Green Tea Snowskin Mooncake

Mid authum festival is approaching next month. Mooncakes are on sale everywhere,be it in singapore or malaysia.
Every year i will buy my favourite Lavender mooncakes from JB. Purposely went to JB last evening to buy some mooncakes to sastify my crave.

Other than the usual single yolk banana snowskin lotus mooncake which is my all time favourite,i bought the green tea flovour to try.

The green tea snowskin mooncake isn't too sweet,the paste is blended in with red beans,a heavenly match! Yummy~licious!

Well, coz mid authum is next month,there will be plenty more of mooncake craze to come. Haha...

Dinner @ Imperial Court-Grassroots' Club

Our company held a dinner function at imperial court,grassroots'club last evening. Well, to me the food wasn't that fantastic.But i still managed to take some photos of those which i find not too bad.

Cold Dish Platter~jelly fish,fried ngo hiang,salad prawns & stir fry chicken.
Braised Shark's Fin with Dried Seafood~normally i would add some green chilli pickles to my shark's fin soup,unlike traditional way of adding vinegar or martell.

Chicken Mayonise Sandwich

Purposely woke up at 6 am this morning to prepare chicken mayo sandwiches for breakfast for everyone.
Except adam, he had 2 servings,other than chicken mayo sandwich,he had a pork cutlet burger as well. Such a glutton. Haha....

Chicken mayo ingredients;
2 chicken breasts,boiled & shredded
5 tbsp low fat mayonise
Dash of ground pepper
-Mix all ingredients together,serve with greens & any kind of bread

Pork Cutlets

Been thinking of eating pork cutlets for 2 days. Decided to prepare some for dinner tonite.


Ingredients;
600g of pork
1 beaten egg
12 pcs butter flavour soda biscuits, crushed
1 tbsp corn flour
1 tbsp plain flour
1 tbsp potato starch

Seasonings;
1 tbsp sesame oil
½ tsp baking soda
½ tbsp salt
1 tbsp light soya sauce
Dash of pepper

Method;
-Sliced pork thinly, flatten lightly with the rear of knife blade
-Marinate with the seasonings, chill in fridge for 2 hrs or overnight
-Mix three flours together,coat each pc of pork evenly
-Dip into beaten egg
-Cover each pc of pork well with crushed soda biscuit
-Deep fried till golden brown
-Serve with lettuce & mayonnaise.

Rose Tea

What a refreshing rose tea i juz had. This healthy tea soothes the throat, warm the tummy & helps to maintain beautiful complexion.It makes a great drink especially on cold rainy days.

Ingredients;
8 dried roses
4 red dates
4 dried longans
1 tbsp wolfberries
Hot boiling water
Honey sugar to taste

Method;
-Place wolfberries, red dates, dried longans & dried roses in a teapot
-Pour boiling water over
-Cover lid & set aside for 10 mins
-Stir in honey sugar to taste
-Enjoy warm or chilled

Century Egg Congee

Wat's for lunch? Went to market this morning & saw freshly fried you zhar kway, decided to buy some & save them for century egg congee in the afternoon.
Ingredients;
1 cup uncooked rice
1500ml water
Salt to taste
Cooking oil
500g minced pork
200g cuttlefish
2 century egg
1 can braised peanut

Garnish;
Spring onions
You zhar kway
Fried shallots
Dash of pepper

Method;
-Wash clean uncooked rice, add water & cook for 30 mins
-Add oil & keep stirring, adding more water if its too thick
-Season minced pork with salt, light soya sauce, pepper, sesame oil & cornflour
-Add minced pork & shredded cuttlefish
-Season with salt
-Cook for another 10 mins
-Serve with century egg, braised peanut & garnishes.
-Enjoy!

Baked Potatoes

Haven baked this dish for a very long time.Had a sudden craving thus decided to baked some as a after dinner snack.

Simply & easy to prepare;

-Peel 2 medium potatoes, cut into cubes
-Make a few slits onto each cube of potatoes
-Mix potatoes with melted butter, season with herbs or chopped parsley
-Bake potatoes in a pyrex dish at 220 ºC for 20mins or until cooked
-Mix 2 tbsp breadcrumbs with some cornoil
-Toss well with cheese
-Sprinkle cheese mixture over potatoes
-Continue to bake for another 10 mins or till top browns

Taro Fries

There's this half portion of yam left lying in the fridge. Can't decide to cook yam rice or yam kueh with it. So i decided to make taro fries instead.

Simply cut taro into thin strips & deep fried in hot oil till golden brown.Sprinkle pinch of fine salt over fries while hot. Enjoy!

马铃薯球

Since i was ten yrs old,i already started started making this dish. Still remember i made this for my class party when i was in primary 4.

Piping hot deep fried potato puffs. Crispy on the outside,soft & tasty inside. Yummy!
A cross section view of the potato fillings inside. Best serve with mayonise or sambal chili.

This is how it looks like b4 deep fried. Gotto chill it for at least 3 hrs to firm up. Best chilled overnite,makes frying easier.

Ingredients;
5 medium potatoes
1 large onion, chopped
500g minced park or chicken
Salt to taste
Oil for frying
1 beaten egg
2 tbsp self raising flour
1 tbsp plain flour
1 tbsp potato starch or corn flour
Breadcrumbs for coating

Simple preparation steps;
-Boil & mash potatoes
-Fry chopped onions till fragrant, add minced meat & fry till cooked
-Season to taste
-Scoop mixture over mashed potatoes, mix well
-Mix the 3 flours thoroughly together
-Coat palm with little flour, roll potatoes into size of ping pong ball
-Roll on beaten egg den into breadcrumbs.
-Continue till potato mixture finishes.
-Chill overnite b4 deep-fried

Fruit Salad

Whenever i',m at home,tends to look for food. Haha...such a glutton ya! Well, i juz had a refreshing fruit salad for tea break.

These are the few ingredients needed to prepare fruit salad.

Simply cut fruits into cubes,mixed well with low fat yoghurt. Serve chill!

Juz bought a box of champagne grapes the other day,so i replaced fresh grapes with raisins.

Braised Chicken Hor Fun

Finally its an off day for me. I can get away from the bz work,stay at home to cook varieties of food.Went to the market early tis morning to get ingredients for braised chicken hor fun as i wanted to cook dem for lunch.
Normally if sat i'm not working,i will prepare lunch for my family. Juz nice for adam after he finish lesson from school.

Ingredients;
½ kg chicken middle wings
600g kway teow
80g bean sprout
4 stalks xiao bai chye
6 pcs dried mushrooms, soaked
3 clove garlic
3 pcs dried chili
2 tbsp dark soya sauce
Salt to taste
500ml water
Cornstarch water

Method;
-Wash & clean chicken thoroughly.
-Bring 250ml water to boil, add in clove garlic,dried chili,& dark soya sauce & salt.
-When boiling,add in chicken wings to cook for about 20mins,add in the mushrooms & continue to cook for about another 10-12 mins until cooked.
-Boil xiao bai chye, bean sprout & kway teow b4 serving.
-Assemble all together,serve with gravy & green chili.
-Enjoy!

Method for gravy;
-Pour out half portion of the chicken gravy from the stew,add 250ml water.
-Bring to boil, add cornstarch water to thicken.
-Season with salt.

August wasn't an active month for me. Hasn't been baking recently. Haiz...was too coped up with work.
Will try my best to update my blog with more yummy food.

Prata Roll

Couldn't sleep the whole nite,been craving for prata roll. & so, 1st thing in the morning 6.30am. Prepare prata rolls for breakfast.
Adam had his before he left for school.He was saying,its been such a long time since we had prata rolls.

Normally,my prata rolls onli contains sausage & cheese.This time round,i added lettuce & mayonise to it. Its taste wonderful.Wat a hearty breakfast we had.
This is how it looks like before rolling. U gotto roll them while hot. Placing cheese on both ends of the prata is to ensure after chesse melted,the prata can seal well.

All u have to do is;

-Bake frozen prata till brown,wrap with cooked sausage,cheese,lettuce & mayo.

-After rolling up,what u get is a nicely wrapped up yummy~licious prata roll.

Sambal Fried Bee Hoon

Its been such a long time since i last ate sambal fried bee hoon.
Still remember the 1st time i had this was when i was ten yrs old, ate it at my fren's b-day party. Her mum was a great cook. Everyting taste so nice

Immediately after i reached home, request my mum to cook this dish for our family.All i need to do is tell my mum wat are the taste of the bee hoon & we improvise on the taste.

Simple ingredients needed;
1-2 tbsp of sambal dried shrimp(hei bee hiam)
80 gms bean sprouts
1 pkt of dried been hoon,soaked
240-280ml water or stock
Salt to taste
Oil for frying

Method;
After frying the sambal dried shrimp,set aside to cool.
Without washing the wok, add water to boil.Season with salt.
Fry bee hoon till water is bout to dry up,add bean sprouts.
Fry till water totally dries up,add in sambal dried shrimp,toss well.
Enjoy!

This dish is so fantastic,u can even eat it on its own. No side dish is required.
However, my dad's fren bought us crab from JB. Yum yum....it indeed goes well with our bee hoon.

The unique taste of the crab is something u cannot find outside. Those crab that we normally eat outside are mostly chille,cheese with butter,black pepper etc....

But this,u can taste the sambal dried shrimp(hei bee hiam)taste,with a touch of curry leaves & eggs.Its reali delicious. It just so happen to match my hei bee hiam theme for the nite. Haha....

Longan Konnyaku Jelly

Our family normally dun go for konnyaku jelly or agar agar. However, as i was having a crave, i decided to make some jellies.

Simple & easy,juz follow instructions on the pack & add in watever fruits that u like.
But i added the longan syrup when cooking the jelly mix.Yummy!

Almond Jelly with Longan

Been having a sweet tooth recently. I prepared my dad's favourite dessert. You know something? i used to hate almond jelly? Coz it smells like bed bugs. haha.....
But until i came across holly farm brand of almond jelly mix,tt gave mi the courage to give it a try.

Juz need to follow instructions on the pack, allows 3 hrs to cool & chilled b4 cutting.

Serve chilled with a can of longan fruits. Enjoy!

Potluck

Today is 8th August,its National Day! Wishing our beloved homeland a happy 43rd b-day.
We had a potluck party at my fren's house. Lots of yummy delicious food!


My favourite Mee Siam
Other than savoury buns, there were steamed siew mai,fried wantons,chicken strips, cakes etc....My fren's godma cooked our favoutite oxtail stew. Hee...but i forgot to take pic for it as we were too busy eating. haha....



Triple Indulgence Cheesecake- a very sinful cheesecake top with heavy chocolate ganache.

Yummy~licious tiramisu served in wine glass.Its my favourite dessert for the nite.
Assorted Savoury Buns which my fren prepared. Using besic sweet dough bread recipe, top with her favourite egg mayo & luncheon meat.

Ingredients for biscuit base;
300g digestive biscuits
140g melted butter

Ingredients for fillings;
250g cream cheese
10g gelatine powder
50g sugar
½ cup hot water
½ tsp vanilla essence
20 strawberries-use a heart shaper cookie cutter to cut into heart shape

Toppings;
1 box strawberry or raspberry flavour jello
1 ½ cup hot boiling water
1 ½ cup cold water

Method;
-Prepare base by mixing biscuit crumbs with melted, press onto a 10’ square tray.
-Place in freezer to harden.
-To prepare filling; dissolve gelatine powder in hot water.
-Beat cream cheese with sugar & essence till smooth, stir in gelatine mixture.
-Pour mixture onto chilled base, smoothen.
-Arrange strawberries onto fillings, place in fridge to set.
-For topping, dissolve jello in water & sugar, leave to cool completely.
-Pour over fillings, chill in fridge until firm.
-Cut into square & serve.
-Enjoy

Dinner @ Pinsi

We attended a company dinner at Pinsi last evening. Well, the dishes were not too bad.Presentation also very nice.

Table setting b4 any dish was serve. In actual fact is we are waiting hungrily for the food to be serve.

Six Varieties Cold Dish Combination~~(salad prawn,popiah,sea clam,pork sausage,chicken chop,gui hua fried egg)
