There was a cup of cooked rice sitting in the fridge, left-over from last nite dinner. Not wanting to waste it, i used it to fried rice.
Not much ingredients needed as it was an easy & simple fried rice.
I once heard from a chef that the most delicious fried rice is fried by using the simplest ingredients of cooked rice, ginger & eggs. But i prefer eggs & prawns! haha.....
Ingredients;
1 cup cooked rice
1 garlic, chopped
1 egg, beaten
2 large prawns, diced
1 tbsp home-made rojak flower chili paste
1 tsp spicy dried shrimp (hei bi hiam)
Dash of salt
Oil for frying
Method;
-Scrambled egg in a greased wok, add in chopped garlic,prawns & fry for a min.
-Add cooked rice, fry till loosen.
-Stir in chili paste & hei bi hiam, continue to fry for about 2 mins.
-Season with salt.
-Enjoy!

Whole fish tastes better when cooked on the bone; and whole fish,
especially when it is still swimming in the tank, is probably one of the
freshest!
