare sauce by mixing oyster sauce, hoisin sauce, water & sugar.
-Bring to full boil, thicken with cornflour water.
-Drizzle onto oyster egg, garnish with chopped coriander leaves & spring onions.
-Enjoy!
