Stir-fry Cucumber with Egg

I bought some cucumbers home yesterday & mum was like "R u ok? we already had some cucumbers at home, u buy so much, u wanna do facial izzit?"
I was like "erm erm....(giving a silly smile) i dunno mah, but nvm i can either use it do do facial, eat with salad or or or...find other alternatives.

Ah ha, stir fry with egg lo, tt's wat i saw at some mixed vegetables rice stalls selling at hawker centres.Comes to think of it, veggie which can be eaten raw, if being cooked for too long, they will lose their vitamins, but i dun reali care much for this toime round cuz i wanna try this dish out.Indeed its reali yummy....something light as well.

Ingredients;
3 japanese cucumber
1 red chili, strips
1 egg
30g dried shrimps
1 garlic, minced
Dash of salt
30ml water
Oil for frying

Method;
-Remove skin & seeds from cucumber, sliced them into pieces.
-Soak & drain dried shrimps, reserve water for later use.
-In a heated oiled wok, fry egg for a min & remove.
-Add about 1 tbsp oil, fry dried shrimps till fragrant.
-Add cucumber, fry till slightly soft.
-Add in seasonings, eggs, chili strips & water.
-Cover & simmer for about 3 mins till cucumber soft.
-Serve with plain rice.
-Enjoy!
