Cooking mee siam is a frequent chores for me at home. However, mum still prefers eating mee rebus.
Whenever i cooks mee siam, she will make noise saying she likes mee rebus but i never give in.But aniways since i learnt both, i decided to have a change & cook mee rebus instead.
Cooking mee rebus is not as simple as mee siam. Mee rebus has lots of steps & procedures, especially when u are adding mashed sweet potatoes! Haiz... but aniway, i still make it. Mee Rebus for our breakfast today!
Ingredients:
500g yellow noodle
200g bean sprouts
1 pot boiling water
Oil for frying
Spice Ingredients: blend in a processor into paste
250g shallots
2 tbsp chili paste
2 stalks lemon grass
10g belachan
35g blue ginger
2 tbsp tumeric powder
Gravy Ingredients:
400g sweet potatoes, boiled, peeled & mashed
3 tbsp tau cheow paste
40g gerago
1½ tbsp salt
7 tbsp sugar
2½ meat curry powder
2 tbsp chicken stock powder
2000ml water
3 tbsp corn flour mixed with water
Garnishes:
Hard-boiled eggs
Tau kwa, fried & diced
Bean curd puff
Parsley or kun cai
Green chili slices
Limes, cut into half
Method;
-Heat oil in wok, sauté spice paste till fragrant.
-Add water & all the gravy ingredients, stir well bring to boil.
-Simmer for 10 mins, blend in cornflour solution to thicken sauce.
-Boiled noodles & bean sprouts in pot of boiling water, drained.
-Serve with gravy & garnishes.
-Enjoy!
