Scotched Eggs

I learned this dish during my home economics class in secondary 1 and hasn't been cooking since den. Since I've some quails eggs in the fridge, i decided to cook this dish again. Oh well, the original recipe is rather simple. Juz need to wrap minced pork around the egg, coat with breadcrumbs and deep fried will do.

In order to have a twist, i decided to add shrimps to enhance the sweetness of mixture, water chestnuts to add a crunch to it and do without breadcrumbs, but used cream cracker flakes instead.

Ingredients;
Quails Eggs
Minced pork
Medium shrimps, minced
Water chestnuts, chopped
Salt
Light Soy sauce
Sesame oil
Cornflour
Cream crackers, pound finely

Method;
-Boil quails eggs for 5 mins, remove shell
-Marinade pork, shrimp and water chestnuts with seasoning, set aside in fridge for 3 hrs.
-Add cornflour to the meat mixture, mixed well.
-Lightly coat quails egg with corn flour, wrap meat mixture around it.
-Coat with cream cracker mixture, continue until scotched eggs finishes.
-Deep fried till golden brown.
-Enjoy!
