Feels like having something light & less oily for lunch. Dad's fren bought us some famous fishballs from bedok.
As i bought some kway teow from the market this morning, decided to cook kway teow soup for lunch today.
As a child, whenever any kids in the house is sick, mum will bought us kway teow soup from the nearby coffeeshops.Tt's y when we are sick, we get to eat this light & less oily noodle soup.
Ingredients;
100g soy bean
30g ikan bilis
Salt to taste
Boiling water
1 handful kway teow
1 handful bean sprouts
10 fishballs
5 meatballs
1 fish cake, sliced
Some marinated minced pork
Spring onions, chopped
Fried Shallots
Method;
-Wash & clean ikan bilis & soy beans.
-Add boiling water, bring to full boil & simmer for about 40mins to an hr.
-Filter away the cooked beans & ikan bilis, reserve stock for later use.
-Boil kway teow & bean sprouts in another clean pot of boiling water, drained.
-Pour some boiling water over minced pork, drained when its cooked.
-Bring stock to boil, add in fishballs & meatballs, season with dash of salt.
-To assemble, lay fish cake slices, fishballs & meatballs over kway teow. -Pour hot soup over, sprinkle with spring onions & fried shallots.
-Enjoy while its hot!
