Breaded Sandwich Pockets

Tis dish reminds mi of my 3rd uncle whom passed away 10 yrs ago. Y tis dish? Well, cuz in my memory, i remembers that he love cooking, but he's the type whom will make preparations & either my mum or granny gotto help him cook.
There was once during my birthday celebration dinner, i prepared something like tis dish, but without breadcrumbs coating & being deep fried in oil. Ended up the oil was soooo oily, we gotto place all the bread on plenty of kitchen to remove excess oil. haha....well, learn through failure is the best. From there i can continue to improvise. keke....

Ingredients;
6 slices plain bread
1 egg, beaten
Some breadcrumbs
Some butter

Fillings;
1 medium potato, cubed
1 small onion, thinly sliced
Pinch of salt
Dash of ground corriander
1 tsp chili paste
1 tsp curry powder
water

Method;
-Pan fry potato cubes till golden brown, drained & set aside.
-Fry onion till fragrant, add potatoes, seasonings & water.
-Bring to boil & simmer over low heat till potato soften & mixture dry.
-Let potato mixture cool.
-Remove crust from bread, place 2 tsp fillings in the middle, foldover to form a triangle.Seal with beaten egg. Continue untill mixture finishes.
-Brush sandwich pockets with beaten egg, coat with breadcrumbs.
-Brush a baking tray with butter, place breaded pockets on the tray.
-Bake in preheated oven till golden brown.
-Enjoy!
