Terriyaki Pork With Golden Garlic Flakes

No chicken dish for dinner tonight as everyone seems to be down with a bad cough. It could be due to the weather and virus infect easily. Can't be without meat for dinner as Jesper is a carnivorous. Hence, I decided to play around with pork.

Ingredients;
1/2 strip thick pork belly
1 clove garlic, thinly sliced
Baking soda
Light soy sauce
Pinch of salt
Corn flour
Oil for deep frying

Sauce;
3 tsp terriyaki sauce
1 tsp vinegar
2 tsp light soy sauce
2 tsp tomato ketchup
1/2 tsp home-made chili paste
1/2 tsp chili oil
1/2 tsp sugar
2 tbsp water
Thickening agent

Method;
-Remove skin and cut pork belly into cube, hit the meat and fats with a pounder to loosen the meat.
-Marinade with baking soda, salt and light soy sauce for at least 1 hour.
-Coat with cornflour, shake off excess and deep fried in hot till till brown. Drained.
-Deep fried garlic till crispy and golden brown. Drained.
-Mix sauce ingredients together and bring to boil.
-Thicken with thickening agent, toss in fried pork to coat evenly.
-Sprinkle garlic flakes over and enjoy!

Delicious yummy pork dish where Adam can have more than 2 serving of rice! :-P
