Dunno how come these few days i been having a crave for spicyness. Maybe its due to the light & bland meals i been having for the past few days.
Though this fried冬粉 looks so so onli, but its reali fantastic. The冬粉 soak up all the flavours from the sauces, dried shrimps & mushrooms, making it so full of flavours. 冬粉 is springy,with the crunchyness of the bean sprouts & carrot sticks, wow....i can't help having a 2nd serving. :-P
Ingredients;
250g 冬粉
1 clove garlic, minced
30g dried shrimps
50g minced pork
50g bean sprouts
3 dried mushroom, soak & slice finely
6 baby carrots, shredded
½ Japanese cucumber, shredded
5 french beans, shredded
Oil for frying
Sauce;
1½ tbsp oyster sauce
2 tbsp rojak flower sambal chili paste
150ml dried shrimp water+200ml water
¾ tsp dark soy sauce
Dash of salt
¼ tsp msg
Method;
-Soak 冬粉 in water for 30mins till it slightly expand, drained.
-Soak dried shrimps in water for 10 mins, drained.
-Fry minced garlic in hot oil, add bean sprouts & fry till cooked. Remove.
-Fry dried shrimps till fragrant, add minced pork & fry till 80% cooked.
-Add carrots, mushrooms, french beans, continue to fry for 3 mins.
-Add cucumber, fry for another min. Remove.
-Bring sauce to boil, add 冬粉 & all the cooked ingredients.
-Stir fry for 1 min till well mixed & sauce slightly dries up.
-Serve while hot.
-Enjoy!
*Do not stir fry 冬粉 for too long as they tend to get lumpy.
*Add more water if mixture is too dry.
