Ingredients;
2 boneless chicken thigh
1 stalk spring onion, cut into 3cm length
1 onion,cut into wedges
5 dried chili
5 slices of old ginger
1 clove garlic, minced
Cornflour
Rice flour
Oil for frying
Marinate;
1 tbsp light soy sauce
1 tsp dark soy sauce
1 tbsp sesame oil
Pinch of salt
Dash of pepper
Sauce;
1 tbsp chili paste
1 tsp oyster sauce
1 tsp dark soy sauce
1 tbsp water
1/2 tsp sugar
Method;
-Cut chicken into bite sizes, marinade for at least 1 hr.
-Prepare dried chili by pouring hot water over, soak for 5 mins. Drained & cut chili into half.
-Mix cornflour & rice flour, coat the chicken pieces & shake off excess flour.
-Deep fried in hot oil till crispy, drained.
-Fry garlic in 1 tbsp oil till fragrant, add onion, dried chili & ginger.
-After frying for a min, add spring onion & sauce.
-When sauce boils, add in chicken pieces & toss well. Serve.
-Enjoy!
