I bought a huge piece of big fat old ginger when i was at the market yesterday.Its so lovely, its best to boil some giner tea with it. Ginger tea, together with the chinese brown sugar cures tummy discomfort, relieves tummy winds.
The chinese brown sugar i'm talking about is darker in colour as compared to the kinds we normally used for baking.
Ingredients;
1 pc ginger (3” size)
12 red dates
600ml water
5 dried longans
3 tbsp brown sugar
Method;
-Slice ginger into 0.5cm width, hit them with side of a chopper to flatten them.
-Bring water to boil, add all the ingredients except brown sugar.
-Boil on high heat for 5-8 mins, lower heat & simmer for another 10 mins.
-Add sugar to taste.
-Serve hot.
