椒盐鸡块

Mum wasn't feeling well these days, hence she wasn't in the mood to prepare dinner. And to her, cracking brain to think of what to cook is considered a tedious job for her. Oh well, the thought of chicken makes me have plenty of ideas and new dishes to cook.

I'll let Jesper to choose among fried chicken/stewed chicken or those with light gravy? Verdict: anything lor! (What's new? this is his usual reply...)

Ingredients:
2 fillet of chicken breast
Corn flour
Rice flour
2 chili padi, cut into thin rings
1 clove garlic, chopped
Some chopped scallions
1/2 tsp salt
Few dashes of ground white pepper
Some black pepper flakes
Oil for shallow frying

Marinate:
Baking soda
Pinch of salt

Method;
-Cut chicken breast into strips, marinate for at least 30mins.
-Mix the 2 flour together and toss with the chicken breast.
-Shallow fry till golden brown, drained.
-Fry garlic and chili in 1 tsp oil till lightly brown and crispy, drained away the oil.
-Return garlic & chili to wok, toss in scallions, white pepper & salt.
-Add chicken, give it a quick toss.
-Serve onto serving plate, sprinkle black pepper flakes over.
-Enjoy!

Jesper was right, this is a perfect dish to go with beer! Lolz...
