Fried Cintan Noodles

The craze for cintan noodles isn;t over yet. Yes, after the noodle lunch for Adam yesterday, I still receive request for cintan noodles. But this time round in a fried noodle version. Having used to eating fried beehoon or fried yellow noodles which is Adam's weekend breakfast, he has a chance to get cintan noodles for breakfast today.

Ingredients;
3 pieces of cintan noodles, soaked till noodles loosen & drained
1 clove garlic, minced
1 small carrots, cut into strips
A handful of beansprouts
Some black fungus, soaked & shred
1 pc fishcake, cut into strips
5 seafood stick, tear into strips
A bunch of chye sim, cut into 3cm length
2 beaten egg
Oil for frying

Seasonings:
Light soy sauce
Dark soy sauce
Oyster sauce
Salt
Sugar
Chili Paste

Method;
-Scrambled eggs & set aside.
-Fry garlic with oil till fragrant, add carrots & fry for a min
-Add chye sims, beansprouts, fishcake, black fungus & seafood stick.
-Fry ingredients for 2 mins & set aside.
-Fry noodles for a min, Stir in seasonings & toss well.
-Stir in all the ingredients & continue to fry until done.
-Sprinkle roasted sesame seeds & serve.
-Enjoy!

Dad used to hate cintan noodles as it gave him a feeling of maggie mee however he was very please with the stir fry cintan noodles today! :-P
