Pan-fried Tofu In Special Sauce

Yellow bell pepper is my favourite & its the 1 & onli bell pepper which i dare to eat. :-P
As u noe, among the three types of bell pepper (Red, Green & Yello), red is spicy & green has the most awful taste among all, hmm... wonder how come mum would buy them at times to fry with meat.
As for mi, i always go for delicious stuff. haha.....

Ingredients;
1 tube tofu roll
1 garlic, minced
1 wedge yellow bell pepper, diced
80g minced pork
½ tbsp light soy sauce
Dash of salt
½ tbsp cornflour
1 tbsp oil

Sauce;
1½ tbsp tomato ketchup
½ tsp chili paste
3 tbsp water
Dash of salt
½ tsp sugar

Method;
-Marinate pork with soy sauce, salt & cornflour.
-Remove tofu from wrapper, cut into thick slices.
-Place them on kitchen towel to remove excess water.
-Pan fry with little oil till brown on both sides.
-Fry garlic till brown, add minced pork & fry till cooked.
-Add in bell pepper, fry for about 3 mins, do not cook too long as it will lose its crunchiness.
-Stir in sauce, bring to boil & simmer for a min.
-Serve over pan-fried tofu, garnish with some corriander leaves.
-Enjoy!
