Fried Rice Cake (炒年糕)

Its the 1st day of Chinese New Year and it is our family tradition to eat Heng Hua food on the 1st meal of the day. I decided to cook fried rice cake, lstly the rice cake(年糕) has auspicious meaning which means bringing us to greater heights!

Ingredients;
500 gm rice cake, soak overnight
1 clove garlic, minced
20 gm dried shrimp
3 leaves of wong bok, shredded
Some xiao bai chye
4 dried mushroom, soak and shred
1 handful of beansprouts
2 baby carrots, cut into sticks
Some lean meat, cut into strips
Stock
Salt to taste
Oil for frying

Method;
-Fry beansprouts in oil for a min, dish up and set aside for later use.
-Fry garlic till fragrant, add dried shrimp continue to fry till fragrant.
-Add mushroom, fry for 2 mins, add in veggie.
-Fry till soften, add stock and rice cake.
-Fry till incorporated, season to taste.
-When gravy slightly thicken, return beansprouts to wok.
-Mix well & serve.
-Enjoy!
Some serving suggestions:
You can sprinkle some fried shallots over or choose to serve with roasted peanuts and fried oor lai which heng hua people does but too bad i forgot to buy these 2 important garnish. In the end i serve with chopped cashew nut. Simply fantastic!
