Shrooms & Onions Cheesy Scrambled Eggs On Toast

I'm on leave today, but i still woke up early to prepare breakfast as Jesper needs to go off to work early.
Jesper was delighted as he gets to eat his favourite scrambled eggs for breakfast early this morning. He prefers those that i made as compared to outside cuz i add in other ingredients mah! haha....

Ingredients;
2 eggs, beaten
½ onion, slice thinly
3 button mushroom
2 tbsp skimmed milk
1 slice low fat cheese
½ tbsp soft butter
Toasted bread
Salt & pepper

Method;
-Melt butter in a pan, fry onions till fragrant, add in mushroom fry till cooked.
-Beat eggs with milk, add ½ slice cheese, mushrooms & onions.
-Pour egg mixture into non-stick pan, cook over low heat.
-Keep stirring mixture until set.
-Lay remaining ½ slice cheese on toasted bread, serve scrambled eggs over toast.
-Sprinkle salt & pepper.
-Enjoy!

客家小炒(Spicy Version)

I watched a taiwan cooking show the other time & i was tempted to eat this hakka dish. I bought some celery from the supermarket this morning & i decided to cook this dish with a slight change.

I been having the crave to eat spicy food recently, especially whenever i walked past the kitchen & saw the bottle of rojak flower sambal chili paste on the table,i juz can't seem to eat food without.Its reali sooooo..... tempting.

This dish is reali so lovely & yummy. With a dish like this on tonite's menu, i believe tt all of us will have a 2nd serving for rice. haha....It goes perfectly well with plain rice.Oh gosh...think i'm hungry again :-P


Ingredients;
250g pork belly
½ block bean curd(tau kwa)
1 small dried cuttlefish, soak
4 baby carrots
2 stalk celery
Few stalks spring onions
1 clove garlic, minced
1 red chili
Some roasted sesame seeds
1 tbsp oil
Water for boiling

Sauce;
1 tsp oyster sauce
1 tsp light soy sauce
1½ tsbp rojak flower sambal chili paste
1 tbsp stock
½ tsp sugar

Method;
-Soak cuttlefish in hot water for at least 5 hrs.
-Bring water to boil, add pork belly, cook till its cooked & tender.
-Cut pork belly, tau kwa, celery, carrots, cuttlefish & chili into strips.
-Cut spring onions into length of 3cm section.
-Pan fry tau kwa in 1 tbsp oil till light golden brown, drained.
-Add garlic & fry till fragrant.
-Add carrots, celery & chili, fry for 2mins.
-Add pork belly, tau kwa & cuttlefish, fry for another mins.
-Mix ingredients for sauce together, add in sauce.
-Stir fry for 1 mins, add in spring onions.
-Sprinkle roasted sesame seeds over & serve with plain rice.
-Enjoy!

Dry Mixed Spicy Muar Mee Sua

I on leave Again! Yup & its reali again.Actually i'm clearing last year's leave & i need to clear them by march this year.
Well, not too bad, at least i can stay at home to cook & blog! isn't tt great?Haha....looks like my this mth postings exceeds other months.

Aunt juz came back from Muar(part of malaysia) & she bought us lots of local products. Muar is famous for their otah & mee sua. Since there are plenty of mee sua at home, i decided to cook mee sua soup for mum, a dry mixed version of mee sua for myself. And yes, tt's our lunch!

Ingredients;
1 bundle muar mee sua
1 dried mushroom, soak
30g minced pork
1 tsp light soy sauce
Dash of salt
½ tsp cornflour
Water for boiling
Stock

Dash of sesame oil
1 tsp rojak flower sambal chili paste
Some chopped spring onions & coriander leaves

Method;
-Marinate minced pork with soy sauce, salt & cornflour.
-Squeeze out excess water from mushroom & cut into strips.
-Bring water to boil, add in mee sua & cook for a min, drained.
-Mix mee sua with chili & sesame oil.
-Bring stock to boil, add in minced pork & mushroom.
-Serve cooked mushrooms & minced pork over spicy mee sua.
-Sprinkle some chopped spring onions & coriander leaves.
-Enjoy.

Seafood Noodle Soup

We had fried fish head soup for dinner & there was some soup left over. I was onli commenting that if later in the nite Adam is hungry again, he can have it for supper.

Its onli 9.05pm, 2 hrs after dinner & Adam is making noise tt he's hungry! wah...i wonder is his tummy elastic?!
I was watching tv & he's been whispering into my ears, telling mi he's hungry.
Well, i let him choose wat he wans with the fish soup.Its either;
A) Use it to cook fish congee
B) Use it to cook seafood noodles soup/tomyam noodles soup

Adam decided on seafood noodles soup & i'm off to the kitchen.

Ingredients;
1 pkt instant noodles
Water for boiling
Fish Soup
5 cherry tomatoes, halved
4 button mushrooms, halved
8 slices promfet
Baby romaine
Fried orr lai
Fried shallots
1 -2 drops shallots oil

Method,
-Bring water to boil, add in noodles, cook till loosen, drained.
-Mix noodles well with shallots oil.
-Bring fish soup to boil, add cherry tomatoes, button mushrooms & promfet slices.
-When soup comes to boil, serve over cooked noodles.
-Sprinkle fried shallots, fried oor lai over, garnish with baby romaine.
-Enjoy!

Wow...Supper time! Adam seems to enjoy the noodles.It reali feels good knowing that we u cook is being appreciated & he reali eats all up.Hmm...a very gd supporter & fan of mine! haha....

川贝雪梨

Jesper had a bad cough few week back & till now he hasn't recover from it. Oh, dad has a bad cought these few days ago. Look like the cough virus is spreading among our family.

Mum used to prepare川贝雪梨 for mi whenever i had cough, this time round, i prepared for dad & jesper.

Its reali easy & simple, but u gotto keep toping up water in the double boiler,make sure it doesn't dry up, or else it will get burned.

Take a look inside, wow....

Ingredients;
1 pear (鸭梨)
3g 川贝 (mashed)
1 tiny piece yellow rock sugar
2 soup spoon water

Method;
-Cut off top of pear, remove core.
-Fill the hole with mashed 川贝 & rock sugar.
-Add water & cover the top with pear hat.
-Double boil for 2hrs.
-Enjoy!

Chin Chow Drink

Chin Chow, which is oso known as grass jelly is cooling & it reduce heatiness. Drinking it on a hot sunny day can reali cool off the hotness & make ur day.

We can normally find chin chow drink in the market or hawker center, from the stall selling soya bean milk.Whereas i prefer to make my own, which has more chin chow & less sweet!


Ingredients;
500g chin chow (grass jelly)
Water for soaking
2 pandan leaves, knotted
5 tbsp sugar
900ml water
Ice cubes

Method,
-Soak chin chow in water for 30mins, changing the water every 15mins.
-Using a shredder, shred chin chow & set aside.
-Boil water with pandan leaves, add sugar & stir till dissolve.
-When sugar solution cool, discard pandan leaves.
-Mix sugar syrup with chin chow & plenty of ice cubes.
-Serve chilled.
-Enjoy!

辣味冬粉

Dunno how come these few days i been having a crave for spicyness. Maybe its due to the light & bland meals i been having for the past few days.

Though this fried冬粉 looks so so onli, but its reali fantastic. The冬粉 soak up all the flavours from the sauces, dried shrimps & mushrooms, making it so full of flavours. 冬粉 is springy,with the crunchyness of the bean sprouts & carrot sticks, wow....i can't help having a 2nd serving. :-P
Ingredients;
250g 冬粉
1 clove garlic, minced
30g dried shrimps
50g minced pork
50g bean sprouts
3 dried mushroom, soak & slice finely
6 baby carrots, shredded
½ Japanese cucumber, shredded
5 french beans, shredded
Oil for frying

Sauce;
1½ tbsp oyster sauce
2 tbsp rojak flower sambal chili paste
150ml dried shrimp water+200ml water
¾ tsp dark soy sauce
Dash of salt
¼ tsp msg

Method;
-Soak 冬粉 in water for 30mins till it slightly expand, drained.
-Soak dried shrimps in water for 10 mins, drained.
-Fry minced garlic in hot oil, add bean sprouts & fry till cooked. Remove.
-Fry dried shrimps till fragrant, add minced pork & fry till 80% cooked.
-Add carrots, mushrooms, french beans, continue to fry for 3 mins.
-Add cucumber, fry for another min. Remove.
-Bring sauce to boil, add 冬粉 & all the cooked ingredients.
-Stir fry for 1 min till well mixed & sauce slightly dries up.
-Serve while hot.
-Enjoy!
*Do not stir fry 冬粉 for too long as they tend to get lumpy.
*Add more water if mixture is too dry.

烧鸡饭团

Mum bought a roast chicken yesterday & i was told tis morning tt she reserved a portion specially for mi as she noes that the stall shich she bought from is my favourite. All i need to do is to heat up & its ready for consumption.

However...i find that eating roast chicken this way isn't interesting. Remembered there was once i watched tv show "instant chef" & chef thomas did an interesting chicken rice roll. I decided to be copycat & the finished product is great!

Looks yummy ya? reali makes mi drool! haha....

& they taste superb...seems like a different style of sushi! keke....Pop 1 into ur mouth & its so full of flavours.
They are so filling, i had 3 pieces & i'm so full. ;-)

Dinner @ n.y.d.c

I had a very strong crave for creamy pasta & i headed down to n.y.d.c at wheelock place last evening. I ask Adeline along as she works around town area.
I love the pasta & pizza there, especially their cream sauce pasta. The cream is thick & fragrant, unlike other restaurant their cream is watery & thin.

This is 1 of my favourite dish there, its called "Tears in Heaven" Its bacon & onions cooked in thick cream sauce serve over spaghetti.

Adeline ordered a "Pigs can fly" Its sliced bratwurst in tangy tomato sauce fry with spaghetti.

Hmm...looks nice, but too bad i'm a fan of the sinful bacon cream sauce. haha....But of cuz wat Adeline ordered is healthier as compared to mine. She's more concern & health conscious to wat she eat.

Whereas i'm oso 1 of those health conscious type :-P but but...will oso go beyond & eat sinful food in order to satisfy my food crave.haha...

Teochew Style Steamed Promfet

I've been having soups & steamed dishes for the past few days, something healthy. Haha....i had crave for steamed fish last evening & so i prepare a steamed promfet in teochew style.
Its easy & fast to prepare,within 20mins preparations & cooking time, i'm already enjoying my steamed promfet.

Ingredients;
1 white promfet
1 dried mushroom, soaked & slice
1 piece 1 inch size ginger, shred
4 cherry tomatoes, halfed
1 leaf salted veggie
4 thin slices pork belly
1 piece 水梅 (bottled sour plum)
1-2 drops vegetable oil
Dash of salt
40ml water or stock
Handful of iceberg lettuce

Method;
-Wash & clean promfet, cut open the tummy & cut deep slit on both sides of the promfet.
-Wash & soak salted veggie in water for 10 mins, sliced thinly.
-Stuff sour plum & some ginger in the tummy of the fish.
-Top the remaining ingredients on the fish, drizzle with some oil.
-Pour in stock & sprinkle salt evenly over promfet.
-Steam on high heat for 8-12mins, depending on the size of the fish.
-Serve with lettuce.
-Enjoy!

冬瓜排骨意仁汤

Been having a feel of heatiness due to all the fried snacks & tid-bits which i been eating recently.

冬瓜排骨意仁汤 is best to disperse all the heatiness from my family.Mum always nag & remind us to drink more herbal tea & soup if we wanna continue eating all these heaty junk food, especially Adam & Jesper.haha....For my case, i'm not the prevention type, i onli drink when i'm feeling sick.keke....

I been searching high & low for winter melon.Despite been to many different market & supermarkets, all the winter melon which they sells are in a whole, but i onli need a piece! Haiz...in the end i've no choice but to buy it. I choose the smallest size as i dun reali need alot, its so cute, a mini melon! :-P

Ingredients;
1/2 mini winter melon
1 handful of 意仁
280g spare-ribs
8-10 red dates
1200ml boiling water
Water for blanching ribs
Dash of salt

Method;
-Soak意仁for at least 1hr b4 using.
-Wash clean spare-ribs, trim off excess fats.
-Blanch in hot water, drained.
-Remove skin & seeds of winter melon, cut into pieces.
-Assemble ribs, melons, dates & 意仁in a pot.
-Pour boiling water over.
-Cook in rice cooker till ready to eat.
-Season with dash of salt b4 serving.
-Enjoy!

Fish Head Tofu Soup

Wow...dad bought a large garoupa fish & its reali fresh. The fish head looks so tempting & we decided to cook fish head soup. I ask mum to deep fried the fish head for mi, so that by time i knock off i can cook the soup for dinner.
Ingredients;
1 garoupa fish head
1 piece 2inch ginger, sliced
1 ti po, toasted
1 box silken tofu, cut into pieces
1 tomato, wedged
1 small bittergourd, sliced
Oil for deep frying
1200ml water
Dash of salt

Method;
-Wash clean fish head, chopped into pieces.
-Deep fried garoupa in hot oil till golden brown.
-Drained on kitchen towel.
-Bring water to boil, add in ginger & ti po pieces.
-Followed by tofu, bittergourd & tomato.
-Bring to 2nd boil, add in fishes.
-Season with salt.
-Sprinkle fried shallots over.
-Serve with fresh lettuce.
-Enjoy!

Potato Salad

I'm finally back to work after the long weekend break.
Oh..I'm craving for bacons...wat to do! hmm....yup i noe wat to do, bacons taste great in potato salad.I'm loving it! haha.....

Ingredients;
4 medium US potato
5 strips of streaky bacon
1 slice carrot
1 slice pinic ham
1 slice mushroom ham
3 hard-boiled egg, roughly chopped

Dressing;
200ml plain yoghurt
3 tbsp low fat mayonnaise
¼ tsp pepper
Dash of salt

Method;
-Peel & cut potatoes into chunks.
-Steam on high heat till cooked, remove to cool.
-Cut hams into think strips or tiny pieces.
-Prepare bacon nibs by pan frying small pieces of bacon on a heat non-stick pan.
-When bacons are brown, drained on kitchen towel to remove excess fats.
-Mixed ingredients for dressing together, toss well with ham, bacons, eggs & potatoes.
-Serve with greens.
-Enjoy!

Marble Cake

Dear readers, in order to celebrate the 1st birthday of my blog, i baked a marble cake today.

Something very happening happened juz now when i was preparing the ingredients. I bought a pack of "bake king" plain flour from fairprice recently. However, when i was sifting the flour, i found lumps & worms in them. I was disgusted & tot that there goes my chance of baking a cake for my blog.
But lucky mi, i bought a pack of "red man" self raising flour from poon huat yesterday. So i decided to use self raising flour instead. 1 good thing about it is that i no need to use baking powder. Easy for mi. haha...

Fresh from the oven!

Ingredients;
250g butter
200g self raising flour
180g castor sugar
4 medium eggs
½ tsp vanilla essence
2 tbsp unsweetened coco powder
2 tbsp hot water

Method;
-Preheat oven to 160ºC, greased & lined 9” baking tin.
-Dissolved coco powder in hot water.
-Beat butter till light & fluffy.
-Add in sugar & cream till ribbon stage.
-Add in eggs 1 at a time, followed by vanilla essence.
-Fold in flour.
-Pour half the batter into baking tin.
-Add coco mixture to the remaining batter.
-Pour in remaining batter to the tin & swirl to create marble effect.
-Bake for 1 hr till skewer come out clean.
-Enjoy!

By time my cake cool, its already tea break time. Its juz nice for all. Mum & dad enjoyed the cake with a cup of hot coffee, while Adam does the followings;

Happy Birthday to my blog! Yeah.....i'm 1 today! haha.....Initially when i set up this blog, i wanna post all my baking stuff & recipes here.
But somehow or rather, while i was browsing through my blog juz now, it seems like i've posted more of cooking recipes compared to baking. haha....

Hopefully in the near future, i'm able to share more recipes with all my readers. Thank you for your support for the past 1 year, i will continue to work hard, appreciate for the comments from u guys & gals.

I would like to take this opportunity to thank my dear brother-Adam, for his continous supports & feedbacks.Last but not least, my family, especially mum & dad for being tolerence enough towards mi for taking control over the kitchen when they are bz. haha.... :-P

Shrimps & Long Beans Omelette

I've been eating this dish since i was a child. But...to prepare this dish, the long beans muz be fresh & firm. Wow...a heart-shaped omelette! yummy....

Ingredients;
A handful of long beans, diced
3 large eggs, beaten
2 large prawns, diced
Dash of salt
Oil for frying

Method;
-Add some oil, fry long beans till 70% cooked.
-Stir in prawns, fry till cooked.
-Add long beans & prawns mixture into beaten eggs.
-Season with salt.
-Heat a non-stick frying pan, pour in egg mixture.
-Prepare an omelette, serve with lettuce.
-Enjoy!

Bittergourd Soup

Looking myself in the mirror yesterday afternoon, seems tt my face looks rounder. Could it be my new hair cut? Or izzit b'coz of the good food which i been eating recently?! Hmm....think i'll juz have a soup for dinner! haha...

Ingrdients;
½ bittergourd, slice thinly
150g lean meat, minced
1 tsp light soy sauce
½ tbsp corn flour
1 tsp sesame oil
3 large prawns
450ml chicken stock
Dash of salt
Fried shallots

Method;
-Marinate minced pork with light soy sauce, sesame oil & salt.
-Stir in corn flour & mix well.
-Bring chicken stock to boil, add bittergourd, bring to 2nd boil.
-Add in minced pork mixture tsp by tsp, followed by prawns.
-When soup comes to full boil, serve with fried shallots.
-Enjoy!

干煎辣味巨虾

As i said, our family is crazy over the rojak flower sambal chili paste. I decided to cook this spicy chili prawns for Jesper as he's been asking mi wat special dish will i be cooking for him! haha....he already had the cheesy garlic prawns the other day, so this spicy prawns should satisfy him! :-P
Ingredients;
4 large giant prawns
1 tbsp butter

Sauce;
½ tsp oil
1 tbsp rojak flower sambal chili paste
2 tbsp tomato ketchup
1 tsp chili paste
1 tbsp water
½ tsp sugar

Method;
-Wash & clean prawns, remove legs & veins.
-Cut top part of the prawns exposing the flesh.
-In a non-stick pan, melt butter.
-Grill prawns with top parts facing down 1st.
-Pan fry prawns on both sides till cooked.
- To prepare sauce; fry chili paste in oil, add the remaining ingredients.
-Bring to boil, serve over prawns.
-Enjoy!

Garlic Roll

Adam had been making comments that he wants to eat garlic roll baked my mi. Comes to think of it, its been a long time since i last made them & its reali a long long time.
Well, since i promised & happened to haf some baugette at home, i decided to grant Adam's wish. Juz in case he say i bluff him, promise le & didn't fulfil! Well, actually its cuz i was also thinking of eating them. keke....

Simply
-Slice the baugette, but dun cut through.
-Brush with garlic butter spread.
-Wrap with foil.
-Bake in oven toaster for 10-15mins.
-Enjoy!

Method for garlic butter spread;
-Combine soft butter & margarine in ratio of 3:1
-Add minced garlic, chopped parsley & italian herbs to the butter
-Mix well & spread on bread roll.

Lunch Today

Wat are we having for lunch? Well, Adam is lazy to go out to buy! I'm too sianz to eat any rice or noodles! And so.....we eat a little of every kinda snacks we can find in the fridge.

Ah ha....i had some plain yoghurt & chicken breast left...yup i can make some potato salad which i made the other day.
Goes with some baked curry puffs, iced yuan yang with chin chow, last but not least, taiwanese chicken sausage grilled with spicy rojak flower sambal chili.


Dunno since when the trend of rojak flower sambal chili starts in our family! Be it dad, mum or mi, watever we eat, we tends to add this home-made chili.

Erm....actually the original taste of the chicken taiwanese sausage is not as nice nice the pork sausages. Hmph...if i noe, i would have bought the pork instead. BUT BUT....HAF NO FEAR FOR I AM HERE! So easy....i transform them into a spicy flavour, at least it taste much much more better! haha..clever mi! :-P

Simply cut some slits on the sausages, grill & brush with some rojak flower sambal chili until cooked. Enjoy! Wah.....wat we are having looks like having tea break in a cafe! keke....

Sour Plum Lime Juice

All thanks to the dry & humid weather,my throat is feeling terribly dry this afternoon. ( p/s: actually its the tempting limes....& i'm finding excuses to put the blame on the weather! keke...)

Under this kinda situation, its impossible to let the fresh & pretty limes(which i bought from the market this morning) sit in the fridge for long, i decided to make a cool drink to relieve myself. haha....

Ingredients;
3 sour plum
Juices from 5 limes
Hot water
Sugar syrup
Ice cubes

Method;
-Pour juz enough boiling water over sour plum, cover & let it sit for 10 mins.
-Add ice cubes, lime juice & sugar syrup to the sour plum water.
-Serve chilled.
-Enjoy!

Crispy Duck With Hoisin Plum Sauce

Mum bought halved roasted duck from the market today & her normal standard is to braised them in dark soy sauce.However, i raised up the issue that shouldn't roasted duck be crispy? but when its being braised, it tends to lost its fragrance & crispyness.

Mum replied that there was no sauces to be serve with the duck as the vendor didn't provide it for us. I put on my thinking cap & presented.........crispy duck with hoisin plum sauce.

Simply;

-Bake the duck in preheated oven at 220ºC for 15mins till the skin crispy -Mix ¾ tbsp plum sauce, 1 tbsp hoisin sauce & 1 tsp hot water together.
-Drizzle sauce over chopped duck.
-Sprinkle roasted sesame seed over.
-Enjoy!

Chwee Kueh

I was on leave for today & tomolo. 1 thing about mi being at home is tt i tends to cook & eat at different time of the day. Kitchen is the onli place where i will keep walking into. Haiz...mum keeps nagging at mi for being hyperactive in cooking. haha....

To satsify my crave for chwee kueh, i got all the ingredients ready & within 1 hr's time, i'm already happily eating my chwee kueh with home-made rojak flower sambal chili paste. yummy....

Ingredients;
180g rice flour
20g cornflour
5g wheat starch
300ml water
500ml boiling water
¼ tsp salt
30ml corn oil
Cai po
2 clove garlic, minced
1 tsp sugar

Lard
Oil for greasing


Method:
Kueh;

-Mix all the flour together with, add 300ml water & mix well.

-Add boiling water & oil, stir the batter till well blended.

-Pour batter into greased mould & steam for 12 mins till cooked.

-Serve with cai po & rojak flower sambal chili paste.

-Enjoy!

Cai po;
-Soak cai po in water for 5 mins, drained.

-Fry minced garlic in lard till fragrant.

-Add cai po, continue to fry till dry & lightly brown.

-Stir in sugar,
set aside to serve with chwee kueh.

This heart-shaped chwee kueh is specially for Adam! Its upon his request that he wanna a very big heart! haha....Here u go Adam, hope u

Roasted Potato Salad With Shredded Chicken

I had a very strong crave for potato salad but i prepared & served it in a different style. I roasted the potatoes till crispy on the outside, toss well with the fantastic dressing. Hmm...yum yum...a totally different feel & i'm loving it.

Ingredients;
3 medium potatoes
½ onion
1 stalk spring onion
½ red chili
Boiling water
Oil for baking
1 Chicken breast
1 tsp oyster sauce
1 tsp light soy sauce
1 tsp honey
½ tsp brown sugar
Baby romaine
Cherry tomatoes

Dressing;
½ cup fat free yoghurt
2 tbsp mayonnaise
Dash of salt
Dash of pepper

Method;
-Marinate chicken breast with oyster sauce, light soy sauce, honey & sugar.
-Bake or pan fry chicken breast till cooked.
-Shred into pieces & set aside.
-Peel & cut potatoes into chunks
-Cover potatoes with enough water, par boil for 8 mins.
-Cool potatoes completely.
-Prick potatoes with fork.
-Pour hot oil over potatoes, toss well.
-Bake potatoes in preheated oven for 220ºC for 20mins till browned & crispy.
-Chopped onion, chili & spring onion coarsely.
-Mix all the ingredients for dressings together, add chopped ingredients & mix well.
-Toss roasted potatoes in dressings, top with shredded chicken, serve with baby romaine & cherry tomatoes.

JB Makan Trip II

I did a very rushing plus bo liao trip to JB last nite. Knocked off at 1800hrs, by time we cleared both customs, Tabby & I were starving.
We went straight to the nite market at Taman Sentosa for dinner b4 we start our shopping spree! U noe lah, we need to haf strength & energy to do so! haha...

Our order are as follows;

My all time favourite chee chong fan with char siew & shrimps fillings. Yummy....serve with the spicy chili sauce & their home-made thick sauce. Hmm...cheap & gd! onli costs 4 ringgits for both, muz eat while its hot.
Fried kway teow with cockles.
Comment: so so nia, not as nice as wat we have in singapore. hmm...next time i'm not gonna order this! :-P

Pork & chicken satay serve with kueh tupat.The meat is soft & tender inside, crispy & fragrant on the outside, with some charred area. Goes well with the special belnded peanut sauce. Not forgetting the fluffy keh tupet, in fact its the best kueh tupet i've eaten so far.

Fried oyster egg. Its cheap but its not as gd. The sweet potato flour mixture wasn't being fry till crispy & fragrant. In fact when being fried with eggs, the whole dish become gooey.

I love this refreshing fruit juice, its highly recommended as its the signature juice of the stall. The lady boss keep insisting that we gave it a try since they dun have wat we request for. Lucky i chose tis, no regrets!
Time for shopping! We proceed to City Square Shopping Center & shopped for 1-2 hrs b4 the shops closed for the nite. I bought a pair of heels from Vincci & a Euro Sports leather belt for Jesper.
B4 we left the mall, i bought some cakes & breads from 1 of the famous bakery in malaysia-Lavender. Dad loves their "xiao ge ge light cheese cake" & Adam loves the soft chewy texture of their buns & breads.
This is indeed a rushing makan cum shopping trip. Everything was done within 4 hrs....by 2030hrs i'm already back in singapore. Lucky its a weekday where there were no jams! ha...can haf an early nite! :-)

Lychee Shandy

Just b4 the match starts, there's still some time to prepare a drink to go with the spicy crackers.

I made a cocktail by mixing 7-up, beer & lychee syrup together.The % of how much to add depends on ur own perferences.
I had 10% lychee syrup with 60% 7-up +30% beer, garnish with canned lychee fruit. Shiok ar! :-P

Here it is, my home blend version of lychee shandy. Hmm... nothing beats watching football match at home, enjoying a house blend alcholic drink with home-made crackers.

Great! this feeling is as good as those pple watching the match at a bistro or club!

Spicy Seaweed Crackers

Passed by a supermarket when i was on my way home from work juz now. I bought some japanese seaweed.
Reached home & was told by Adam that there's a big match coming up tonite & seems like there's no tid-bits for him to munch on while watching the match. He says that its a funny feeling to eat seaweed & not munching on crackers while watching football match.

Its Man U vs Liverpool & everyone is so excited bout them. Other than being a big match between the 2 football club, its gonna be a big match at home.
Dad is a liverpool fan while Adam & Jesper are man u fan. Haiz....for this match, i'm neutral as i'm a arsenal fan. haha...

Well, for the sake of the football fans at home, i made some spicy seaweed crackers using the spicy rojak flower sambal chili paste.

Ingredients;
Spring roll wrappers
Nori sheets
Egg white
Rojak flower sambal chili paste
Oil for frying

Method;
-Prepare spicy mixture by mixing 1 tbsp chili paste with 1 tbsp egg white together.
-Brush 2 spring roll wrappers with spicy mixture.
-Sandwich nori sheet in between them.
-Set aside to dry, about 1 hr.
-Cut them into strips.
-Deep fried in hot oil.
-Enjoy!

Fried Hokkien Mee

I loved hokkien mee, especially the stall selling at old kallang airport road.
Our family like fried hokkien mee as well, but with onli thick bee hoon & yellow noodles. Thin bee hoon absorbs gravy fast,leaving the noodles dry & tough.
Our family always cooks fried hokkien mee using onli 2 kinds of noodles, serve with our home-made rojak flowers sambal chili paste.
Adam & dad normally has more than 2 servings of the noodles.

Ingredients;
600g thick bee hoon
400g yellow noodle
2 medium squids
350g medium prawns
300g Pork belly
½ pot boiling water
4 shallots, chopped
3 clove garlic, minced
100g bean sprouts
5 eggs, beaten
1 cup stock
Dash of salt
Dash of msg
Oil for frying

Garnishes;
Rojak flower sambal chili paste
Limes, halved
Crispy lard

Method;
-Blanch squids, prawns & pork belly in hot water till cooked, reserve stock for later use.
-Cut squids into rings, pork belly into strips, remove shells & devein prawns.
-Scrambled eggs & set aside for later use.
-Fry garlic & shallots in oil till lightly browned & fragrant.
-Add noodles & bee hoon, fry for about 3 mins.
-Add bean sprouts, fry well.
-Add ingredients, seasonings & stock, mix well & cover till stock slightly dries up.
-Serve with garnishes.
-Enjoy!

Iced Yuan Yang With Grass Jelly

Its been a long while since i last had grass jelly. I used to eat it every now & den when the old market is still around. Ever since it had been demolised, i didn't managed to buy fresh grass jelly from market except those vacuum pack where u can find in supermarket.

No choice but to buy as i had a very strong craving for grass jelly drinks the other day, due to the hot humid weather in the afternoon.

I set aside some grass jelly for my iced yuan yang as well. Taste great! I've always loved yuan yang.


If u find that brewing ur own tea is time consuming, another alternative is u can choose to use instant yuan yang like owl or aik cheong brand. Onot, can juz add some coffee powder to instant milk tea mix. :-)

Ingredients;
2 english breakfast tea bag
Some instant coffee
Sugar
Skim milk or creamer
Hot boiling water
Ice cubes
Grass jelly, chopped

Method,
-Prepare milk tea, add some instant coffee.
-Add some ice cubes to chill it.
-Serve with additional ice cubes & grass jelly.
-Enjoy!

Mum's Home-made Rojak Flower Sambal Chili Paste

This sambal chili paste is being invented by mum via trial & error. We adjust the taste based on our preference.
We prefer to chopped the ingredients rather than grind as grind makes them fine & watery.
This sambal chili paste goes best with fried rice, seafood & fried meat.

Ingredients;
8 shallots, chopped
2 chili, chopped
10 chili padi, chopped
4 dried chili
1 rojak flower, chopped
1 tbsp chili paste
½ tbsp sugar
¼ tsp salt
3 tbsp vegetable oil

Method;
-Soak dried chili in hot water & chopped them finely.
-Heat oil in wok, fry chili paste till fragrant.
-Add shallots & fry till fragrant, about 8 mins.
-Add all the chopped chili, continue to fry for about 10-12mins.
-Stir in rojak flower, fry for another 5-6 mins till mixture slightly dry.
-Season with salt & sugar.
-Store in air-tight glass bottle or store in fridge for up to 3 weeks.

Cheesy Garlic Prawns

Dad bought some "Giant" prawns home last nite & they are reali huge. They are bigger that the baby lobsters which i eats in pengarang.
Each prawn weights more than 200g & 5 of these giants cost $30 over.

Dad loves seafood, he always goes to changi ferry terminal with his frens to buy fresh prawns & fishes like promfets & garoupa.

Initially i wanted to prepare prawn salad with these giants. However, Jesper made a last min request for cheesy prawn baked, so i decided to whip out this dish.
Oh my....cheese, garlic & prawns so well match. Lovely.....while its being bake in the oven, the smell is so tempting that everyone of us were crowding around the oven, reali can't wait to eat the finish product!

This is how it looks like b4 i lay the cheese over to bake. I onli do so 10 mins b4 serving dinner.

Ingredients;
2 giant prawns
5 clove garlic, minced
2 tbsp butter
2 slices low fat cheese
Some chopped parsley

Method,
-Wash & clean prawns, trim off legs, feelers.
-Make an 1” cut on the prawns from its head to tail, remove veins.
-Melt 1 tbsp butter on a frying pan, fry garlic till fragrant. Remove & set aside for later use.
-Melt remaining butter, pan fry prawns on both sides till 80% cooked.
-Spread garlic over prawns, cut cheese into long strips, lay them over prawns.
-Bake in preheated oven at 200ºC for about 10mins or till cheese melts.
-Sprinkle chopped parsley over & serve.
-Enjoy!

Lollipop Chicken in Spicy Jingdu Sauce

I bought some chicken drumlets from the supermarket last nite & i wanna cook something different. Normally its either deep fried or grill & i think i had enough of fried chicken this week. haha...

While browsing through my blog juz now, had craving for Jingdu Spare-ribs, but i need to cook the chicken drumlets & my initial intention was to cook something spicy!
Ah ha...i noe, cook a spicy version of jingdu chicken, tt's how i end up with this dish.
See, looks like meaty lollipops, aren't they?

Ingredients;
10 chicken drumlets
Dash of Salt
5 tbsp potato starch
Oil for deep frying

Sauce;
3 tbsp plum sauce
2 tbsp oyster sauce
2 tbsp tomato ketchup
2½ tbsp black vinegar
2 tbsp water
½ tbsp sugar
2 tsp chili paste
½ tbsp vegetable oil

Method;
-Wash clean chicken drumlets, cut a slit down from the joint of drumlets, scrap skin & meat downwards to form shape of lollipop.
-Season chicken with salt, coat with potato starch, deep fried in hot oil till golden brown. -Drained on kitchen towel to remove excess oil.
-Prepare sauce by frying chili paste in ½ tbsp oil, fry till fragrant, add the remaining ingredients, bring to boil.
-Add in chicken lollipop, give it a quick stir till lollipops are evenly coated with the sauce.
-Serve immediately.
-Enjoy!

Apple Spare-ribs Soup

南杏& 北杏, according to chinese medical herbs are known to be beneficial to our health.It helps to clear the lungs off toxic.
This soup is best for pple working outdoors, always get in touch with smoke & dust.
Ingredients;
1 red apple
1 green apple
2 figs
250g spare-ribs
1 tbsp 南杏
1 tbsp 北杏
5 red dates
1200ml water
Dash of salt

Method;
-Wash & clean spare-ribs, blanch in hot water.
-Remove core from apples, cut into wedges.
-Bring 1200ml water to boil, add spare ribs, 南杏, 北杏, figs & red dates.
-Boil for about 30 mins.
-Add apples, bring to full boil & simmer for another 20 mins.
-Season with dash of salt.
-Enjoy!

Garlicy Sweet & Spicy Sausage Roll

I can hardly open my eyes...so sleepy, watched football match till dawn.No matter wat, i still gotto wake up early to prepare breakfast as i already bought all the ingredients.Oh...how i wish i could stay in bed longer.
I can only rely on coffee to perks mi up. I love to have sausages for breakfast! Put in some effort to prepare a different kinda sausage bread.

Whenever there was excursion during my primary school days, mum would prepare hotdog bread for mi. & its reali onli hotdog with bread. No sauces, no greens etc....so pathetic rite? haiz.....

Ingredients;
2 chicken sausages
2 sausage bread roll
2 clove garlic, minced
Dash of black pepper
1 tsp olive oil
2 cherry tomatoes
Shredded lettuce
2 tsp sweet & spicy thai chili sauce

Method;
-Add minced garlic & olive oil together, mix well.
-Cut slits on chicken sausages, stuff garlic into slits, brush remaining oil & garlic over sausages.
-Bake sausages in preheated toaster oven till cooked, bout 8-10mins.
-Brush sweet & spicy thai chili sauce onto sausages.
-Serve with bread roll, lettuce, cherry tomatoes & the remaining chili sauce.
-Enjoy!

香酥鸡翅

During this point of time at this century, its rather difficult to search for the type of spices,sauces which grandmothers used in their cooking during their times.Unless its 老字号 & quite popular.

I reali missed those old days where grandma would deep fried chicken wings for us using the "yellow packet" chicken flour.
I had a hard time searching for it, until 1 fine day............i found them in a dry market. I'm so excited & i bought 7 pkts! So kiasu rite? haha...too bad, tt's the trademark of singaporeans! :-P

Ingredients;
10 chicken middle wings
1 tbsp salt
2 limes, halved
Hot boiling water
½ tsp baking soda
1 pkt chicken flavour flour
Oil for deep frying

Method;
-Wash chicken middle wings with salt & limes.
-Pour hot boiling water over, drained.
-Season chicken wings with some baking soda.
-When ready to deep fried, coat chicken wings with chicken flour.
-Deep fried in hot oil till golden brown.
-Enjoy while hot!
