1 section bittergourd, cut into 2" by 3cm length
4 铁皮鱼
Oil for pan frying
Seasoning:
2 chili padi, chopped
2 clove garlic, chopped
1/2 tsp hiam see, chopped
1/2 tsp spicy bean paste
1 tsp grind chili paste
1 tsp homemade ginger flower chili paste
1 tsp oyster sauce
Dash of sugar
Pinch of salt
2 tbsp stock
Method;
-Blanched bittergourd in water for 5 mins, drained.
-Wash & clean fish, remove skin & cut into half.
-Pan fry fish with oil till 70% cooked.
-Remove, set aside for later use.
-Fry chili & garlic in 1 tsp oil till fragrant.
-Add hiam see & bean paste, fry for 30 seconds & push to side of wok.
-Fry grind chili paste for a min, add in remoning of the seasonings.
-Toss in bittergourd & fish, add stock & simmer till fish cooked.
-Garnish & serve.
-Enjoy!
