干香鱼

In exchange for my 东坡肉, dad came up with a new creation of his. Oh well, normally dad will handle all methods of cooking for fishes.
His new creation is delicious, it would be perfect if there were ladies finger in it.

Ingredients;
1 fish about 900gm, chopped into pieces
Cornflour
Brinjal slices
1 onion, cut into wedges
2 tbsp stock
Oil for shallow frying

Seasoning;
Curry leaves
Shallots, chopped
Chili paste
Curry powder
Spicy bean paste
Assam juice
Pinch of salt

Method;
-Dust some cornflour over fish, shallow fry till golden brown.
-Fry brinjal slices in oil, drained.
-Fry minced shallots till fragrant, stir in remaining seasonings till fragrant.
-Toss in fish, brinjal & onion, add 2 tbsp stock & simmer.
-Serve & enjoy!
