Apart from the cakes, cookies which we normally had with cooffee as tea-break,dried shrimp kueh makes a good warm afternoon snacks.
I had enough of ba changs for the past few days, other than those we wrapped on our own, as usual my company will give mi a box of changs, plus those which dad's fren gave..........oh gosh,my breakfast, dinner are all ba changs! haha....I feels like eating kueh instead, hmm...at least something for a change.
Ingredients;
90g rice flour
10g tapioca flour
50g dried shrimps, soak & minced
1 stalk spring onions, chopped
Pinch of salt
Dash of pepper
Fried shallots
180ml water
150ml hot water
Method,
-Sift both flours, add salt & pepper.
-Make a well in the center, stir in water.
-Add dried shrimps, spring onions & fried shallots.
-Stir well & add hot water.
-Pour batter into a well greased pan & steamed till cooked.
-Let cool, cut into serving size.
-Mixed 1 tbsp hoisin sauce with ½ tbsp chili paste, add 1 tbsp hot water & mix well.
-Drizzle sauce over kueh, sprinkle some roasted sesame seeds & fried shallots over.
-Enjoy!
