Jesper will be back for dinner tonite. Dad suggested cooking red snapper as its his favourite.I told dad that i wanna cook them in assam chili sauce & ............as follows;
Yum yum...taste great. I reali loved it when the crispy fish soak up all the flavours from assam & chili. I'm loving it, this is something different as compared to the rojak flower sambal we which we normally have.
Ingredients;
1 tail portion of a big red snapper
Pinch of salt
Oil for deep frying
Assam Chili;
6 shallots, minced
4 chili padi, minced
1 tbsp chili paste
20g assam paste
5 tbsp water
½ tbsp sugar
Pinch of salt
Oil for frying
Method;
-Wash & clean red snapper, sliced into half.
-Season with salt to marinate for about 20 mins, wash off.
-Dry fish with kitchen towels to remove excess water.
-Deep fried in hot oil till crispy & cooked, drained.
-Soak assam paste in water, squeeze & remove residue.
-Add oil to wok, fry shallots & chili till fragrant, add chili paste.
-Stir fry over medium heat for about 15mins.
-Add sugar, salt & assam water.
-Drizzle sauce over fried fish & serve.
-Enjoy!
