Tom Yam Noodle Soup

Had tom yam craving since yesterday afternoon & so,decided to cook tom yam noodle soup for dinner last nite.
I used to tom yam paste which i normally use,same for my yam pizza post.
Its indeed as easy as ABC.
Juz add tom yam paste into boiling water,
Add in watever ingredients u would like to eat.
Season with salt.
Serve over ready cooked yellow noodle.
Enjoy!

Yam Kueh

Another of my mum's specialities -Yam kueh. This recipe was actually passed down by my granny.

I still remember when i was young, granny would make this dish,but i couldn't eat alot as her version contains too much pepper.
So my mum modified the recipe a little.Hence, becomes my favourite dish

The method of making is alomost the same as radish cake or pumpkin cake. But u gotto deep fried the yam chuncks 1st b4 steaming.

Refreshing Honey Lemon Drink

An uncle of mine bought some dried lemon slices from China. In fact this is the 1st time i came across dried lemon slices. I still tot its a kind of tidbits. Haha.....
-Add hot boiling water over few slices of dried lemon,let it stand for about 5 mins.
-Add in honey to taste.
-Serve with ice cubes.

Note;
1)If u can't find the dried lemon,fresh lemon slices could be use.
2)Do not soak the lemon skin in hot water, it will ruin the taste of this drink.

Lemon Chicken

The lemon chicken where i normally eat outside is always coated with lots of flour,deep fried till crispy.
But mine is different. Its coated with a very thin layer of flour,top with lemon sauce.


Ingredients;
2 Chicken thigh
1 tsp light soya sauce
Pinch of baking soda
1 tbsp cornflour
1 tsp chicken coating
1 tbsp lemon sauce
Juice from 1 lemon
1 tsp grated lemon rind
1 tsp sugar
Oil for frying

Method;
-Remove bones from chicken thigh, lightly flatten with chopper.
-Marinate with light soya sauce & pinch of baking soda.
-Mix cornflour with chicken coating
-Coat chicken thigh evenly
-Shallow fry till golden brown

Sauce;
Heat pan & add 2 drops of oil, add in sugar & cook till it melted.
Add in lemon sauce & lemon juice.
Cook till mixture boils, add in lemon rind.
Drizzle over chicken pieces to serve.

Berry Buttermilk Muffins

Aunty Sarah baked some blueberry muffins for our breakfast today.
Being a fan of blueberry,i reali loved these muffins. Its so sweet of Aunt Sarah to bake so early in the morning & bring over to us at 9am. :-)


See, its full of berries inside.Yummy!Aunty Sarah even gave me the recipe for these lovely muffins.

Ingredients;
400g plain flour
175 caster sugar
1 tbsp baking powder
1 tsp lemon rind, grated
½ tsp salt
285ml buttermilk
2 eggs, beaten
85g melted butter
250g fresh blueberries

Method;
Preheat oven to 180 ºC, butter muffin tin.
Combine flour,sugar,baking powder,lemon rind & salt in a large bowl.
In another bowl,mix buttermilk,eggs & butter
Mix the liquid ingredients to the dry ingredients until just combined. Do not overmix.
Fold in berries lightly
Spoon mixture into prepared muffin tins.
Bake in preheated oven for 25mins.
Enjoy!

1g fibre
15g added sugar
0.91g salt

Crabmeat Stick Parcel

The very 1st time i had this dish was when i was 13yrs old. That was my lst visit to my primary school teacher form teacher's house.To welcome us,she prepared some fried beehoon & fried crabmeat stick for us. Normally,when i prepare these parcels,i will add in a small pc of seaweed to the crabmeat stick.This will enchance the taste as well.


Ingredients;
25 pcs crabmeat sticks
50 pcs springroll skin

1 egg yolk

Oil for frying


Method;
-Cut crabmeat stick into half, roll up in popiah sheet.
-Seal edge with egg yolk.
-Deep fried till golden brown & serve.
-Enjoy!

糯米饭

糯米饭 is 1 of my mum's specialities. This time round,i helped around in the kitchen so that i'm able to jot down the procedure & timing.

Ingredients;
2 cups glutinous rice
1 cup pork belly strips
1 cup dried mushroom
½ cup dried shrimps
Handful of chopped garlic & shallots
Oil for frying
Pinch of salt

Method;
Soak glutinous rice for 30 mins.
Prepare mushroom by soaking in hot water till it bloomed, cut in strips
Reserve water for soaking mushroom & dried shrimps for later use
Heat oil, fry chopped garlic & shallots till fragrant.
Add in dried shrimp & pork belly, fry till pork is about 80% cooked
Add in mushrooms, continue to fry for 2 another 2 mins
Add in soaked glutinous rice & water.
Season with salt, fry for another 5 mins
Scoop the rice on a metal plate & steam on high heat for 25-30mins
Serve with fried shallots & peanuts.
Enjoy!

Note:
-Water for soaking dried shrimps tends to be a bit salty, therefore I reduce the salt added to this recipe.
-Remember to stir the rice mixture after steaming for 10 mins,den continue to steam for another 15-20 mins

Ondeh Ondeh

I've always love this nonya kueh ondeh ondeh.Used to make the pandan flavour,but since there were plenty of sweet potatoes lying in the kitchen,i decided to make sweet potato ondeh ondeh.

Simple steps to prepare this kueh;
500g sweet potatoes
200g glutinous rice flour
1 tbsp caster sugar
200g grated coconut
2 tbsp brown sugar
Some pandan leaves
Extra grated coconut with pinch of salt

Method;
-Steamed & mash sweet potatoes
-Mix glutinous rice flour, sweet potatoes & sugar.
-Knead into dough
-Wrap small portion with fillings, roll into balls of 1”size
-Boil a pot of water with pandan leaves, add in ondeh ondeh to cook

-When floated on surface of water, remove & coat with coconut shavings
-Enjoy!

Salad with Baked Nuggets

Feels like eating salad with meat, having no chicken breast meat at home, i decided to use frozen nuggets instead.
Something new ya, & the result turns out appealing.

Simply baked the frozen nuggets till golden brown & crispy,serve with low fat salad dressing & some greens.Enjoy!

Food Stuff from Japan

My fren Judy came back from japan recently & she bought me some gifts. Other than these food stuff, i oso received gifts bought from japan disneyland.So sweet of her ya!

This nori puff is sooooo.....yummy! Its light & tasty.




These tiramisu candy were great! Each almond nut is covered with a layer of tiramisu cheese flavour,coated with unsweetened coco powder on the outside. Yummy....Its reali fantastic.

Other than these few items, there were other goodies like wasabi crackers,cuttlefish with wasabi,honeydew white chocolate etc....which i didnt managed to take pic of as my brother gobbled up all the stuff.haha...

Veggie Crisp

Every since i tried the fried vegetables fritters from "Happy Veg", i fell in love with it. Its so crispy on the outside, the inside in soft & fill with the sweetness of the different vegetables.
I did something like this last nite;

They are best serve with thai hot sauce drizzle over them. Yummy....Adam loves to eat them this way.

This is how the batter should look like b4 frying.

This is simple to make, basically, juz need to make a batter, throw in watever veggie that u like,either pan fried or deep fried them will do.

My verion of veggie crisp includes the followings;

Chives
Turnip
Baby carrots
Beancurd Strips
Egg plant
Yellow bell pepper

Home-cooked Spaghetti

I've always fancy spaghetti cooked with cherry tomatoes & carrots. It makes the sauce sweeter & healthier.
Adam has always been a fan of my home-cooked spaghetti. Be it cream base or tomato base, he can have more than 2 servings at a time.

Ingredient A:
1 pkt spaghetti noodles
1 pot water
Few drops of oil
Dash of salt

Ingredient B:
200g mince chicken
1 onion,chopped
6 baby carrots,sliced
2 slices carrot ham,cubed
4 slices of low fat cheese
10 cherry tomatoes,halfed
250g tomato puree
Parsley,chopped
Dash of Italian herbs
½ tsp sugar
250ml water
Salt to taste
Oil for frying

Method;
-To prepare noodle, bring pot of water to boil, add in oil & salt.
-Add in spaghetti noodles, cook till soften.
-In a clean pan, add oil, stir fry onions & carrots till carrots soft.
-Add in minced chicken & carrot ham, give it a quick stir.
-Add in tomato puree & water.
-Bring to boil, add in cherry tomatoes.
-Season to taste, add Italian herbs.
-Bring to full boil, add in cheese to thicken the sauce.
-Add in spaghetti noodles, coat evenly
-Serve hot, garnish with chopped parsley

白糖糕 Pak Tong Kao

白糖糕 brings back childhood memories. My mum used to buy them for my breakfast b4 my kindergarden class.Normally when i have the crave, i would juz tell my mum i wan the white white cake. U noe, that was when young, where i dun even noe wat izzit call. haha....

白糖糕 comes in 2 different colour. I would prefer the wans with brown sugar.So does my family. I didnt noe that my grandma loves to eat 白糖糕 until i gave her some.

Ingredients;
280g rice flour
250g brown sugar
600ml water
3 pandan leaves, knotted
1 tsp dried yeast
1/2 tsp salt
1/2 tbsp corn oil


Method;
-Add 300ml water to the rice flour and mix well
-Boil sugar with 300ml water, salt and pandan leaves

-When boiling, pour syrup into rice flour mixture, stir well and strain mixture,set aside to cool
-Dissolve 1 tsp yeast in 2 tbsp lukewarm water and add to cooled rice mixture
-Stir well, cover and leave to leaven for 11/2 to 2 hours till small tiny bubbles appear
Grease and preheat a 30 cm round tray in steamer
-Add 1/2 tbsp oil to leavened mixture, stir well and pour into heated tray

-Steam for 20 minutes.

豆干包Tau Kua Pok

豆干包 is a snack where u can find at certain rojak stalls. However, its quite difficult to a stall that serve nice & tasty 豆干包. & so, i decided to prepare them myself.
Simple ingredients needed;
8pcs rectangular bean curd puff
1 handful of beansprouts
1 handful of kang kong
1/2 cucumber,shredded
some local lettuce
Sauce (refer to my previous tauhu goreng post)

Preparations;
Toast the bean curd puffs for about 3-5mins
Cut openthe side to make it into a pocket
Boiled the beansprouts & kangkong
Stuff lettuce,cucumber,kangkong & beansprout into the bean curd puff
Toast in the oven for about 5mins until crispy
Drizzle with sauce & serve

Herbal Jelly 龟苓膏

The weather hasn't been good recently.In these kinda hot & humid weather, best to eat more cooling stuff. Other than drinking herbal soup, another of my favourite is herbal jelly.
This is my 1st time making herbal jelly. Normally i will juz buy those ready made 龟苓膏 from supermarkets.

When i was at Chinatown yesterday, came across this instant herbal jelly where u can cook them easily.


Its so yummy & easy to make.

Simply remove from packet, pour in 20X more hot boiling water.

Stir well & cool.

Chilled & serve with honey.

The texture of the jelly isn't too hard. Hmm.... no wonder its my favourite. haha....

White Fungus with Ginkgo Dessert

Ginkgo nuts helps in memory, if u haf poor memories, this is much more better than any medicine. Well, white fungus with ginkgo desserts is my all time favourite, be it hot or cold.

Its best serve chilled as the dried longans tends to be crunchier.

Ingredients;
1 handful of thai dried longans
20 red dates
1 bowl of ginkgo nuts
1 bowl of white fungus
Some rock sugar to taste
1500ml water
Pandan leaves,knot

All u have to do is;
-Soak white fungus in water till it bloomed
-Steam ready prepared ginkgo nuts for about 10 mins
-Bring water to full boil, add in pandan leaves & red dates, cook for about 10 mins
-Add in white fungus & ginkgo nuts,continue to cook for about 10 mins
-Add in the dried longans, cooked till it bloomed
-Lastly add in rock sugar to taste.

Egg Mayo Baguette

Hi All,
When's the most enjoying & relaxing time? Well, to me that will be during tea break, sitting at a corner enjoying baguette with coffee. Yummy.....

I made this egg mayo baguette during hi tea for everyone.

Simple steps to prepare;
Mash hard-boiled eggs,season with pepper.
Season to taste, add low fat mayonise.
Mixed well.
Serve with any kind of bread.
