Alfredo Shroomish Baked Rice

What's for lunch? A quick and easy baked rice reali made my day!
Having left very little bit of alfredo sauce in the fridge, i decided to whip a quick sauce out of it.
Simply prepare;
Fresh shitake mushroom, sliced
Fresh Oyster mushroom, sliced
Button mushroom, sliced
Frozen sweet corn
Butter
Onions, sliced
Pinches of salt
Milk
Alfredo sauce
-Melt butter in pan, fry onions till fragrant, add fresh mushrooms and fry for 1-2 min.
-Add button mushroom and sweet corn.
-Stir in alfredo sauce, milk and season to taste.
-Once sauce boils, remove from heat.

 Pour sauce over plain rice, topped with cheese and till till top browns. Sprinkle some crushed black pepper and enjoy! :-)

That's it! As easy as ABC....

Lunch Today! 餐蛋面﹐午餐肉丁 面

What's for lunch? Hong Kong style instant noodle soup serve with fried luncheon meat, fried egg and greens. That was a special request from Adam & Jesper.

Alright, I shall fulfill their request. As for me, i shall have a self-invent 午餐肉丁 面. How do I prepare the 午餐肉丁?

Well...
Step 1: Diced luncheon meat, pan fried with little oil till crispy.
Step 2: Drained on kitchen towel to remove excess oil.
Step 3: Fry spicy bean sauce till fragrant, add home-made chili paste, ketchup and some water.
Step 4: Add luncheon meat and fry till gravy thicken.
Step 5: Serve over blanched noodles, braised tau kee & veggie.

鹵肉面

1 portion of braised meat was left on the table and mum has been asking us to finish off since lunch time today. No action was done and since Adam is feeling hungry, I decided to make him a noodle dish using the braised meat.

Ingredients;
1 pc dried vegetarian noodles, blanched and drained
1 handful of beansprouts, blanched and drained
Braised meat
Dark say sauce and meat gravy
Oyster sauce
Home-made chili paste
Spring onions, chopped

Method;
-Mixed the sauces together, toss well with noodles and beansprouts.
-Serve noodles with braised meat, garnish and serve.
-Enjoy!

面線糊

Been wanting to try the 'Baoning Vinegar' which dad brought home days ago. Can't decided between black vinegar trotter or mee sua to test the vinegar, and after much consideration, decided to go for something which is lower in cholesterol.
Lolz... shall set aside the idea for another dish until a later date.


Ingredients;
2 bunch dried mee sua
Shredded carrots
Shredded mushrooms
Lean meat strips
Chicken stock
Pinch of salt
Dark soy sauce
1 clove garlic, minced
Oil for frying
Cornflour water

Garnish;
Coriander leaves
Black vinegar
Homemade chili paste

Method;
-Wash and rinse mee sua, drained.
-Fry garlic in oil till fragrant, add carrots and fry for another min b4 adding in mushrooms.
-Add meat strips and fry till change colour.
-Add chicken stock, bring to boil.
-Toss in mee sua, season to taste.
-Add mo9re stock if mixture too dry.
-Thicken with cornflour water, bring to full boil.
-Garnish and serve.
-Enjoy!

Fried Nasi Lemak

Not wanting to waste a a pack of left over nasi lemak from breakfast, i decided to come up with a creative way of serving the nasi lemak in a fried rice style.

Easy and simple procedures;
-Pan fry the fried ingredients and set aside.
-Fry coconut rice with 2 tsp of sambal chili.
-Serve with cucumber slices and enjoy!

Another Homecooked 经济米粉

Back by popular demand, strongly requested by and and I. Oh well, main reason is we did not have enough the other day. Lolz.... But this time round is with different sides to go with the bee hoon.

With my few favourite selection like fried chicken drumsticks, nuggets an d fishball. Last but not least, a veggie to go with every meal.

Homecooked 经济米粉

I've always like fried plain bee hoon being served with stir fry veggie and fried snacks and seems like this is a breakfast choice for most Singaporeans. To me it's like "huh? ask me eat so full in the morning, doubt my tummy can take it"
So I been craving craving and craving for these 2 days, finally suggested this menu to mum for dinner tonite. Lucky mum didn;t disappoint all of us!

My perfect 经济米粉 dinner consist of 荷包蛋, cabbage with long beans & carrots, fried chicken nuggets and porkchop. Cool, I reali enjoyed my diiner tonite!

油皇炒面

A quick, simple & easy to prepare noodle dish for our lunch today. So far I've cook 油皇 with rice vermicelli, mee tai bak and dong fen. this time round shall be yellow noodles. A more difficult challenge as I would require to fry the noodles till the 'kee' smell evaporate.

Ingredients;
600gm yellow noodle
1 egg
1 handful of beansprouts
Some Holland beans, shred
Crabstick, shred
Sweet dark soy sauce
Stock
Salt
1 clove garlic, minced
Oil for frying

Method;
-Scrambled egg in hot oil, set aside for later use.
-Fry beansprouts for 30 seconds, set aside for later use.
-Fry garlic in oil till fragrant, toss in holland beans & crabmeat sticks.
-Fry for 30 seconds, add yellow noodles.
-Add in some stock, fry for about 3 mins.
-Season to taste, return the eggs and beansprouts to wok.
-Mix well and serve.
-Enjoy!

蚂蚁上树

Ekina's style of a Sichuan dish where it isn't too spicy. As you all know that sichuan dish are known to be oily and spicy, with lots of peppercorns used. I omit the oily and super spicy ingredients and replace with my home-made chili paste.

Ingredients;
1 bunch 冬粉, soaked and drained
Minced pork
Chopped celery
Chopped spring onion
Mined garlic
Spicy bean paste
Dark soy sauce
Chili paste
Sugar
Stock
Salt
Oil for frying

Method;
-Fry garlic till fragrant, add bean paste.
-Add minced pork and celery, fry till change colour.
-Pour in stock & seasoning.
-Toss in 冬粉, fry till stock absorb.
-Sprinkle with chopped spring onions and serve.
-Enjoy!

Sambal Prawns With Coconut Rice

Paid Aunty Sarah a visit just now as i bought some apple strudel for her and instead, came back home with a plate of samabl prawns with coconut rice. :-P Yeah...it was meant for Aunty Sarah's dinner and she gave mi half the portion. That's the problem with her as she prefers to give and take. Since i gave her some food, she return some as well. :-P

I love the sambal so much! Spicy, fragrant, simply delicious! Even mum and adam can't resist temptation and help themselves with the rice. :-)

餐蛋面

Adam got back home from his training and was as hungry as a tiger. I told him there's nothing left unless he dun mind maggie noodles. He's ok with it however wants a different touch. Hence, i suggested cooking him the Hoong Kong style maggie noodles with luncheon meat and fried egg.

Adam's Verdict: The best maggie noodles he had so far. (erm... i wonder izzit cuz he's hungry. lolz...)

Super easy steps to follows;
-Blanch noodles, drained
-Pan fried luncheon, top over noodles.
-Fry an egg till yolk 70% cooked but still watery, top over noodles.
-Bring water to boil, add soup base.
-Serve broth over noodles.
-Enjoy!

梅菜扣肉粽子

Tomorrow will be Dragon Boat Festival and glutinous rice dumplings has been in high demand these days. They are soo... expensive and we Chinese need to make offerings on this day and we decided to wrap some glutinous rice dumplings instead of buying.

I wanted to make 梅菜扣肉粽子since last year but been so bz and i skipped the idea. Since this year i have the free tine and planned early, bought all the necessary stuff early.

Pipping hot glutinous rice dumplings out from the pot!

Ingredients;
Glutinous rice, washed and drained
Salt
梅菜肉fillings
Bamboo leaves
Strings for tying

梅菜肉fillings;
Pork belly
1 bowl 梅菜
Garlic
Shallots
Star anise
Oyster sauce
Dark soy sauce
Ground cinnamon
Salt
Sugar
-梅菜 has to be cook b4 frying. Chopped 梅菜 and boil with garlic and lard for 2-3 hours till softened. This can be done the day b4.
-Pan fry pork belly till lightly browned on a heated non-stick frying pan to remove the fats.
-Remove and set aside.
-Fry garlic and shallots in oil till fragrant, add star anis.
-Return meat to wok, fry for 2 mins and season to taste.
-Add 梅菜, continue to fry for a min, drained and let cool.
-Ready for wrapping.

Method;
-Overlap 1 piece of bamboo leave over the other, fold into cone shape.
-Place 1 tablespoonful of glutinous rice into the cone, top with 2 tbsp - 3 tbsp of fillings, top with glutinous rice.
-Hold the bamboo leaves firmly, fold over and shape into a pyramid.
-Hold tight and tie with stings.
-Continue until complete.
-Cook in boiling water for 2 hours, drained and serve.
-Enjoy!

Supper Time

7th May is finally here and it is time for Singaporeans to make a wise decision in our election. It's a once every 5 year affair and my area, the opposition-Worker's Party in Hougang has been strong for the past 20 yrs.

We are confident enough that we will will again this time round and besides conquering Hougang, we hope to win Aljunied as well. After a BBQ dinner in JB, we headed back to Singapore for the election results.
Feeling hungry, we decided to prepare the following food for supper.

1. Honey green tea
2. Kaya toastie
3. Cheese & egg toastie

简单的虾仁炒饭

星期天的美丽早晨, 特地为哥哥炒了份爱心炒饭! 为什么呢? 因为他不是很 ’中意’
吃我们大伙儿即将享用的 Mee Siam.

材料;
冷饭, 一碗
蛋, 一颗
蒜蓉
虾仁, 切丁
蟹味棒, 切丁
葱花, 少许
盐,少许
酱清,少许
油, 1 茶匙

做法;
-将蒜蓉与油爆香, 加入冷饭炒均匀。
-加入蛋, 炒散。
-加入蟹味棒,虾仁 和调味料。
-快速翻炒, 洒上葱花。
-上桌享用!

热腾腾,香喷喷的虾仁炒饭上桌啦!!!

Mee Siam Breakfast

Singapore's Election will be held on 7th May and since the news of elections announced, the topic of voting has been an 'IN' topic for all.

As Dad suddenly requested for me to cook mee siam on Easter Sunday Morning, I decided to do so as Adam do has little bit craving for it. However, we held a home election on friday night as mum came in as the opposition party. Hence we were to vote for either
1. Dad, the mee siam party OR
2. Mum, the wanton mee party

Adam voted for mee siam as he too been craving for it. Whereas, Jesper gave up his chance to vote coz he dun eat mee siam therefore if we were to cook mee siam, i juz need to cook a fried rice for him will do.

This time round, i added more tamarind paste, rempah, chili and prawns for my mee siam. A spicy and sour mee siam for breakfast on Easter sunday.

Came across a giant 虾米 while pounding the dried shrimps! See the difference.....

油皇老鼠粉

Ever since the shop which sells fantastic noodle stir fry closed down, i can't help but feeling abit lost & wasted whenever i passed by the place.
We would always patronize the friendly lady for the stir fry 老鼠粉 and mee goreng. Since i can't find it anymore, i shall fry my own soy sauce version 老鼠粉.

Ingredients;
老鼠粉
1 handful beansprouts
3 baby carrots, cut into strips
Fishball slices
Lean meat, strips
1 egg
Shredded lettuce
1 clove garlic, minced
Oil for frying
Roasted sesame seeds

Sauce;
Dark soy sauce
Brown sugar
Salt
Stock

Method;
-Scrambled egg and set aside.
-Fry beansprouts for a min, set aside for later use.
-Fry garlic in oil till fragrant, toss in carrots and fry for a min.
-Add meat, fishball slices and fry for a min.
-Stir in 老鼠粉 and sauce. Fry for another min.
-Toss in scrambled egg, beansprouts and lettuce.
-Mix well and serve.
-Sprinkle roasted sesame seeds over and enjoy!

花生肉酱米粉干

This noodle dish had been revolving round my mind these day and since mum cooked a big pot of spare-ribs peanut soup last nite, I decided to reserve some stock and boiled peanuts for my bento lunch this afternoon.
Woke up quite early this morning to prepare the dish, packed the rice vermicelli, veggie and sauce separately, warm them up just b4 serving and it gave a a WOW effect during lunch in my office.

Ingredients;
Thick rice vermicelli, blanched & drained
Sweet beans, blanched & drained
1 clove garlic, chopped
1 shallot, thinly sliced
Minced pork
1 water chestnut
1 shrimp, chopped
Peanuts, boiled
Oyster sauce
Pinch of sauce
Dark soy sauce
Stock
Thickening agent
Oil for frying

Marinate;
Light soy sauce
Pinch of salt
Corn flour

Method;
-Marinade minced meat, prawns and water chestnut with soy sauce and salt.
-Mix well and add cornflour 10 mins later.
-Blanch sweet peas and rice vermicelli, drained.
-Fry garlic and shallots in oil till fragrant.
-Add minced mixture and fry till meat change colour.
-Add peanuts and stock, season to taste.
-Thicken the gravy and serve over blanched ingredients.
-Enjoy!

干捞 Instant Noodles & Shrimp Salad

How about instant noodles and salad for lunch? Oh well, not that simple. Instant noodles isn't instant noodles as Jesper prefers it with lots of ingredients and in the style of 干捞面. As for the salad, he prefers a shrimp salad with lots of eggs as well. Hence, i whipped up our lunch as follows;
Ingredients;
1 pkt instant noodles, blanched and drained
Some meatballs & crabmeat stick
1 fishcake, sliced
1 handful beansprout
Sauce mix
Water

Method;
-Prepare noodles sauce by mixing with hot water, toss with blanched noodles.
-Toss in boiled beansprouts and other ingredients.
-Mix well, garnish with shredded lettuce & serve.
-Enjoy!

Ekina's Brown Rice Bibimbap

Yummy~licious! I'm enjoying my bibimbap lunch while I blog. Haha... posting and eating at the same time?! Yes, cuz i brough it to office as my bento lunch. seems like i'm getting the kick of bring bentos to office.
I've always love bibimbap and we would always eat from the korean eatery near our office during lunch and i feels that in order to have the taste of Korean bibimbap, the essence lies in their Gochujang. I decided to make something with a twist. Actually this is considered a healthy dish as most of the ingredients are blanched. Therefore, my version will use browb rice and my own special home-made chili sauce.

Ingredients;
1 cup cooked brown rice
1 baby carrot, blanced
A handful beansprouts, blanched
A handful endvies, lightly fry in garlic and oil
Some stir fry seasoned pork strips
Some sambal (hei bee hiam)
Special spicy sauce (for mixing the rice)
Some roasted sesame seeds

Method;
-Assemble the bibimbap by placing brown rice in a serving bowl.
-Lay all the ingredients on top of the rice.
-Drizzle sauce over, mix well & serve.

Here's how it looks after mixing. Yummy! Actually i should have prepared an egg to go with & it will look much better. Oh well, forget it, cuz I'm cutting down on egg intake. I limit myself to 2 eggs per week. haha....

妈妈的爱心饭盒便当

A 爱心饭盒 for lunch today. At the thought of bringing bento lunch to office, mum seems more keen and excited than me. She will giving suggestions as to what to include in my bento and take would take the effort to cook stewed pork the previous night and warm them up early in the morning.
Other than that, mum would wake up early in the morning to cook plain rice, wash some lettuce for me to fry cuz i would always prefer veggies in my meals. Oh, not forgetting the 1 and onli prawn fritters left over from dinner as well. Lucky Mum cooked some sauce and set aside as well, so i just drizzle them over the fritters!

So sweet and thoughtful of mum right? Looks like i didn't give my bento the wrong name! Thank you Mummy!
