Why is this main course called 太空饭? Well, it orginated from mum decades ago b4 i was born.
Young uncle used to joke that tis is 太空饭as imagine that the astronuts bring this dish up to space & eat, he can get to eat lots of different ingredients as tis rice has almost everything like veggie,meat,mushrooms, shrimps(erm...dried wan of cuz...haha....)
Well, during my childhood days, the very 1st time when mum intro 太空饭 to Jesper & mi, we freak out
The original recipe calls for mustard veggie(instead of cabbage & long beans) as mustard haf a bitter taste, kids like us are unable to accept. That's y mum improvise & replace with cabbage & long beans.Hmm...maybe next time can try out the mustard version.keke....
Ingredients,
1½ cup rice
120g pork belly strips
60g dried shrimps, soak
5 dried mushrooms, soak
5-6 leaves cabbage
1 bunch long beans
Handful of garlic & shallots, minced
Water for soaking mushrooms& dried shrimps
Oil for frying
Pinch of salt
¼ tsp msg
Fried shallots & roasted sesame seeds
Method;
-Wash the 1st 7 ingredients, cut long beans into sections(about 4cm length).
-Tear cabbage into small pieces, drain & cut mushrooms into thin strips. -After soaking dried shrimps for about 10 mins, drain & set aside water for later use.
-On a heated wok, fry ½ portion of garlic & shallots with 1 tbsp oil till fragrant & lightly brown.
-Add dried shrimps, fry for a min.
-Add long beans, fry for another 3 mins b4 adding cabbage, continue to fry for another 3 mins. Remove & set aside.
-Fry the remaining garlic & shallots with 1 tbsp oil till brown, add pork belly strips & fry till 80% cooked.
-Add mushrooms & fry for another 2 mins, return veggie mixture to wok. -Stir in rice & water, season with salt & msg.
-Scoop mixture into rice cooker & cook accordingly, adding more water if required.
-When done, serve with fried shallots & roasted sesame seeds.
-Enjoy!
