Gingerly Dark Soy Threadfin

Threadfin, oso known as 午鱼 is a kind of fish often eaten by young kids when growing up. Its said to be a better grade of fish with more minerals, helps in kid's growth. I wonder izzit true, but i always hear the older generation says that growing kids muz eat threadfin, its good & expensive.
Oh well, its indeed expensive. Dad bought a 3kg threadfin for about $60+++, but worth the $ cuz its yummy.

Ingredients;
1 portion of threadfin
Pinch of salt
1 pc old ginger (3"size)
1 tbsp oyster sauce
1½ dark soy sauce
½ tbsp sugar
Water
Oil for frying

Method;
-Wash threadfin clean, cut some slits it.
-Rub with some salt, set aside for 5 mins b4 washing off.
-Dry with kitchen towels to remove excess water.
-Cut ginger into thin strips.
-Heat oil for shallow frying, fry threadfin on both sides till cooked.
-Drained, leaving bout 1 tbsp oil in the wok, fry ginger till fragrant.
-Add seasoning & water, bring to boil.
-Return threadfin to wok, making sure that gravy covers the fish, boil for about 5 mins.
-Flip threadfin over, cover with lid & let simmer for another 3 mins.
-When sauce slightly thicken, its ready to be serve.
-Enjoy!
