干抄咖哩龙虾球

Dad's fren bought supper for our family all the way from a seafood restaurant in malaysia.All i have to do is to heat up in a oven & its ready! Yummy!

Its LOBSTER! Yeah! Cheers! Cooked in a special & unique way.
In fact, this is the 1st time i had lobster in dried curry style. I ever ate crabs cooked in this way, oso from the same restaurant.

Other than the mild curry taste from the paste, the special chilli paste that's added contains dried shrimps which brings out a special taste for the whole dish.

Wat a fantastic supper! :-)

Spicy Tofu with Prawns

This is our family's all time favourite. The gravy goes perfectly well with the fried mantou.Hmm... Yummy!

Ingredients,
5 shallots, chopped
3 chili padi, chopped
1½ tsp chili paste
3 tbsp tomato ketchup
2 tbsp water
½ tbsp sugar
Dash of salt
4 eggs, beaten
1 box firm tofu
8 medium prawns
Oil for frying

Method;
-Remove veins from prawns without removing the shells.
-Cut tofu into 3cm by 2 cm small pieces, deep fried in hot oil till golden brown.
-In a clean wok, fry shallots & chili padi with 1 tbsp oil.
-Add chili paste, tomato ketchup, sugar, salt & water.
-Add in prawns, give it a quick stir, cooked till prawns turn red.
-Stir in beaten eggs & tofu, cook for a min.
-Serve with fried mantou.
-Enjoy!

桂圆白果糖水

Mum suddenly had a craving for something sweet. She loves 桂圆 & since i bought ginkgo nuts the previous day, i decided to cook 桂圆白果糖水.

Ingredients;
120g dried longans
15 red dates
150g ginkgo nuts
80g sugared water chestnuts, cut into strips
1 small pc rock sugar
4 pcs of pandan leaves, knotted
1500ml water

Method;
-Remove shell, skin & black valve from ginkgo nuts.
-Bring water to boil, add in pandan leaves & red dates.
-Add in ginkgo nuts, boil till it expands a little.(about 5-8mins)
-Stir in dried longans & water chestnut strips.
-Simmer for about 10 mins, add in rock sugar.
-Serve!

海鲜酱肉丝卷

Something new & interesting ya, 海鲜酱肉丝卷 can be serve as a starter b4 having any main course. Been wanting to try something out with hoisin since few weeks ago. But there's always many dishes on my mind where i wanted to cook.


Ingredients;
380g pork loin
½ tsp baking soda
1 tbsp oyster sauce
½ tbsp light soy sauce
1 tbsp corn flour
2 glove garlic, chopped
1 small cucumber, shredded
Some lettuce
Oil for frying
Some roasted sesame seeds
1 pkt Vietnamese rice paper

Sauce;
2 tbsp hoisin sauce
1 tbsp tomato ketchup
1 tbsp oyster sauce
1 tsp sesame oil
2 tbsp water

Plum sauce;
2 tsp plum sauce
1 tbsp lemon paste
1-2 drops dark soy sauce
½ tbsp sugar
2 tbsp water

Method;
-Cut pork loin into thin strips, marinate for 30mins with baking soda, light soy sauce & oyster sauce.
-Add corn flour, mix well.
-Heat oil in wok, fry garlic till fragrant, add in pork strips, stir quickly with a pair of chopsticks.
-When meat is bout 70% cooked, add in ingredients for sauce.
-Cover, simmer for about 3-5 mins till sauce dries up.
-In another clean wok, prepare plum sauce & set aside for later use.
-Soften rice paper in warm water, wrap with cucumber & meat strips.
-Serve on lettuce, drizzle plum sauce over, garnish with roasted sesame seeds.
-Enjoy!

Oven Baked Potato Wedges

This is a healthy & delicious snack. Oven baked wedges are much more healthier as compared to those deep fried.
Ingredients;
2 potatoes

1 tbsp oil

½ tsp chili powder
Dash of salt

Method,

-Scrub potatoes clean & cut into wedges.
-Add oil, salt & chili powder.

-Bake in preheated oven at 200ºC for 20mins or till golden brown.

-Serve with chili sauce.
-Enjoy!

Fried Carrot Cake (Char Kway)

I'm not scheduled to go into office today, hmmm... wat a rare saturday for me. Guess wat's for breakfast? i cooked char kway for my family.
Too bad dad went to office early this morning, he didn't have a chance to eat my 2nd attempt of char kway.Hopefully, better luck next time. haha....

Adam,mum & Jesper had white carrot cake for breakfast as they prefers the crispyness of the egg.
However, i beg to differ. Black carrot cake has its own unique taste & style which taste completely different to the whites.
Other the the slight saltyness of the cai po, it oso has the fragrant sweetness of the sweet dark sauce.Hmm.... yummy!

When i was a child, my mum would buy black char kway from the market for me. brings back childhood memories ya! haha...


Steamed carrot cake ingredients;
200g rice flour, sifted

480ml water

1/2 tsp salt

1 tbsp water

5 baby carrots, shredded

-Mix well & steam for 30mins.

-Cool completely & cut into small pieces for frying.

-Enjoy!

Herbal Tea Eggs

I've always loved herbal tea eggs. i would always buy some whenever i come across, especially in jb.The very 1st time i had herbal tea egg was when i was in jb for the very 1st time.
Its reali totally different in taste as to those u had in singapore's pasar malam. Malaysia's had a very strong & fragrant herbs smell.

I came across this herbal tea eggs herbs mix when i was shopping last nite, excitedly went home to try out.
I used a slow cooker to slow cook it until this morning & that's for breakfast! haha.....
Ingredients;
10 eggs
Dash of salt
1 sachet herbal tea egg herbs mix
10g pak kei
5g kam chou
½ tsp salt
1 tbsp light soy sauce
½ tbsp dark soy sauce
Water

Method;
-Boil eggs with a dash of salt & water for 15 mins.
-Use the back of a spoon, gently tap egg shells till crack.
-Return eggs to pot, add water till it covers the eggs completely.
-Add in the remaining ingredients, brings to boil.
-When full boil, transfer to a slow cooker & simmer for 4 hrs.
-Enjoy!

This is the type of herbal tea egg herbs mix which i bought. There are 2 sachets inside, can be used for 2 recipes. I add on additional herbs as i find it too bland & not fragrant enough.

黑木耳蛋花汤

Had a sudden crave for 蛋花汤 & i remembered that i used to drink this soup during my childhood.
Think Adam haven got a chance to taste this soup & so, i cooked this as an additional dish for dinner last nite.
Ingredients;
1 pkt dried black fungus, about 30g
2 beaten eggs
150g minced pork
1 tsp corn flour
450ml stock
Dash of salt
1-2 drops of vegetable oil
Some spring onions & coriander, chopped

Method;
-Soak dried fungus in water till it bloomed, remove any hard stalks.
-Marinate minced pork with dash of salt & corn flour.
-Bring stock to boil, add black fungus & drop teaspoonful of minced pork into the soup.
-Let it comes to full boil, pour in beaten egg.
-Continue to boil for 1-2 mins, season with dash of salt, stir well.
-Serve with chopped spring onions & coriander.
-Enjoy!

*Do not soak in hot water, the black fungus will become sour.

糙米炒饭

I've always like brown rice. In fact this is the 1st time i'm using it to cook fried rice.
Well, had a sudden urge to eat brown rice fried rice as i'm wondering how will it taste like?
Requested mum to prepare some cooked brown rice last evening. I use them to cook fried rice when i reached home after work yesterday.

It taste great! Its not too dry & grainy! Hmmm... maybe next time can try out to cook mui fan! haha....

Ingredients;
1 cup cooked brown rice
2 eggs, beaten
1 shallot, sliced
1 garlic, chopped
1 tbsp olive veggie
1 sliced ham, diced
½ tbsp olive oil
½ tsp fried cai po

Method,
-Heat wok, on a non-stick pan, scrambled the eggs. Remove & set aside for later use.
-Add oil, fry garlic & shallots till browned & fragrant.
-Add in brown rice, fry till loosen & grains are individual.
-Add in olive veggie, cai po, ham & scrambled eggs.
-Garnish & serve.
-Enjoy!


*No seasoning added as the olive veggie & ham already has a slight salty taste in them.
*The fried cai po can be prepared 1 day in advance. Simply chopped the cai po strips & fry them with garlic & oil.
*Cai po strips taste crunchier & less salty as compared to those ready packed chopped cai po.

海参鲍鱼鸡汤

I went to 福华人参燕窝行with my dad on sunday, we bought 1/2 a dozen of abalone.And so,海参鲍鱼鸡汤will definately be 1 of our dinner dishes the next day.
1 can abalone, sliced
1 cup abalone water
1 sea cucumber, cut into nugget size
5 dried scallop
½ chicken, chopped into palm size
Dash of salt
1 tsp pepper seeds
5 clove garlic
800ml water

Method;
-Open a can of abalone, set aside the water for later use.
-Sliced abalone thinly, chilled in fridge till ready to eat.
-In a clean pot, boil sea cucumber with some water to remove the smell & to ensure it is soft enough. Remove & set aside for later use.
-Mix 800ml water with 1 cup abalone water, bring to boil.
-Add pepper seeds, garlic(with the skin attached) & chicken.
-Boil for about 20-30mins, add in sea cucumber & dried scallop.
-Simmer soup for 1 hr.
-Season with dash of salt.
-Serve with abalone slices.
-Enjoy!

Pickled Lettuce with Pork Slices

A very simple yet delicious dish. Our family been eating this dish occassionally & its goes perfectly well with plain white rice. The gravy is fantastic.
Ingredients;
300g 五花肉
1 can pickled lettuce
3 glove garlic, chopped

Dash of salt
1 tbsp oil for frying

Method;
-Heat wok, add 1 tbsp oil.
-Fry garlic till brown & fragrant.
-Add in sliced 五花肉, fry till meat is half-cooked.
-Add in 1 can pickled lettuce & the soy sauce in the can.
-Mix well, cover & simmer till meat is fully cooked.

-Add in dash of salt.
-Serve with plain rice or brown rice.
-Enjoy!

Twisted Sausage Buns

I been wanting to try out Agnes Chang's bread recipe. I used 1 portion of basic sweet bun dough to make these buns.

Ingredients;
(A)
400 high protein flour}sifted
100 low protein flour}sifted
10g milk powder
1 tsp salt
1 tbsp yeast
100g caster sugar
1 egg
220ml water

75g butter
10 chicken franks, cut into half
Low fat mayonnaise
Pork floss

Method
-Mix (A) to form into dough
-Add butter, knead till gluten is form
-Cover with a wet cloth & leave to rise till double the size
-Punch down & knead again till smooth
-Knead the dough lightly to release gases produced in the proving process.
-Divide into 50g portions, roll into balls and rest for 5 minutes.
-Roll each dough into rectangle shape.(width of dough should be the same as the length of the sausage)
-Place sausage on a rectangle pc of dough and roll like a swiss roll
- Cut wrapped sausage roll into 6 equal portions, leaving a thin joint of dough in between each portion.
-Cross the first and the last joints to obtain pattern.
- Place on a greased baking tray and leave to rise for 30 minutes.
-Glaze with egg wash, bake in preheated oven at 210ºC for 15-20mins.
-Cool the sausage bread on a cooling rack.
-Drizzle with low fat mayonnaise, top with pork floss.
-Enjoy! Its reali yummy~licious.

Hi-tea Party (Tabby's B-day)

I was being invited to a hi-tea party yesterday. It was my best fren -Tabby's b-day celebration.
Being my best fren's special occassion, i'm reached early to help out & prepare some food.It sort of like becomes a habit for me to help out with the food preparations whenever there's a party or BBQ function.

Well, we had lots of fun cooking together & our fruits of labour are as follows;

Tabby learnt this Satay Bee Hoon from the community club few weeks ago, & here it is, our main course for the party.

These are the assorted ingredients & garnishes to go with.Hmmm...many of the guests comment that how come there wasn't a single prawn or cockles! Haiz...

Tabby's mum favourite~Mushroom & Cheese Pizza

Assorted Bacon Wrap~ I prepared variations of pineapples, crabmeat sticks & chicken franks.

I received many feedbacks that the crabmeat & pineapples wraps taste great.Especially the wraps with pineapples, goes well when u dipped in thai chili sauce.
Twisted Sausage Buns & Pizza Bread Buns

Grilled Satays!!! As for the sauce, hee.... Prima taste premix satay sauce was used.
Tabby's mum signature dish~ Bo Bo Cha Cha! A well like desserts by all the guests.

Other that these few dishes, we oso had chicken rice with salted baked chicken, new york cheesecake, almond jelly with longans etc....

Pearl Beans Pork Ribs Soup

The last time i had this soup was more than 10 yrs ago, when Adam hasn't reach the age to attend pre-school.Its reali ages ago ya!
Happened to come across these pearl beans at the supermarket few days ago. It reali brings back some childhood memories.Well, decided to buy some to cook soup.

Ingredients;
500g pork ribs
300g pearl beans
15 red dates
Pinch of salt
Pot of boiling water

Method;
-Wash & clean pork ribs. Remove excess fats.
-Boil pork ribs in a pot of boiling water for about 20mins.
-Add in red dates, continue to boil for another 20mins.
-Add in the pearl beans, cook for another 30mins.
-Add a pinch of salt to taste.
-Serve hot!


Only the beans can be eaten, the outer layer gotto be discard.

Soy Fried Noodles

My bottle of sweet soy sauce had been sitting in the cupboard since my hand roll popiah post. Hmm... should use it to fry some noodles, but there's not much ingredients at home.
So, here it is, my simple Soy Fried Noodles.

Ingredients;
1 pkt egg noodles
1 pot boiling water
2 beaten eggs
8 medium prawns
80g bean sprouts
3 baby carrots, shredded
2 crabmeat sticks, shredded
1 clove garlic, chopped
80ml -100ml stock
Some sweet soy sauce (about 1 tbsp ++)
½ tbsp dark soy sauce
Dash of Salt
½ tsp sambal chili
Oil for frying

Method;
-Remove shell & veins from prawns, set aside for later use.
-Prepare noodles by boiling them in hot water, loosen them. Drained & run under cool water. Set aside for later use.
-Heat wok, add some oil, scrambled the eggs, dish out set aside for later use.
-Add half the chopped garlic into the oiled wok, fry till fragrant.
-Add carrots, fry till slightly soft, add bean sprouts & shredded crab meat sticks. Fry for about 3 mins, dish out set aside for later use.
-Add 1 tbsp oil into wok, add in remaining chopped garlic. Fry till fragrant.
-Add in sambal chili, dark soy sauce, salt & stock.
-Toss in the noodles, stir fry with a pair of chopsticks to ensure that the noodles are well tossed. Fry for about 3 mins till sauce is bout to dry.
-Drizzle some sweet soy sauce over noodles, toss well.
-Add in bean sprouts, scrambled eggs & prawns. Fry till prawns are cooked, noodles not too wet.
-Sprinkle roasted sesame seeds over & serve.
-Enjoy!

Ham & Cheese Omelette Sandwich

Adam had a well balanced nutritious breakfast this morning. Ham & Cheese Omelette Sandwich Set for breakfast!
Being quite concern with foods which we eat, i insisted on using skimmed milk & low fat cheese with cooking.
Another issue is, it muz be complete with greens or fruits.

Ingredients;
2 Slices of high calcium white bread
1 slice of low fat cheese
½ slice of low fat cheese, cubed
1 slice of carrot ham or breakfast ham, cubed
2 tbsp skimmed milk
1 beaten egg
2 tbsp baked beans
Some shredded lettuce
Slices of tomato
Tomato ketchup

Method;
-Prepare egg mixture with egg, ham & skimmed milk.
-Heat a non-stick frying pan, pour in egg mixture.
-When the omelette is bout to set, top with the cubed cheese.
-Fold omelette into half to form a semi-circle
-Serve on bread, top with a slice of cheese & some tomato ketchup.
-Serve the sandwich with greens & baked beans.
-Enjoy!

Spicy Ikan Bilis

Wonder wat's so special bout this side dish? My elder brother & Adam were crazy over it. In fact, my elder can finish 1 big bottle with a nite.
I used to hate ikan bilis, but i grew to appreciate them as time goes by.

Ingredients;
200gm ikan bilis
80g peanuts
2 chili padi, chopped
Some lime leaves
½ tsp chili paste
½ tbsp fine sugar
Oil for frying

Method;
-Remove & discard stomach & unwanted stuff from ikan bilis, peel them into half.
-Heat wok, add some oil, fry the peanuts till cook. Remove & set aside for later use.
-Add more oil, fry the ikan bilis till crispy & golden brown. Remove & set aside.
-In a clean wok, add ½ tbsp oil, fry chili padi & lime leaves till fragrant. -Add chili paste, continue to fry for 2-3 mins.
-Add sugar, fry for another 1 min.
-Return ikan bilis & peanut to wok, fry together with chili mixture till well coated.
-Serve with plain rice or nasi lemak.
-Enjoy!

Tapioca Kueh

Granny gave our family some raw tapioca.I made some tapioca kueh & gave my neighbours & colleges a sweet treat!

Ingredients,
1 medium size tapioca
5 inches pan x 2
3 tbsp castor sugar
1-2 drops pandan paste
1 tbsp thick coconut milk
3 tbsp brown sugar (orange colour sugar served in putu mayam)

200ml water

Grated coconut with pinch of salt

Method;
-Grate tapioca, divide into 2 pans.
-For pandan flavour, add coconut milk, castor sugar,pandan paste
-Stir in 100ml water slowly.
-For brown sugar flavour, add in brown sugar, stir in water slowly.
-Steam both pans on high heat till cooked, when inserted wooden chopstick comes out clean.
-Cool completely, cut into small pieces, roll onto grated coconut.
-Enjoy!

Bacon Wraps

Mum has been watching korean dramas eversince the trend started in Singapore. Since she dun munch on tid-bits, I made her some bacon wraps.
And guess wat? They are the perfect snacks. But but.... u noe, gotto workout after u had them. Rather fattening! haha....


-Simply roll cherry tomatoes, chicken franks with bacon.
-Grill untill bacon browned.
-Serve with salad.

Singapore Laksa

Dad came home with 2 pkts of laksa premix last nite.We decided to give it a try. Went to market early this morning to get the ingredients & garnishes. Our laksa breakfast is fast to cook, gd to eat!

Less than half an hour, our Yummy~licious Singapore Laksa is ready.

These were the few garnishes to go with the laksa when serving.

I used Prima Taste laksa premix. Juz need to follow the instructions of the pack. The onli additional ingredients which i add is 55g of pounded dried shrimps. Hmm... its so delicious.

Croutons Prawn Bombs

Whenever i'm not working, i will always prepare snacks or other yummy treats for Adam.This is oso a long forgotten snack which i iused to prepare few yrs back.

Croutons prawns bombs served with spicy mayo sauce

Ingredients;

15 big prawns

3 water chestnuts

3 baby carrots

1 stalk spring onions

Dash of pepper & salt
½ tbsp sesame oil
½ tbsp cornflour
Frozen croutons from 3 slices of bread
Oil for deep frying


Method;
-Remove shells & veins from prawns, chopped finely.
-Peel water chestnuts & carrots, chopped finely.

-Season prawns, carrot, water chestnut & chopped spring onions.
-Scoop prawn mixture with a teaspoon, roll balls onto frozen croutons.

-Coat well, pressing tightly to ensure prawn balls are firm.
-Freeze them in the freezer for about 30mins.
-Deep fried balls in hot oil till golden brown. -Serve with spicy mayo sauce.
-Enjoy!

Spicy mayo sauce;

-Simply mix low fat mayo with chili sauce
-Ratio of mayo to chili sauce is 3:1

-Mix well, serve with any fried snacks

Curry Chicken with Lemon Grass

When comes to cooking curry, adding lemon grasses to curry chicken has always been our family style.
Its said to reduce the rate of having a bloated tummy.Hai yo, all these old sayings, its better to believe.

Thick & creamy delicious curry which goes well with almost everything, especially rice or breads.
Normal practise for me is to prepare curry chicken baked rice with it.This time round, there will be a different way of serving.That is .........with pratas!


Our yummy~licious dinner; Curry chicken served with onion egg pratas.
Shiok Shiok....

Ingredients,
1 fresh chicken, chopped
3 big potatoes, wedged
3 stalks lemon grass
150ml coconut milk
2 cups water
2½ tbsp curry powder
½ tbsp chili paste
½ tbsp sugar
¼ tsp salt
5 clove garlic
12 shallots
4 chili padi
Oil for frying

Method,
-Finely chopped garlic, shallots & chili padi.
-Flatten lemon grass with knife blade.
-Deep fried potato wedges in hot oil till golden brown. Drained & set aside for later use.
-In a clean wok, heat 1 tbsp oil
-Fry garlic, shallots & chili padi till fragrant, slightly browned & add in lemon grass.
-Add chili paste, salt & sugar, fry for about 5 mins.
-Stir in chicken, keep frying until chicken is 70% cooked.
-Pour in 2 cups of water, cover the wok to simmer till slightly dry.(about 12mins)
-Remove cover, add in potato wedges, mixed well, cover for another 5 mins.
-Remove cover, add in coconut milk.
-Cook for another 5-8mins until chicken thoroughly cooked.
-Enjoy!

Onion Egg Prata

I been craving for pratas for weeks, how i wish there's curry to go with. Hmm... lazy me comes up with a great idea.Something unique which i can make out of frozen food.
I used frozen plain roti pratas to make them into onion egg pratas.
My all time favourite pratas which i will order whenever i'm having roti pratas outside.

Ingredients,
5 pcs frozen roti pratas
2 small eggs, beaten
1 large onions, thinly sliced

Method;
-Brush beaten egg on a slice of frozen prata
-Sprinkle some onions on prata & drizzle some beaten egg over
-Fold prata into half to form a semi-circle
-Seal edge with a fork
-Freeze them into freezer b4 pan frying
-Pan fried prates in a oiled pan till golden brown
-Serve with curry

我的“美人茶”

美人茶, a tea which i been drinking for the past 2 yrs. How it got this name?
Well, few yrs back when i was at a medical hall buying ingredients to prepare this tea, the lady who served me was telling me that i reali noe what's good for me.
To maintain gd health & complexion, drink this tea is a good choice.

Ingredients;
1 handful 贡菊 (白菊花)
2 tbsp dried 玫瑰花
1 tbsp wolfberries
1 small pc 石蜂蜜
1 flask hot water

Method;
-Wash & drained all ingredients except 石蜂蜜.
-Place them together with 石蜂蜜 into a flask, pour hot water over.
-Cover flask & set tea aside for 10 mins.
-Enjoy!

*This 美人茶 of mine, with the few ingredients;
*菊花- cooling effect & is good for our health.
*Wolfberries- good for the eyesight & enable rosy cheeks.
*玫瑰花 goes perfectly well with 贡菊.
*石蜂蜜 enhances the taste of the tea.

Coffee Break

What beats having a cup of hot mocha in the office during break time! I'm having a great time in office. Cappuccino mocha is my favourite coffee in office.
This CappaRomA brand 's of cappucino series is unsweetened & low in fat contents.
After my coffee break, our clients bought us some pineapple pastries from taiwan & aunty poh choo bought us some cakes from a bakery in ang mo kio. Yum yum...such a buttery sinful act. haha... :-p

Fried Egg Noodles

A simple yet delicious dinner.
Other than this main dish, we had some other side dish like spring rolls, broccoli, greens & mushrooms to go with.

Oops... i forgot to sprinkle some fried shallots & roasted sesame seeds on top b4 i eat. It smells to wonderful & delicious. My hungry stomach couldn't till wait den. haha....

I used the fat chef logo egg noodles. After boiled & fried, its still springy & QQ. Whereas other brands which i tried are soggy. Hmm... so far this is the best. There might be other better type which i haven come across. :-)

Ingredients;
1 pkt egg noodles
1 pot boiling water
4 medium size mushroom
5 baby carrots
5 medium prawns
3 crabmeat stick
2 handful of bean sprouts
2 eggs
Some lettuce ,shredded
1 clove garlic, chopped
1 shallot, sliced
½ cup mushroom water
Dash of salt
½ tsp sambal chili paste
2 drops of dark soy sauce
Oil for frying

Method;
-Remove shell & veins from prawns, set aside for later use.
-Soak mushroom in hot water for 30 mins, drained & slice thinly. Set aside mushroom water for later use.
-Prepare noodles by boiling them in hot water, loosen them. Drained & run under cool water. Set aside for later use.
-Heat wok, add some oil, scrambled the eggs, dish out set aside for later use.
-Add half the chopped garlic into the oiled wok, fry till fragrant.
-Add carrots, fry till slightly soft, add bean sprouts & shredded crab meat sticks. Fry for about 3 mins, dish out set aside for later use.
-Add 1 tbsp oil into wok, fry the sliced shallots till browned, add in remaining chopped garlic. Fry till fragrant.
-Add in sliced mushrooms, fry for about 5 mins, add in mushroom water, sambal chili paste & seasoning .
-Toss in the noodles, stir fry with a pair of chopsticks to ensure that the noodles are well tossed. Fry for about 3 mins till sauce is bout to dry.
-Add in bean sprouts, scrambled eggs & prawns. Fry till prawns are cooked, noodles not too wet.
-Sprinkle shredded lettuce over, mix well & serve.
-Enjoy!

Unsual Sight of 琼花 Blooming

琼花also known as Keng Hua in hokkien.

Still remember when i was in primary school, my form teacher used to tell us that this kinda flower only bloom during midnight & onli for a short while, after it bloomed for that few minutes, it will fall off the following day.

At that point of time, i was thinking; that means whoever gets to see this flower bloom will be very lucky.

My neighbour planted this plant not long ago, but whenever i walked past her house, i onli get to see this.....1 bout to bloom, the other finished blooming, bout to fall off. Haiz...........no luck.

And finally, its my lucky nite. I get to witness the whole blooming process last nite at about 11.24pm when i was on my way home.

There it is! Beautiful ya?!?!

Spicy Prawns in Pineapple Rings

This is a new try out dish on my menu. Its been on my mind for several wks. Finally there's a chance for me yesterday.
I spent some times to prepare & its was gone in less than 5 mins. Hmm.... Adam & mum were so quick! haha...
This is reali fantastic, yummy & appetizing.Haiz...regretted, i should had prepared more servings instead! :-P


Ingredients;
5 pineapple rings, canned
15 medium prawns
Iceberg lettuce
Some baby romaine
5 cherry tomatoes
3 tbsp thai chili sauce (soup spoon)
1 tbsp roasted peanut, chopped
Some roasted sesame seeds

Method;
-Remove pineapple rings from fruit can, soak pineapple rings on kitchen towel to remove excess water from pineapple.
-Bake pineapple rings in preheated oven toaster for 20 mins, bake the pineapples to dry them a little.
-Boil prawns, soak in ice cubes. Remove shells & veins, halved.
-Shred lettuce, lay on plate. Halved cherry tomatoes.
-Arrange pineapple rings on place, top with cherry tomatoes & baby romaine.
-In a separate bowl, mix prawns with thai chili sauce, coat evenly.
-Arrange prawns onto pineapple rings.
-Add 1 tbsp roasted chopped nuts to remaining chili sauce, mix well. Scoop mixture onto well lay prawns.
-Sprinkle some roasted sesame seeds over.
-Serve as a salad.

梅酱肉

I've always love this dish, but haven had it for such a long time. Yesterday had a sudden crave & decided to cook this for dinner.

Ingredients;
800gm 五花肉, cubed
½ tsp baking soda
1 tbsp light soy
1 tbsp sesame oil
Dash of salt
2 tbsp cornflour
2 tbsp potato starch
Oil for deep fry
Garnishes & some roasted sesame seeds

Sauce;
2 tbsp plum sauce
1½ tbsp lemon sauce
½ tbsp sugar
1 tbsp oyster
½ tbsp water

Method;
-Marinate pork for 3hrs with light soy sauce, baking soda, sesame oil & salt.
-Use kitchen towel to remove excess water from pork.
-Mix corn flour & potato starch, coat meat pieces with flour mixture. Shake off excess flour.
-Heat oil, deep fried pork pieces till golden brown, drained.
-To prepare sauce; add ½ tbsp oil into wok, add in all the sauces, followed by sugar & water. When sauce slightly thicken, add in the fried meat to coat evenly.
-Garnish & serve with roasted sesame seeds.

Cappuccino

Wat time izzit? 3plus in the afteenoon?!?! Its coffee break! I used to hate coffee, but dunno how come beginning of this yr, i began to accept everything about coffee. I reali believes that its addictive, been drinking coffee in office almost everyday & sometimes twice a day.I'm reali addicted,had a very strong crave for coffee 2day, even though normally i dun drink coffee at home!


I made lazy cappuccino for myself & ice cappuccino for adam. Wat a wonderful coffee break!

Simply
dissolved cappucino(indocafe brand) & an unsweetened coffee(cafe21 lowfat) in hot water, add ice cubes, sprinkle unsweeted coco powder on top.

Mua Chee

Was telling Adam this morning that i might make mua chee for him & becoz of this casual remarks, he been bugging (hmm... can say its gentle reminders) me whole morning.
Since i cancelled my shopping appt with my fren, decided to make some yummy treats for my family.

Ingredients;
300g glutinous flour
420ml water
220g peanut powder
30g roasted sesame seeds
3 tbsp brown sugar
3 tbsp shallots oil
1 tbsp fried shallots
1 tbsp castor sugar

Method;
-Dissolve glutinous flour in 420ml water
-Add 3 tbsp oil to mixture
-Strain mixture onto greased pan
-Steam for 35-40 mins
-While waiting, prepare mixture for coating
-Mix peanut powder, sesame seeds & brown sugar together, set aside for later use
-When steamed mixture is done, remove & stir well
-Sprinkle with fried shallots & 1 tbsp of castor sugar, mix well
-Nib dough into small bite pieces, roll onto peanut mixture
-Enjoy!

栗子鸡饭

Wondering wat to cook for dinner, lazy me decided to cook something quick & easy.Went to the supermart to buy some ingredients after i knock off yesterday. Here i present my 栗子鸡饭.
Ingredients;
2 large chicken drumstick with thigh
5 dried mushrooms
150g chestnuts (ready to eat type)
2 clove garlic (chopped)
Some ginger slices
¼ tsp dark soy sauce
5 tbsp mushroom water
Dash of salt & oil
1 cup rice
Water for cooking rice
Oil for frying

Marinate;
1½ tbsp oyster sauce
1 tbsp light soy sauce
1 tbsp sesame oil
¼ tsp brown sugar
Dash of salt

Method;
-Wash & dry chicken, remove bones & cut into bite pieces.
-Marinate chicken & set aside in fridge for at least 3hrs.
-Soak mushroom in hot water till bloom, squeeze out excess water from mushroom, cut into slices. Set aside mushroom water for later use.
-Start cooking rice in the rice cooker as per normal procedure with water, salt & oil.
-Heat wok, add some oil, fry garlic & ginger till fragrant.
-Add chicken & mushroom, fry until chicken is half cooked.
-Add in mushroom water & dark soy sauce.
-When comes to boil, add in chestnut.
-Cook till chicken is 80% cooked
-Check the rice in the cooker, when water is bout to dry, top the rice with chicken.
-Let the chicken sits in the rice cooker till well done.
-Give the chicken rice a good stir, keep warm in the cooker.
-Serve with stir fry chye sim.
-Enjoy!

京都排骨

Been wanting to cook this dish since last sunday. Went to the market to purchase some spare-ribs early this morning.



Ingredients;

10 big pieces spare-ribs
3 tbsp corn flour
Vegetable oil for deep frying
Some roasted sesame seeds

Marinate;
½ tsp baking powder
¼ tsp salt
½ tbsp light soy sauce
½ tbsp sesame oil

Sauce;
3 tbsp plum sauce
2 tbsp oyster sauce
2 tbsp tomato ketchup
2½ tbsp black vinegar
2 tbsp water
½ tbsp sugar
½ tbsp vegetable oil

Method;
-Marinate spare-ribs, set aside in fridge for at least 3 hrs b4 deep fried.
-In a clean bowl, mix plum sauce, oyster sauce, tomato ketchup, vinegar & water together. Set aside for later use.
-Remove spare-ribs & discard marinate.
-Coat spare-ribs with 3 tbsp corn flour, deep fried in hot oil till golden brown.
-To prepare sauce, heat ½ tbsp oil in wok, add sugar, sauces & water.
-When sauce is bout to dry up, add spare-ribs into the wok, coat spare-ribs evenly in the sauce.
-Serve with roasted sesame seeds.
-Enjoy!

Dinner Feast @ Home on Public Holiday

Its Hari Raya today! Yes!!! A long waited public holiday ever since our national day! U noe, working adults reali reali looked forward to PH where we can break free from bz work, even though its onli for a day.

Well,i reali looked forward to sundays & public holidays where i will be at home.
My parents & i will be in the kitchen bz preparing dinner together.That's the time where i get to learn some culinary skills from them as well! haha...But other that that, i oso need some creativity to comes up with new dishes :-P

As mentioned b4, my dad specialise in fish & tofu dishes,whereas my mum prefer to cook simple dishes. Lucky there's always me around in the kitchen, where i get to try new recipes for new dishes.
Dad cooked the following dishes while mum is bz helping with preparation, cutting & washing. As for me, i contributed 京都排骨.

Tri-colour Stir Fry Bittergourd~simply fry bittergourd,onions,carrots,button mushrooms with some chopped black beans,chili & garlic.

My all time favourite~Pickled Lettuce with Tofu

Dad invented this dishes sometimes back, ever since he will cook this dish upon request or whenever any of us has crave for it.

Another of my favourite~Srit Fry Leek with Sea Cucumber.
