脆菜心肉碎豆腐

Dad prepare this dish once and the tofu was deep fried version which i find too oily and high in calories. Since dad wasn't at home in the evening, i decided to cook my healthier way of tofu.

Ingredients;
1 box tofu
1 handful minced pork
1 shrimp, diced
1 water chestnut, chopped
Light soy sauce
Pinch of salt
30g chye sim pickles, cut into strips
1 stalk spring onions, chopped
1 tsp hei bee hiam
1 garlic, minced
1 shallot, chopped
Pinch of salt
Oil for frying

Method;
-Remove tofu from box, place a small chopping board over tofu to squeeze out excess water.
-Pan fry without oil on a non-stick frying pan.
-Place tofu on a serving dish.
-Marinate minced meat with salt and soy sauce, mix in water chestnut and prawns.
-Fry garlic with oil till fragrant, add shallot and fry till lightly brown.
-Add meat mixture and fry till meat change colour.
-Add hei bee hiam and chye sim pickles.
-Mix well, toss in spring onions.
-Top mixture over tofu and serve.
-Enjoy!
Simple yet delicious!
