Mum waasn't feeling well these days. She's down with sorethroat & cough. As for lunch, i decided to cook something mild to her throat. Its been ages since i last had macaroni soup. As a kid, we will get to eat macaroni soup whenever we are sick or not feeling well. Since now mum is the 1 not feeling well, guess tis is the best lunch for her condition rite now.
Ingredients;
A handful of macaroni
1 fillet chicken breast
1 tsp sesame oil + pinch of salt
15g dried shrimp
A bunch of chye sim
Chicken stock
Pinch of salt
Fried shallots
1 tsp shallots' oil
Method;
-Soak macaroni for 20mins, drained.
-Boil chicken breast in water till cooked, drain & shred chicken breast. Reserve stock for cooking macaroni.
-Toss chicken breast with salted sesame oil & set aside.
-Bring chicken stock to boil, add dried shrimps & macaroni.
-Let mixture boil for 5 mins, add chye sim, shallots' oil & salt.
-Serve macaroni soup with shredded chicken & fried shallots.
-Enjoy!
