Tangy Peanut Butter Chicken Skewers

Exams are finally over for Adam, he found a part time job & had been working real hard for the past 6 days.
I prepared some chicken skewers as a tea break snacks for Adam.Well, its sort of a reward for him!

haha...and he reali appreciates ya! Adam gobbled up everything. Funny he, was juz telling mi this morning that ever since he started working part time, he wasn't such a big eater,when he finishes 3/4 serving of his food, he will be feeling full & by time he finishes everything, he's feeling bloated.
Ya ya...watever he says juz listen lo,coz i beg to differ.when comes to snacks & tidbits,he will never comes to a stop.haha....

Ingredients;
280g chicken breast
Some satay sticks
Honey

Seasonings;
2 tsp creamy peanut butter
2 tbsp hot water
1 tsp light soy sauce
1 tsp brown sugar
1 tbsp lemon juice
1 tsp lemon rind
1 tsp chili powder
2 tsp sesame oil
¼ tsp baking soda

-Dissolve peanut butter into hot water, cooled.
-Cut chicken breast into small pieces.
-Marinade chicken with seasonings, set aside in fridge for at least 3hrs.
-Soak satay sticks in water for 1-2 hrs. This is to prevent burning during baking.
-Thread chicken pieces onto sticks.
-Brush with oil, bake at 220ºC for 10mins.
-Brush with honey, bake at 250ºC on the other side for 8 mins.
-Enjoy!
