Dad's Bee Hoon Goreng

There are many versions of bee hoon goreng. Indian style where there's only green chili with cabbage and tomato, Chinese zhu chao style with seafood and oso malay style with plenty of chili. I still prefer Dad's version and to him it's called a "chin chye version" cuz he cooks it "any old how"
Ingredients;
Some bee hoon, soaked & drained
1 small potato, diced
1 egg
Some beansprouts
1 stalk chye sim
1 tomato, wedged
1/2 tau kua, diced
1 shallot, chopped
Oil for frying
1/2 tsp grind chili paste
Stock
Sugar
Salt

Sauce:
1/2 tbsp sweet chili sauce
1 tsp homemade sambal chili
Pinch of salt
Sugar

Method,
-Shallow fry the potatoes and tau kua till golden brown, drained.
-Scrambled egg in hot, set aside.
-Fry shallots till fragrant, add chye sim & beansprouts, fry for a min. Set aside.
-Fry chili paste in oil, add stock, sugar & salt.
-Toss in bee hoon and fry till soften.
-Add the remaining ingredients and sauce.
-Give it a quick stir over high heat.
-Enjoy!

After eating the bee hoon halfway den i realise that i forgot to touch up the dish with some cucumber slices and tomato ketchup.

Butter Grilled Prawns Rice Vermicelli With Spicy Tamarind Sauce

Oh well, it's actually mee siam. Only being served in a different presentation and with a unique name. haha....

Doesn't it look cool? I bet no one has ever comes up wif tis kinda presentation for the noodle dish. So how do i eat it? Adam ate it using the chasoba method, dipped the rice vermicelli in the gravy and popped into his mouth. Hmm... yummy!

Orchid Honey Jelly With Fruit Cocktail

It's National Day and in order to mark tis special day, i decided to comes up with 2 dishes which has a significant on Singapore. Oh well, it's not about any special food which marked the history or watever, but with a symbol which represent Singapore on the food. haha....

Ingredients;
1 packet ice jelly powder
600ml water
2 leaves screwpine leave, knotted
1 can fruit cocktail
Orchid flower

Method;
-Cook ice jelly accordingly to the instructions on the box.
-Place mould over ice bath.
-Place an orchid flower in the mould, pour 2 tbsp jelly mixture over.
-When jelly slightly set, pour in more mixture until 3/4 full.
-Topped with fruit cocktails.
-Chilled in fridge till set.
-Remove from mould & serve.
-Enjoy!

It's such a great feeling eating the jelly and watching national day parade on tv. Wat i enjoyed most during ndp is the fireworks. Wow.... Happy 45th Birthday Singapore!

"Sub-Standard " Skim Milk

Never ever buy NTUC brand skim milk again. Y? oh well, its frightening enough juz by looking at the pictures below.

I tot skim milk is supposed to be healthy due to super low calories and low fats. That's the reason y i urge dad to drink skim milk rather than the normal UHT milk which he drinks. But when i was intending to cook some scramble eggs for breakfast tis morning, i was shocked to see the colour of the milk. It seems like like lemonade colour ba. So scary! Luckily it was not dad who done the "opening" for the milk, otherwise he will haf a chance to blame mi for the so called healthy milk.

Sub-standard xia, furthermore its still long way b4 the expiry date. haiz.....

Diet Week

Seems like i been putting on weight recently. It reali makes 1 depressed and no motivation in watever i do. And most importantly, no self confidence. Since my other collegues are into dieting as well, i decided to start a dieting plan for the week.

Day 1: Salad with low fat yoghurt dressing

Day 2: Cold tofu with spicy teriyaki sauce.
Oh well, remember to use low sodium light soy sauce when preparing the teriyaki sauce.

Day 3: Low fat coffee with baby bites and vege biscuits.

Day 4: Scrambled eggs with baked beans and greens.

Day 5: Fruit flush diet.

Day 6: Steamed tofu with soy sauce and greens.

When comes to snacking, i will go for baby bites cuz it is low in fat, low calories.

All my diets muz be accompanied by fresh grapefruit juice. Probably it's due to the fad diet and the sudden decrease in calories and fats, i lost 2 kg in a week. Congrats to myself! Yeah.......... I muz be more determined to carry on my plans on weekday! Yes.... jia you jia you Ekina!

Mocha Cornflake Treats

I used to prepare tis dessert very often b4 i start blogging few years back. I guess the cornflakes trend of mine is back again. I been buying boxes and boxes of cornflakes recently. And do u noe wat's the best thing? Adam can finish a big box within 2 days. He treats them like eating tid-bits, munching on them while watching tv or surfing the net. Hey, i can say that it's a wise choice cuz it healthier as compared to chips. :-P

Ingredients;
1 box cornflakes, crushed
200g milk chocolate
300g dark chocolate
1 tsp coffee granulas

Method;
-Double boil the chocolates until melted.
-Stir in coffee granulas unbtil dissolved.
-Toss in cornflakesand mix well.
-Scoop into small paper cups.
-Place in fridge to set.
-Remove and store on containers.
-Enjoy!

Spicy Mayo Pizza Bread

There's always a promotion on "Sundays. Free hotdog rolls with every purchase of soft white bread. The problem with my family is that they dun reali fancy hotdog rolls. I've to comes up with creative ideas to prepare the bread so they will eat. Especially for Jesper, its either roti john or chicken nuggets sandwich rolls. Tis time round, i made some spicy mayo pizza bread for breakfast.

Ingredients;
Some hotdog buns, halved
Chicken franks, sliced
Seafood sticks, diced
Cherry tomatoes, diced
Cheddar cheese, diced

Dressing:
1 tsp fat free mayonnaise
2 tbsp sweet chili sauce

Method;
-Mix ingredients for dressing together.
-Spead onto bread.

-Top with ingredients followed by cheese.
-Bake in preheated oven toasted till cheese melted.
-Enjoy!

It's real quick and easy. Within half an hour, breakfast is ready for all!

Savoury Pancake

An inspiration from mum's pan fried mee hoon kueh. I enhanced the version with more watery battery and plenty of ingredients. Yummy.....

Ingredients;
Prawns, diced
Seafood stick
Baked bacon bits
Shredded cabbage
Flour
Egg
Water
Salt

Method;
-Prepare pancake batter by mixing flour, egg, water & salt together.
-Stir in other ingredients.
-Brush some oil on a non-stick frying pan, scoop in a ladle od mixture.
-Fry on both sides till brown.
-Serve with chili sauce.
-Enjoy!


There's a more sinful way of eating the pancake. Squeeze some mayo and sweet sauce over, topped with shredded lettuce and ham. Wow... the thought of it makes mi drool but i can't do that. haha....

Dinner @ Ala-meen

Its been almost a year since i last caught up with Anthony. Since i left the last employment, we didn't haf a chance to catch up for some "gossips". Haha... finally i had some free time these 2 days and we decided to meet up for dinner. He picked me up after work last friday and we headed towards marsling for dinner. I dunno the exact location, all i noe is that its in the middle of woodlands ave 1 and 10.

Wow... i din noe that Ala-meen focus so much on customers?! Feels so appreciated as a customer there. Anthony is a regular customer there and he suggested ordering the following dishes.

Super big glass of ginger milk tea served in beer glasses. Cool ya!

I had a Mee Goreng Padthai and....

Anthony had a Sambal Ayam Nasi Goreng. Looks spicy isn't it?

A fried calamari as a side dish for us to share. Well, since our topic still lies in worldcup, i joled to hiim that tis is the famous worldcup star~Paul. haha....

Anthony can't wait to start his meal, oh ya not forgetting to show off his "north korea" jersey as its rare in Singapore.

Xiao Bai Chye With Crispy Garlic

Who says healthy food are tasteless? Whenever i mention healthy way of cooking with less salt & less oil, i will get lots of feedbacks from mum and dad. Well, today i proved them wrong. Blanched veggie can taste delicious if correct ingredients and sauce are used. All u haf to do is put in more effort and make the overall dish wonderful.

Ingredients;
1 bunch xiao bai chye
3 clove garlic, minced
2 dried mushroom, soaked and sliced
Some wolfberries
Some mushroom stock
Oyster sauce
Sugar
Pinch of salt
Cornstarch water

Method;
-Fry garlic in oil till golden brown, drained.
-Fry mushroom slices till fragrant, add stock and wolfberries.
-Bring to boil and stir in seasoning.
-Thicken with cornstarch water.
-Serve mixture over blanched xiao bai chye.
-Sprinkle crispy garlic and serve.
-Enjoy!

Looks yummy isn't it? Mum can't wait to savour the dish. Wow... serving a plate of tis healthy veggie with my brown rice, my diet plan is working out. ;-)

麻辣豆瓣豆干

Another tofu dish for me again but tis time round its tau kua. Afterall they belong to the same soya bean family. Tis is an improvised version of my 双宝肉酱 but it's without any meat.

Ingredients;
1 piece tau kua, diced
2 dried mushroom, soaked and sliced
2 1/2 tsp minced bean paste
1 tsp homemade chili paste
1/2 tsp dark soy sauce
1 glove garlic, minced
2 shallots, minced
Some stock
Pinch of salt
Scallion, chopped

Method;
-Pan fry diced tau kua in hot till lightly browned, set aside for later use.
-Fry garlic and shallots till fragrant, add mushroom and fry well.
-Stir in bean paste, chili paste and stock.
-Add tau kua and give it a quick stir until mixture slightly dries up.
-Serve and sprinkle over chopped scallions over.
-Enjoy!

豉汁苦瓜焖肉丁

Other than meat or poultry products, tis dish goes well with fried fish slices. Wow..... wondering when was the last time i ate the bittergourd stew with fried fish head. Oh nvm, KIV 1st. In the meantime i shall make do with lean meat. keke....
If you are feeling board with the normal plain & bland dishes everyday, try tis dish to spice up your life. I bet you can help urself to a 2nd serving of rice!

Ingredients;
350g lean meat
Cornflour
Some bittergourd, cut into 4cm length by 1.5cm thickness
1/2 tsp home-made sambal chili
1 clove garlic, chopped
2 chili padi, chopped
1/2 tsp preserved black beans (hiam see), chopped
1/2 tbsp low sodium bean paste, chopped
Pinch of salt
1/2 tsp sugar
1 tsp oyster sauce
1-2 tbsp stock or water
Oil for frying

Method;
-Prepare hot boiling water, add pinch of salt and 1-2 drops oil.
-Blanch bittergourd in hot water for about 2 mins, drained.
-Cut lean meat into cubes, coat with some cornflour.
-Deep fried meat till golden brown, drained.
-Fry garlic and chili till fragrant, add hiam see and beanpaste.
-Stir in bittergourd & chili paste, fry for a min.
-Add stock and seasoning, toss in meat cubes.
-Cover and simmer for 2 mins.

辣味蕃薯粉

蕃薯粉, a steamed kueh which can no longer be found that easily nowadays. Tis is a childhood dish where grandma used to cook when i was a child. During the old days, steamed 蕃薯粉can be bought from the local market. As steaming tis kueh requires lots of tedious work, no one seems to haf it for sale. Haiz.....
Cartoon uncle loves tis kueh and he seems to haf his own way of finding it. Oh well, its not bought from a local market. It's homemade. Cartoon uncle went through means and ways and found an aunty who specialies in steaming 蕃薯粉 and he cut a slice for our family.

Ingresients;
1 piece steamed 蕃薯粉
20g dried shrimp
1 tsp homemade chili paste
2 glove garlic, minced
1 shallot, minced
Pinch of salt
1 stalk chopped chinese celery
2 dried mushroom, soaked and sliced
Oil for frying

Method;
-Cut the steamed 蕃薯粉 into thick strips.
-Fry garlic and dried shrimp till fragrant.
-Add mushroom and fry for a min.
-Add chili paste and toss in 蕃薯粉.
-Give it a quick stir and toss in chinese celery.
-Season with salt & serve.
-Enjoy!

Celery With Enoki Mushroom

Celery is 1 of my favourite vegetables and I'm sure that many pple hates it. Same goes for Adam. He calls celery a "ghost veggie" which he's scare of. Hey, wat's so scary about the veggie? I find it ok, especially when u bite it, the sweet juicy veggie juice gushes out. Simply wonderful.

Ingredients;
1 bunch enoki mushroom, halved
5 stalks celery, cut into strips
1 carrot, cut into strips
Some black fungus, soaked and strips
Pinch of salt

1/2 tsp oyster sauce
1 garlic, minced
Oil for frying

Method;
-Fry garlic in hot till fragrant.
-Add carrots, fry for a min.
-Toss in celery and fry for 2 mins.
-Add black fungus and seasoning.
-Stir in enoki mushroom lastly, give it a quick stir and serve.
-Enjoy!

五香芋丸

The problem with being at home during weekends is that i will be fully occupying the kitchen for the whole day. Whenever Dad walk into the kitchen, he will try to find out wat i'm doing. Oh well, i will rumble through the fridge to see wat ingredients are available for me to prepare any side dish or snacks.
I found 1/2 portion of yam, some tiny bits of minced pork and some water chestnut in the fridge. Thus i decided to create a wu xiang flavour yam balls stuffed with some fillings inside.

Ingredients;
Yam, steamed and mashed
Dashes of wu xiang powder
Dashes of corriander powder
Dashes of ground white pepper
2 tbsp flour
2 tbsp tapioca flour

Method;
-Fry garlic and shallots till fragrant, add in dried shrimp.
-After frying for a min, add carrots and fry till soft.
-Add mushroom and minced pork.
-Add the remaining ingredients and some stock, season with salt.
-Set fillings aside to cool.
-For the yam paste, mix all ingredients together, roll into soft dough, den into small balls.
-Flatten yam balls, wrap with fillings.
-Continue until dough finishes.
-Chilled in fridge to set.
-Deep fried in medium hot till golden brown.
-Enjoy!

Ingredients for fillings;
50g minced pork
Celery, chopped
Carrots, chopped
Mushroom, diced
Water chestnut, chopped
Dried shrimp, chopped
2 clove garlic, minced
1 shallot, minced
Some stock
Pinch of salt
Oil for frying

鱼香豆腐

Think i'm gonna die of protein. Been taking too much tofu tis week. Add on today, tis is gonna be the 3rd time i'm eating tofu. Wonder wat's wrong with me or was it due to the new product in the supermarket?! haha...
Well, i used to buy silken tofu which was sofe and smooth, idle for cooking coup. But there's a new product which i came across the ohter nite when i was shopping for groceries. It state "Spring tofu" on the package. I was thinking since tofu is rather "fragile", isn't it great to haf springy tofu?! Thus, i decided to give it a try.


The tofu is indeed springy, with the fragrant 鱼香fillings on top, its simply fantastic!

Ingredients;
1 box springy tofu
50g minced pork
2 tsp sambal shrimps (hei bee hiam)
1/2 tsp tau cheou, chopped
1 clove garlic, minced
1 shallots, minced
Scallions, chopped
Pinch of salt
1/2 tsp homemade chili paste
Oil for frying

Ingredients;
-Remove tofu from box, steam for 5 mins and drained.
-Fry garlic and shallots with oil till fragrant.
-Stir in tau cheou, chili paste and hei bee hiam.
-Add minced prok and fry till meat is cooked.
-Serve mixture obver tofu, sprinkle with scallions.
-Enjoy!

Wow.... doesn't it looks healthy and delicious? U can choose to deep fried the tofu for better taste. However, since i'm on a diet and prefers lower calories and lower fats, steaming will be a better choice. haha......

BBQ Mamee Potato Skewers

Mamee noodle snack, 1 of my favourite childhood snacks. Still remembered when i was in primary school, 1 of my classmates told mi that tidbits' seasonings were great and taste wonderful. And tis funny classmate of mine would always mix seasoning with water and drink. I was like "OMG r u out of ur mind?"
Think i'm slightly cleverer, i will always sprinkle them over hot crispy french fries or potato wedges. Tis time round, i use it on roasted potato skewers instead.

Ingredients;
1 medium potato
Mamee seasoning
Oil
Satay sticks


Method;
-Soak satay sticks in water for 1/2 an hour
-Slice potato thinly
-Drizzle oil and mamee seasoning over potato slices
-Thread onto satay stick
-Bake at 200 degree celcius till crispy
-Sprinkle more mamee seasoning over potato skewers
-Enjoy!

Enhanced Version Of Baked Authum Puffs

I been having authum puff crave for almost 2 weeks and finally i have some free time to do baking today. I decided to satisfy my crave and oso do an "enhanced version" by adding more ingredients and spices to the fillings.

Ingredients;
Frozen prata
Chicken curry fillings
Hard-boiled eggs, but into 8 portion
Roasted white sesame seeds

Method;

-Cut prata into ha;f, to form 2 semi-circle.
-Scoop 1 tbsp ful of fillings onto 1 side of prata, add i portion of egg.
-Foldover, press sides with a fork to seal.
-Prick holes on top of prata.
-Brush with egg wash, sprinkle sesame seeds over.
-Bake at 220 degree celcius for 25 mins or till golden brown.
-Enjoy!

Ingredients for the fillings;
2 potatoes, diced and steamed

1 chicken drumstick, diced
3 tsp curry powder
1 large onion, diced
1/2 tsp salt
1/2 tsp fennel seeds
Some curry leaves, shredded
1 tbsp (soup spoon) thick coconut milk
1 tbsp oil

Method;
-Fry fennel seeds in oil till fragrant, toss in onion fry for a min.
-Add chicken and fry till change colour.
-Add curry leaves, potatoes, curry powder and seasoning.
-Fry thoroughly till chicken cooked.
-Stir in coconut milk and fry till mixture slightly dries up.
-Remove and let cool.

Cooked fillings are being set aside to cool slightly b4 wrapping them in to frozen prata.

Wow... looks so delicious! Indeed thet are :-P
