Vegetarian Spinach Noodles

I came across spinach noodles when i was shopping for some groceries at the supermart yesterday.
Juz by looking at the packing, i had a sudden urge to try out. & so, i bought some mock meat as well, as i could find vegetarian char siew.

Ingredients;
1 pkt spinach noodles
150g bean sprouts
Half carrot, shredded
2 mushrooms, slice thinly
Mock meat sliced or vegetarian char siew
2 beaten eggs
Dash of salt
¼ tsp msg
½ cup mushroom water or vegetable stock
2 shallots, sliced
Oil for frying

Method;
-Prepare noodles by boiling them in hot water, drained
-Heat oil, scrambled eggs & set aside for later use.
-Fry shallots till brown, add carrots & mushroom, fry for 3 mins.
-Add vegetarian char siew & bean sprouts, fry for a min
-Add noodles, stock & seasoning. Mixed well.
-Sprinkle some roasted sesame seeds over.
-Serve with other sides like fried chicken wings or spring rolls.
-Enjoy!
