Potato Slices in Soy Sauce

The 1st time i had this dish was from a mixed vegetable rice stall when i was in primary. When i was young, i dun reali fancy vegetables, tt's y will order potatoes when eating out.

I loved the softness of the tasty potatoes. Normally the hawkers will deep fried the potatoes slices 1st b4 frying them. I skipped tt step as i prefer a healthier cooking way.
Ingredients;
3 medium holland potatoes, sliced
1 large onion, sliced
80g minced pork
1 tbsp dark soy sauce
Dash of salt
1 tbsp oyster sauce
Oil for frying
½ cup water

Method,
-Add oil to heated wok, fry onions till fragrant.
-Add minced pork, continue to stir fry till meat is 60% cooked.
-Dish up, set aside for later use.
-Fry potato slices in 1 tsp oil for about 5 mins.
-Add water, seasonings & continue to fry for another 3 mins.
-Cover potatoes & let it simmer till soft & sauce bout to dries up.
-When potatoes reaches the softness u desire, return onions & minced pork to wok, fry for about 3 mins.
-Serve with plain rice.
