Dad bought 4 kgs of ikan bilis, mum & i had been bz over the past few days, juz to peel them. Since we had plenty of ikan bilis, mum had been frying them almost everyday, eating with mee hoon kway & rice.
I suggested to mum that it will be great if we can get to eat them with coconut rice. That rings a bell, its been ages since we last had home-cooked nasi lemak. Not wanting to delay, i went to the supermarket to get the ingredients & we had nasi lemak for dinner last nite.
Ingredients;
2 cups rice
3 pandan leaves, knotted
100ml thick coconut milk
½ tsp salt
1 tbsp oil
Water
Garnishes;
Omelette
Fried kun-ning fish
Fried chicken wings
Spicy Ikan bilis & nuts
Sambal kangkong
Cucumber
Home-made chili paste
Method for nasi lemak;
-Wash clean rice, assemble all ingredients together & put to cook in a rice cooker.
-Serve with garnishes.
-Enjoy!
Method for home-made chili paste;
-Grind shallots & chili together.
-Fry with 2 tbsp oil on low heat for 30mins.
-Adding more oil if it becomes too dry.
-Season with sugar & salt.
